9 ounces box.green giant frozen asparagus cuts
1/4 cup butter or 1/4 cup margarine
1 lb fresh button mushrooms or 1 lb cremini mushroom, coarsely chopped
1/2 cup bread crumbs with parmesan cheese
1/4 teaspoon pepper
2 cups shredded sharp cheddar cheese or 2 cups swiis cheese
1/2 lb lump crabmeat
8 ounces garlic-and-herb spreadable cheese (we used Boursin cheese)
4 eggs
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 375°F; spray bottom and side of 12-inch tart pan with removable bottom or 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Cook asparagus as directed on box; drain and cool.
  • Meanwhile, in 12-inch skillet, melt butter over medium heat.
  • Add mushrooms; cook about 5 minutes, stirring frequently, just until tender.
  • Stir in bread crumbs, Parmesan cheese, and pepper.
  • Press mushroom mixture evenly in bottom and up side of sprayed tart pan or in bottom of sprayed baking dish.
  • Sprinkle shredded cheese over mushrooms.
  • Top with asparagus and crabmeat.
  • In medium bowl or blender, place spreadable cheese, eggs and 1 tablespoon of the parsley.
  • Beat with electric mixer on medium speed or cover and blend on low speed until smooth.
  • Pour evenly over crabmeat.
  • Bake at 375°F for 30 to 35 minutes or until set in center and edges are golden brown.
  • Sprinkle remaining tablespoon parsley over top.
  • Let stand 10 minutes before serving.
  • Carefully remove side of pan.
  • Cut into wedges or squares.

This tart can be is great for a main dish with a nice green salad. Great for brunches also. The nice flaky crust with the rich filling of crab and veggies goes together well.

1 lb butter, cold and diced
4 cups flour
4 tablespoons cold water
1 cup ricotta cheese
3 eggs, lightly beaten
1/2 cup cream
1 (14 1/2 ounce) can diced tomatoes, drained well or 1 1/2 cups fresh tomatoes, diced
10 -12 asparagus spears, cut into ½ inch pieces
1/2 lb lump crabmeat
1/4 cup freshly grated parmesan cheese
olive oil, to saute
garlic, to saute
salt and pepper

Steps:

  • Make the crust: Place the butter, flour and water in a food processor.
  • Pulse until it begins to form a dough.
  • Remove, gather in a ball, flatten, wrap in plastic film and let rest in the refrigerator for at least 1 hour.
  • For the filling: Saute asparagus pieces in some garlic and olive oil until slightly softened.
  • Add tomatoes just enough to warm through.
  • In a large bowl, mix together ricotta, eggs, cream and parmesan.
  • Add salt and pepper to taste.
  • Preheat oven to 350 degrees.
  • Remove dough from refrigerator.
  • Cut dough in half and roll each half out with a rolling pin to about 1/2 inch thickness.
  • Place each in bottom of a 9” pie pan.
  • With a fork, poke holes on the bottom, then place in the middle of the oven and bake for about 15 minutes.
  • Remove from the oven and let cool.
  • Pour half of the filling inside each of the two baked crusts, and return to the oven.
  • Bake for about 40-45 minutes, until the batter is set and slightly golden on top.

1 tablespoon all-purpose flour, plus more for dusting
1 sheet frozen puff pastry, thawed (a 9 1/2- by 9-inch sheet from a 17.3-ounce package)
1 cup mascarpone
1 1/2 teaspoons kosher salt
1 large egg, beaten
1 lemon, zest finely grated (about 1 tablespoon)
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh tarragon
1 pound pencil asparagus, woody bottoms trimmed off
1 tablespoon olive oil
Freshly ground black pepper
Lightly dressed greens, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Lightly flour the work surface and roll out the puff pastry to a 9- by 12-inch even rectangle. Transfer to the prepared baking sheet. Combine the mascarpone, 1 1/4 teaspoons of the salt, the flour, egg and lemon zest, and then fold in the chives and tarragon. Spread over the puff pastry, leaving a 3/4-inch border. Make small cuts around the border about 1 inch apart with the tip of a paring knife.
  • Toss the asparagus with the olive oil in a bowl. Lay half of the asparagus in a neat row across the surface of the tart so the tips meet the edge. Do the same in the opposite direction with the remaining asparagus. Season with the remaining 1/4 teaspoon salt and some pepper. Bake until the border of the tart is deep golden and puffed and the top is lightly spotted golden brown, about 25 minutes. Let cool for 5 to 10 minutes and serve.
  • Serve with lightly dressed greens.

1 sheet frozen puff pastry
5 1/2 ounces (2 cups) Gruyere cheese, shredded
1 1/2 pounds medium or thick asparagus
1 tablespoon olive oil
Salt and pepper

Steps:

  • Preheat oven to 400 degrees. On a floured surface, roll the puff pastry into a 16-by-10-inch rectangle. Trim uneven edges. Place pastry on a baking sheet. With a sharp knife, lightly score pastry dough 1 inch in from the edges to mark a rectangle. Using a fork, pierce dough inside the markings at 1/2-inch intervals. Bake until golden, about 15 minutes.
  • Remove pastry shell from oven, and sprinkle with Gruyere. Trim the bottoms of the asparagus spears to fit crosswise inside the tart shell; arrange in a single layer over Gruyere, alternating ends and tips. Brush with oil, and season with salt and pepper. Bake until spears are tender, 20 to 25 minutes.

CHEESY ASPARAGUS TART

4 tablespoons salted butter
2 large leeks, halved lengthwise and thinly sliced
Kosher salt and freshly ground black pepper
One 14-ounce package refrigerated rolled pie dough (2 crusts)
2 cups grated fontina cheese
1 cup ricotta
1 teaspoon chopped fresh thyme
12 ounces asparagus, trimmed and chopped into 1-inch pieces
1 large egg

Steps:

  • Heat a large skillet over medium heat and add the butter. When the butter has melted, add the leeks, then sprinkle with salt and pepper and cook, stirring occasionally, until soft and golden brown around the edges, 8 to 10 minutes. Set aside.
  • Preheat the oven to 450 degrees F.
  • Unroll the two pie crusts and lay on a sheet pan so that the pieces overlap slightly. Trim the edges of the pastry where it rides up the sides of the sheet pan and press these trimmings into the bare areas so that you are left with a 10-by-16-inch pastry rectangle.
  • Sprinkle over the fontina, leaving a 1-inch border, then top with the leeks. Dollop on the ricotta. Scatter the thyme and asparagus pieces over the ricotta and sprinkle with salt and pepper. Fold the uncovered pastry edge inwards to make a 1/2-inch border all the way around the tart, in the style of a galette.
  • Whisk the egg with a splash of water in a small bowl. Brush it all around the pastry edge.
  • Bake the tart until it is a deep golden brown, 15 to 18 minutes. (If the crust is browning too fast, reduce the heat to 425 degrees F.)
  • Remove the tart from the oven, then allow it to sit for 5 minutes. Cut into pieces and serve.

2 tablespoons Dijon mustard
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
1/4 cup olive oil
1/2 cup grated parmesan cheese
3/4 lb asparagus
1 sheet puff pastry
2 eggs
1/2 cup ricotta cheese
1 cup parmesan cheese
2 tablespoons chopped chives
1 pinch black pepper
1 pinch salt

Steps:

  • Blend garlic cloves, dijon mustard, lemon juice, worcestershire sauce, hot sauce and gradually add oil while blending.
  • After it's well mixed, add paremsan cheese and black pepper.
  • Blanch asparagus (boil for 1-2 minutes then place in an ice bath).
  • Spread out asparagus in a baking pan, top with the caesar salad mixture.
  • Prepare the puff pastry dough, roll it out flat until you have a rectangle shape.
  • Create a border around the edges of the puff pastry, approximately 3/4" wide, using a small sharp knife.
  • Then create diagonal score marks around the edges of the puff pastry.
  • Poke holes throughout the pastry dough using a fork.
  • Brush the egg yolk + water wash around the crush (edges).
  • Bake the pastry at 400F for 10mins.
  • To make part filling, combine egg, ricotta cheese, parmesan cheese, chives, black pepper--mix using a whisk.
  • Spread tart filling evenly on top of the pastry.
  • Spread the asparagus evenly on top of the filling.
  • Gently place 2 eggs (make sure not to break the yolk) on top of the asparagus.
  • Bake at 400F for 25mins.

1-1/2 cups half-and-half cream

  • Place asparagus in a large saucepan with enough water to cover; bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain well and pat dry. 1/2 onion, chopped

2 celery ribs, chopped

1 (14 1/2 ounce) can asparagus spears, cut, drained
1/4 cup parmesan cheese, grated, divided
1 tablespoon dried parsley
1 -2 teaspoon red pepper flakes
3/4 cup cream (10% cream or Half and Half)
1 -2 tablespoon horseradish cream (your choice, mild or hot)
2 teaspoons salt

Steps:

  • Preheat oven to 350°.
  • In large dutch oven or saucepot, cook egg noodles according to package directions; drain well. Return drained noodles to saucepot; set aside.
  • In medium skillet, sauté onion, garlic and celery in vegetable oil for 3-4 minutes or until onions are soft; set aside to cool slightly.
  • Add the cooked onion mixture, crabmeat, drained asparagus, half of the parmesan cheese, parsley, and red pepper flakes to the noodle. Mix well; set aside.

A savory tart, its silky custard thickly studded with crab meat to pick up the sweetness of the wines, and asparagus to tame tropical fruit and citrus flavors with vegetal, mineral notes and a hint of bitterness, will make for a lovely lunch or a predinner snack. Come summer, some diced zucchini can replace the asparagus. It also delivers a kick, not in the filling but in the pastry. There's no heat from the subdued alcohol in the bottle. The cayenne in the crust makes up for it.

7 tablespoons unsalted butter

1/2 bunch medium asparagus, ends snapped, halved vertically and cut into 1-inch pieces

1 tablespoon lemon juice
1 tablespoon minced chervil
3/4 cup half-and-half
4 ounces soft goat cheese

Steps:

  • Heat oven to 400 degrees. Whisk flour, 1/2 teaspoon salt and cayenne in a bowl or blend in a food processor. Add 6 tablespoons of butter and cut in or pulse until size of peas. Beat 1 egg with 2 tablespoons ice water, scatter on flour mixture and mix with a fork or pulse until a dough can be gathered together. Add a little more water if needed. Form into a disk and roll on a lightly floured surface, then lay it into a 9-inch straight-sided tart pan.
  • Trim edges, line with foil and weight with pastry weights or dry beans. Bake 10 minutes, until it starts to look dry. Remove foil and weights and bake 10 to 15 minutes more, until lightly browned. Remove from oven. Reduce heat to 350 degrees.
  • Melt remaining butter in a skillet over medium heat, add shallot and cook 1 minute. Add asparagus and cook about 2 minutes, until they start to soften. Remove from heat. Fold in crab meat, lemon juice and chervil. Season with salt. Spread in pastry.
  • Whisk half-and-half and cheese until smooth. Beat in remaining eggs until well blended. Pour over crab and asparagus, place in oven and bake about 40 minutes, until set and lightly browned. Let cool 15 minutes, remove sides of pan and serve at once or cooled to room temperature.
