After moving, I couldn't find a Chinese restaurant that met my tastes. So, I decided to create my own Chinese dishes. This is one of my favorites, and can be served as a vegetarian main dish or side dish. -Jacob Kitzman, Seattle, Washington

1 teaspoon plus 2 tablespoons sesame oil, divided
3 eggs, beaten
2 tablespoons canola oil
2 small onions, finely chopped
6 medium fresh mushrooms, thinly sliced
2 teaspoons minced garlic
1 teaspoon minced fresh gingerroot
4 cups cold cooked rice
1 cup frozen peas, thawed
1/4 cup reduced-sodium soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
3 green onions, thinly sliced
Optional ingredients: Chinese-style mustard, duck sauce and additional soy sauce

Steps:

  • In a large skillet, heat 1 teaspoon sesame oil over medium-high heat. Add eggs to skillet. Cook and stir until set. Remove to a plate; set aside., In the same skillet, heat canola oil and remaining sesame oil. Saute onions and mushrooms for 2-3 minutes or until mushrooms are tender. Add garlic and ginger; saute 1-2 minutes longer., Stir in the rice, peas, soy sauce, salt and pepper. Chop egg into small pieces; stir into skillet and heat through. Stir in green onions. Serve with mustard, duck sauce and additional soy sauce if desired.

Chinese Mushroom Pork Fried Rice image

I make this often, it is a favorite at my house! Make certain that your rice is cold before using in this recipe, so don't throw out that leftover rice from your Chinese food take-out, or prepare your rice a day ahead and refrigerate. The chili flakes are optional, add in if you like some heat! You can really make this rice using whatever cooked meat you have on hand. In place of the mushrooms you can use cooked fresh or frozen peas or use both! Cooking and prep time does not include cooking the rice.

2 tablespoons vegetable oil, divided
3 eggs, well beaten (can use 2 eggs)
1 small onion, chopped (can use more or less)
1 tablespoon chopped fresh garlic (optional or to taste)
1 -2 teaspoon dried chili pepper flakes (optional)
1 small red bell pepper, seeded and chopped
2 1/2 cups cold cooked white rice
1 cup cooked pork (chopped or cut into thin strips)
1/4-1/3 cup light soy sauce
1 (10 ounce) can sliced mushrooms, well drained
chopped green onion

Steps:

  • Heat 1 tablespoon oil in a skillet or wok, add in the eggs and cook breaking up into small pieces; remove to a bowl or plate and set aside.
  • Add in 1 more tablespoon oil; heat until hot.
  • Add in the chili flakes (if using) chopped onions, and red bell pepper; saute for about 4 minutes or until soft, adding in the garlic the last 2 minutes of cooking.
  • Add the eggs back into the wok or skillet along with the cooked cold rice and cooked pork and mushrooms.
  • Add in the soy sauce (starting with 1/4 cup) mix until heated thoroughly.
  • Place in a large bowl and sprinkle with chopped green onions.
  • Delicious!

This tasty recipe is made in a flash and makes a great speedy lunch or quick meal especially good if you have leftover rice from the night before!

1 tablespoon vegetable oil
2 eggs, beaten
3 ounces unsmoked bacon, chopped into small pieces
2 ounces frozen peas
4 ounces shiitake mushrooms, diced
9 ounces cold cooked rice
1 dash light soy sauce
1 dash sesame oil

Steps:

  • Heat a wok over a high heat and add the vegetable oil.
  • Tip the beaten eggs into the wok, stir to scramble, then remove and set aside.
  • Put the bacon into the same wok and stir fry until browned and slightly crisp.
  • Throw in the frozen peas and mushrooms and stir fry for less than a minute. Add the rice and mix well until the rice has broken down.
  • Return the eggs to the wok. Season with light soy sauce, sesame oil and a pinch of white pepper. Serve immediately.

CHICKEN AND MUSHROOM FRIED RICE

Use chicken thighs in this shiitake mushroom dish, and season it with soy sauce, sesame oil and fresh ginger.

2 tablespoons vegetable oil
1 large egg, beaten
2 boneless skinless chicken thighs, cut into 1/2-inch pieces
Kosher salt
1 1/2 cups thinly sliced stemmed shiitakes
1 teaspoon finely grated fresh ginger
1 teaspoon Shaoxing wine or dry sherry
1 teaspoon soy sauce
3 cups cold cooked long grain white rice
2 teaspoons toasted sesame oil
Thinly sliced scallions, for serving

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop out onto a plate.
  • Add the chicken to the skillet, sprinkle with 1/4 teaspoon salt and cook, stirring constantly, until golden brown and just cooked through, about 4 minutes. Transfer to a bowl. Add the remaining tablespoon oil, then add the shiitakes and cook, stirring constantly, until golden, about 3 minutes. Add the ginger, Shaoxing wine, soy sauce and 1/4 teaspoon salt and stir until the ginger is tender, 1 to 2 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, chicken and any juices to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Drizzle with the sesame oil, sprinkle with scallions and serve.

1 cup cooked rice (long grain, white, jasmine, brown, etc.)
2 tablespoons coconut oil
1/2 cup minced red onion
12 ounces button mushrooms, chopped
4 -5 garlic cloves, minced
2 tablespoons minced fresh ginger
8 ounces water chestnuts, chopped
2 -4 tablespoons Japanese soy sauce
1 tablespoon brown sugar
1 1/2 teaspoons dark sesame oil
5 scallions, sliced
1/2 cup frozen peas
1 tablespoon toasted sesame seeds
salt
black pepper

Steps:

  • In a small bowl, stir together the soy sauce, brown sugar, and sesame oil; keep nearby.
  • In a large skillet or on a griddle, cook onion and mushroom in coconut oil until the mushrooms release their water and that evaporates.
  • Stir in the garlic, ginger, and cook until fragrant.
  • Add the water chestnuts, scallions and peas, seasoning well with salt and pepper.
  • Add the rice and cook until rice is lightly golden in some spots, then add sauce, stirring well.
  • Stir in sesame seeds just before serving, or use them as a garnish.

Egg, Asparagus, Corn and Shiitake Mushroom Fried Rice image

Number Of Ingredients 12

3 large eggs, lightly beaten
1 pinch sea salt
1/4 teaspoon ground white pepper, plus more
2 tablespoons canola oil, divided
2 cloves garlic, finely chopped
4 ounces baby asparagus spears, sliced into 1/2-inch pieces, tips cut into 3/4-inch slices
1 ear fresh corn, kernels cut from the cob
3 ounces fresh shiitake mushrooms, stemmed and thinly sliced
2 cups cooked jasmine rice, cold
2 tablespoons low-sodium light soy sauce
1 teaspoon toasted sesame oil
1 red chile, seeded and finely chopped

Steps:

  • In a small bowl, lightly beat the eggs and season with sea salt and a pinch of ground white pepper.
  • Heat a wok over a medium heat and add 1 tablespoon of the canola oil. Pour in the beaten eggs and stir to lightly scramble. When the egg has turned golden and is still fluffy, take off the heat, transfer the eggs to a bowl and set aside.
  • To cook the rice, reheat the wok over a high heat and, when it starts to smoke, add the remaining canola oil. Add the garlic and stir quickly for a few seconds, then add the asparagus and corn and cook for 2 minutes until the asparagus starts to turn a deeper green and the corn a golden yellow. Add the mushrooms and toss together, then add the cooked rice. Stir well and toss to combine all the ingredients, then cook for 1-2 minutes. Season with the light soy sauce, stir and mix well.
  • Return the scrambled eggs to the wok, season with the toasted sesame oil and remaining ground white pepper and give it a few more stirs.
  • Transfer to a large serving plate and garnish with the chopped chile. Serve immediately.

PAN FRIED PORK CHOPS AND CREAMY MUSHROOM RICE



Pan Fried Pork Chops and Creamy Mushroom Rice image

This is a good one for the working parents who need to feed their family in a hurry.The prep and cook times are really short. Dinner is ready in less than an hour!!!

4-6 boneless (thick cut) pork chops
vegetable oil (enough to coat the bottom of the pan)
garlic powder
onion powder
paprika
black pepper
cavenders greek seasoning
2 c any kind of rice (i use white)
4 c water
2 can(s) campbells cream of mushroom soup (standard size cans)
1/2 can(s) milk (this is optional-see directions below)

Steps:

  • 1. In a medium to large skillet (depending on size and number of pork chops) preheat the oil.
  • 2. Season both sides of each pork chop to taste with each of the seasonings. Over medium brown the pork chops until each side is golden (watch them carefully as they burn quickly).
  • 3. When each chop is browned on both sides, add enough water to the bottom of the pan (I pour between the chops) and cover the pan. Don't use too much water as it will wash the seasonings off the meat. Reduce heat to low. This steams the chops, cooking them without burning. NOTE: you will still need to turn them and rotate them and watch the water in the pan. You don't want to dry out the pan and burn your chops.
  • 4. While the chops are cooking (usually only take about 8 minutes or so so watch them carefully or else they dry out), add rice and water to the pan and cook according to the package directions. You can use minute or instant rice if you would prefer or a rice cooker will also work.
  • 5. When the rice is done and the pork chops are cooked, remove the chops from the pan and pour your cooked rice into the pork chop pan. You want all of the seasonings and drippings from the meat so don't pour that out. Stir the seasoning mixture and rice together and add the two cans of mushroom soup. The rice should be creamy so if it's looking dry, add 1/4 can(I use the empty soup can) of milk at a time until the rice mix is creamy-not watery. Heat until rice and sauce are hot. Serve with your favorite veggie. Enjoy!

1/2 lb fresh shiitake mushroom
1/2 lb white mushroom
3 bunches scallions, minced
3 1/2 tablespoons soy sauce
1 tablespoon chicken broth or 1 tablespoon vegetable broth
1/2 teaspoon salt
1/2 teaspoon ground black pepper
5 cups chilled white rice
2 tablespoons vegetable oil
3 tablespoons rice wine or 3 tablespoons sherry wine
1/4 cup chopped cilantro (optional)

Steps:

  • Mix the soy sauce and broth together in a small bowl.
  • Heat oil in a deep skillet or wok until hot but not smoking.
  • Add garlic and stir fry for 15 seconds or so.
  • Add fresh mushrooms and cook 1 to 2 minutes, until slightly softened.
  • Add rice wine or sherry and cook until mushrooms are tender (about 3 more minutes).
  • Stir in scallions and cook until almost all liquid has evaporated.
  • Add rice and cook, stirring frequently, about 2 minutes (or until heated through).
  • Stir in soy and broth mixture, salt and pepper, and cilantro, if using.

For seasoning liquid
3 1/2 tablespoons soy sauce
1 tablespoon chicken broth
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
5 cups chilled Chinese-style white or brown rice
2 tablespoons corn or safflower oil
3 tablespoons Chinese rice wine or sake
1/4 cup chopped fresh cilantro
*available at Asian markets and some specialty foods shops

Steps:

  • Thinly slice garlic. Soak dried black mushrooms in warm water to cover 15 minutes, or until softened. Rinse black mushrooms to remove any remaining grit and drain. Discard stems from black and fresh mushrooms and thinly slice mushrooms. Mince scallions.
  • Make seasoning liquid:
  • In a small bowl stir together seasoning liquid ingredients.
  • Spread rice in a shallow baking pan and separate grains with a fork.
  • In a deep 12-inch heavy non-stick skillet heat oil over moderately high heat until hot but not smoking and stir-fry garlic and black mushrooms, if using, 15 seconds, or until fragrant. Add fresh mushrooms and stir-fry over high heat until slightly softened, 1 to 2 minutes. Add rice wine or sake and cook, covered, until mushrooms are tender, about 3 minutes. Stir in scallions and cook, uncovered, until almost all liquid is evaporated. Add rice and cook, stirring frequently, 2 to 3 minutes, or until heated through. Stir seasoning liquid and add to fried rice with cilantro, tossing to coat evenly.

  • Bring a medium pot of salted water to a boil. Stir in the rice and boil until just done, about 10 minutes. Drain the rice and set aside to cool. Meanwhile, in a large nonstick frying pan or wok, heat 1 tablespoon of the cooking oil over moderately high heat. Add half the mushrooms and cook, stirring frequently, until the mushrooms are tender and golden, about 5 minutes. Transfer to a plate. Repeat with the remaining mushrooms and another tablespoon of the cooking oil. Add these mushrooms to the plate. In the same frying pan, heat the remaining tablespoon of cooking oil over moderate heat. Add the red-pepper flakes, ginger, and scallions and cook, stirring, until fragrant, about 30 seconds.
