A great way to use inexpensive round steak. The mushroom gravy is delicious with mashed potatoes. The recipe is an old one from Jean Anderson's Grass Roots Cookbook. I've been making it since before my kids were born.

3 lbs beef round steak (cut 1 - 2 inches thick)
2 tablespoons butter or 2 tablespoons bacon fat (I often sub olive oil)
1 medium yellow onion, chopped
3/4 lb mushroom, thinly sliced
1/3 cup flour
1 cup beef stock
1 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 F (180 C).
  • In a large, heavy oven-proof skillet over moderately high heat, brown the steak on both sides in the fat.
  • Transfer to a plate and keep warm.
  • In the drippings in the skillet, saute the onion and mushrooms over moderate heat for about 5- 8 minutes, until limp and lightly browned.
  • Blend in the flour, add the stock, milk, salt and pepper, and heat, stirring constantly, until thickened and smooth- about 3 minutes.
  • Place the steak back in the skillet.
  • Turn and spoon some of the mushroom sauce over the steak.
  • Cover snugly and bake for about 1 1/2 hours, or until steak is fork tender.

1 pound top sirloin steak
1 tablespoon vegetable oil
1 (12 ounce) bag Birds Eye® Recipe Ready Mushroom Blend
1 tablespoon all-purpose flour
2 tablespoons balsamic or red wine vinegar
2 tablespoons butter

Steps:

  • Season steak, if desired, with salt and black pepper. Heat oil in large nonstick skillet over medium-high heat and cook steak, turning once, until desired doneness.* Remove steak and thinly slice.
  • In same skillet cook Recipe Ready Mushroom Blend, stirring occasionally, 6 minutes or until tender. Sprinkle with flour and continue cooking, stirring occasionally, until flour and mushrooms are starting to brown. Season with additional salt and black pepper. Stir in vinegar and butter and cook, stirring frequently, 2 minutes or until butter is melted. Serve mushroom mixture over steak.

2 Tbsp. margarine or butter
4 beef cube steaks (4 oz. each)
12 oz. mushrooms, sliced (about 4 cups)
1 large onion, cut into wedges
2 Tbsp. flour
1-1/2 cups milk
1/2 cup A.1. Original Sauce
3 cups hot cooked rice

Steps:

  • Melt margarine in large skillet on high heat. Add steaks; cook 5 min. on each side or until cooked through. Remove from skillet; cover to keep warm.
  • Add mushrooms and onion to skillet; cook and stir until tender. Stir in flour until well blended.
  • Stir in milk gradually. Bring to boil, stirring constantly. Stir in steak sauce; spoon over steaks. Serve with the rice.

3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
30 ounces cube steaks
2 tablespoons vegetable oil
2 cups beef broth or 2 cups beef bouillon
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/3 cup all-purpose flour
1/4 cup water
1/3 cup red Burgundy wine
1 cup thinly sliced mushroom
1 tablespoon butter or 1 tablespoon margarine
2 teaspoons Kitchen Bouquet
salt, to taste
pepper, to taste
minced garlic

Steps:

  • For steaks, in shallow bowl, mix flour, salt, and pepper.
  • Coat meat with flour mixture, shaking off excess.
  • Heat oil in large skillet over medium heat.
  • Add meat and cook on both sides until almost cooked through and no red juices appear. Remove from heat and set aside.
  • For gravy, in large saucepan, bring broth and soup to a boil.
  • In small bowl, mix flour and water until flour is completely dissolved.
  • Add to gravy, stirring constantly.
  • Continue cooking, stirring frequently, until mixture thickens.
  • Stir in wine.
  • In small skillet, cook mushrooms in butter 3 to 4 minutes.
  • Add to gravy with browning sauce and seasonings.
  • Heat oven to 350°F
  • Place meat in a shallow baking pan large enough to hold a single layer.
  • Top with half the gravy. Cover with foil.
  • Bake 12 minutes.
  • Serve with remaining gravy.
