1 pound asparagus, trimmed and cut into 1 inch pieces
8 ounces mushrooms, quartered or sliced
1 tablespoon oil
salt and pepper to taste
4 strips bacon (optional)
8 ounces chicken breast, pounded thin
salt and pepper to taste
6 cups baby spinach
1/4 cup balsamic vinaigrette
1 large ripe avocado, sliced
1/4 cup goat cheese, crumbled

Steps:

  • Toss the asparagus and mushrooms in the oil, salt and pepper, place on a baking sheet in a single layer and roast in a preheated 400F/200C oven until they start to caramelize, about 20 minutes, mixing half way through.
  • Meanwhile, cook the bacon and set aside on paper towels to drain before crumbling.
  • Season the chicken with salt and pepper to taste, heat the grill (or a pan) to medium-high heat, brush with oil and cook the chicken until cooked through and golden brown, about 3-5 minutes per side, before letting rest for 5 minutes and slicing.
  • Assemble the salad, toss in the dressing and enjoy!

1 1/2 cups coarsely chopped fresh mushrooms
1/4 cup finely chopped onion
1 teaspoon minced garlic
2 cups Italian cheese blend, shredded
1/2 teaspoon lemon pepper seasoning
4 large boneless skinless chicken breast halves, flattened to 1/4-inch thickness
1/3 cup seasoned dry bread crumb

Steps:

  • Melt 1 tablespoon butter over medium-high heat in large skillet . Add mushrooms, onion and garlic; cook 7 minutes or until vegetables are tender and liquid is evaporated, stirring occasionally. Remove from heat; cool slightly.
  • Stir 1 cup cheese and lemon pepper into cooled mushroom mixture; spread 1/3 cup mixture onto each chicken breast. Fold chicken lengthwise in half; secure each with 2 wooden picks. Melt remaining 2 tablespoons butter; dip chicken into butter and roll in crumbs. Place in lightly greased shallow baking dish or pie plate; drizzle with remaining melted butter.
  • Bake in preheated 450°F oven 20 minutes or until golden brown and chicken is cooked through. Sprinkle with remaining cheese. Bake 3 minutes more or until cheese is melted. Remove wooden picks before serving.

Steps:

  • Prepare the pasta, according to package directions, while you make the rest of the meal.
  • Put half the olive oil in a large pan, add the diced chicken and brown- set aside.
  • Put the rest of the olive oil in the pan and add the onions and mushrooms.
  • Cook until the juices from the mushrooms disappear (about 5- 7 mins) Add the chicken and spinach and mix thoroughly.

6 boneless, skinless chicken breasts
1 pound crimini mushrooms
2 tablespoons butter
Kosher salt and freshly cracked black pepper
6 ounces softened goat cheese
3 tablespoons olive oil
1 recipe Mushroom Wine Sauce, recipe follows
1 recipe Sauteed Fingerling Potatoes, recipe follows
1/4 cup freshly chopped parsley leaves, for garnish
1 1/2 cups dried shiitake mushrooms
1/4 cup chicken stock
1/4 cup white wine
1 tablespoon butter, cold
2 cups boiling water
Kosher salt and freshly cracked black pepper
1 1/2 pounds fingerling potatoes
4 tablespoons unsalted butter
Kosher salt and freshly cracked black pepper

Steps:

  • Place the chicken breasts, 1 by 1, between 2 pieces of plastic wrap and pound with a meat mallet or rolling pin until about 1/2-inch thick. Set aside.
  • Stem the mushrooms and place the caps and stems separately in a food processor and process until finely chopped. Melt the butter in a medium-sized saute pan over medium-high heat and add the mushrooms. Cook until the mushrooms have released their liquid, and saute until all the liquid has evaporated. (This is called a duxelle.) Season well with the salt and pepper. Set aside.
  • Smear each chicken breast with some of the goat cheese and top with some of the duxelle. Roll the breast up and tie with the kitchen twine. Season with the salt and pepper. In a large saute pan over medium-high heat, heat the olive oil and sear the chicken on all sides. Continue to saute until the chicken is cooked through and golden brown, about 10 to 15 minutes. Allow to sit 5 minutes before removing the kitchen twine and slicing each rolled breast into 4 to 5 slices. Top with some of the remaining duxelle and several spoonfuls of the Mushroom Wine Sauce. Serve with the Sauteed Fingerling Potatoes, garnished with the chopped parsley.
  • Place the shiitakes in a mixing bowl and add the boiling water. Allow to sit undisturbed 15 to 20 minutes, until the liquid is richly fragrant and has taken on the earthy flavor of the mushrooms. Strain and reserve the liquid. Discard the mushrooms or reserve for another use. In a small saute pan over medium-high heat, bring the mushroom liquid to a strong boil and reduce by half. Add the wine and chicken stock, reduce by 1/2 again. Remove from heat and add the butter, swirling the pan until the butter is incorporated and the sauce is glossy and shiny. Season with the salt and pepper.
  • Using the mandoline or a knife, slice the potatoes into thin rounds of uniform thickness. Melt the butter in a large saute pan over medium-high heat and saute the potatoes until cooked through with a golden, crispy crust. Season with the salt and pepper.

1 1/2 cups shredded Italian fontina cheese
1 1/2 cups shredded mozzarella

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Meanwhile, heat the oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer to a large bowl using a slotted spoon. Add the mushrooms to the pancetta drippings and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Transfer to the bowl with the pancetta.
  • Cook the penne in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the marinara, chicken, the fontina and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the mozzarella and the remaining Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

Steps:

  • Heat olive oil in a large nonstick skillet over medium-high heat.
  • Combine ground cumin, 1/8 teaspoon salt, and 1/8 teaspoon black pepper; sprinkle over chicken.

2 chicken breasts, large
1/4 cup fresh parsley
4 slices bacon
4 slices gouda cheese (you could also use mozzarella or swiss)
8 cremini mushrooms
2 teaspoons Worcestershire sauce
1 small tomatoes, chopped in small cubes (like a vine or roma)
1 teaspoon sea salt
10 peppercorns
1 teaspoon oregano
1 teaspoon basil
1 egg
3 tablespoons olive oil
1/2 cup breadcrumbs
1/4 cup of grated parmesan cheese
1 teaspoon sea salt

Steps:

  • Mushrooms: Add butter, salt, pepper and mushrooms to a small pan and cook over high heat until liquid has been reduced.
  • Bacon: Heat oven to 400F and place bacon on cookie sheet in oven. It should only take about 5 minutes depending on the thickness of the bacon. Remove and place in paper towels to remove excess fat.
  • Flatten out chicken breast with a meat tenderizer until at least double in size and about ¼ inch thick. Try not to puncture the chicken or your cheese will melt out when cooking. Split parsley, bacon, cheese, mushrooms and tomatoes into two piles and place on one side of each breast so that the other side can be folded over. Grind oregano, basil, salt and pepper together in a mortar and pestle and add to stuffing. Add one tsp of Worcestershire to each breast and fold the other half of the breast over.
  • Preheat an oven to 375°F Heat a cast iron pan (or a pan that can be transferred to the oven) to medium heat and add olive oil once up to heat. Whip the egg in a small bowl and paint one side of the chicken breast using a small brush. Mix the bread crumbs, parmesan and sea salt on a plate. Dip the egg side on the plate with the bread crumbs and place in the pan, breadcrumbs side down. Once in the pan, paint the side facing up with the remaining egg yolk. Place the remaining breadcrumbs on this side and pat them into the chicken. Flip the chicken after 1-2 minutes, once the breadcrumbs begin to turn a nice golden color, and place the pan in the oven. Cook for 20-25 minutes.

1 whole chicken
4 ounces goat cheese, room temperature
1 tablespoon chopped fresh rosemary leaves
2 tablespoons extra-virgin olive oil, plus more for sauteing
Salt and freshly ground black pepper
1 tablespoon butter, plus 1 tablespoon
1/4 cup chopped shallots
4 ounces morel mushrooms, cleaned and sliced in half lengthwise (substitute 1 ounce dried morels, rehydrated)
4 ounces black trumpet mushrooms, cut into 1 1/2-inch pieces
3/4 cup chicken stock or broth
2 tablespoons chopped chives

Steps:

  • Preheat the oven to 450 degrees F.
  • Remove the backbone and wings from the chicken. Press the chicken open like a book. Carefully remove the bones from the chicken leaving the whole chicken intact with the skin. You can ask your butcher to do this for you.
  • In a small bowl, combine the goat cheese, rosemary, and olive oil. Season with salt and pepper and mash together with the back of a fork.
  • Turn the chicken over so the skin side is up. Gently loosen the skin by inserting your fingers underneath it to make a pocket. Stuff the rosemary goat cheese under the skin evenly over the breasts and legs. Tuck the skin back over the chicken. Season both sides of the chicken well with salt and pepper. Drizzle a little olive oil over the chicken and rub well.
  • Heat a large, ovenproof saute pan over high heat. When the pan is hot, add enough olive oil to coat the bottom of the pan. When the oil is hot and begins to shimmer when swirled, add the chicken, skin side down. Cook the chicken until the skin side is a deep golden brown, about 8 to 10 minutes. Carefully turn the chicken over and transfer to the oven. Roast for 10 minutes, or until the chicken is cooked through and the juices run clear.
  • Remove the chicken from the pan and keep warm. Remove all but 2 tablespoons of the fat from the pan and return to the heat. Add 1 tablespoon of the butter and the shallots and saute for 2 minutes, scraping the bottom of the pan with a wooden spoon to loosen the browned bits. Add the mushrooms and season with salt and pepper. Saute for 2 minutes, or until the mushrooms begin to brown. Add the stock and bring to a simmer. Cook 5 minutes or until reduced by 1/3. Stir in the remaining tablespoon of butter and remove from the heat. Pour the sauce over the chicken and garnish with the chives. Serve immediately.

1 8 oz container low-fat ricotta cheese.
1 Tbsp butter
1 tsp garlic powder
1 tsp dried oregano

1 boboli pizza crust
1/2 c chopped broccoli florets
1 3 0z can sliced mushrooms, drained.
2 c reduced-fat, shredded mozzarella cheese.

Steps:

  • 1. Heat oven to 325. Place crust on lg baking shet. Melt 1 tbsp butter in lg skillet over medium heat. Cook chicken until browned. In microwave-safe bowl, combine, ricotta, 1 tbep butter, garlic powder, oregano, salt & pepper. Microwave on high for 1 min. Stir to combine. Spread ricotta mix evenly over crust. Sprinkle evenly w/ mozzarella cheese. Arrange chicken, broccoli, and mushrooms evenly over cheese. Bake 30 min, or until cheese melts.

Steps:

  • Flatten chicken to 1/8-in. thickness; sprinkle with salt and pepper. In a small bowl, combine the flour and yogurt until smooth. Stir in the cheese, mushrooms, pimientos, parsley and chives. Spread down the center of each piece of chicken. Roll up and tuck in ends; secure with toothpicks. Place seam side down in an 11x7-in. baking dish coated with cooking spray., Brush yogurt over chicken. Combine bread crumbs and paprika; sprinkle over the top. ¾ cup mayonnaise
2 tablespoons mayonnaise
3 cups shredded Gouda cheese
5 tablespoons all-purpose flour
1 bunch fresh dill, finely chopped
1 tablespoon vegetable oil
1 carrot, grated
1 tablespoon vegetable oil, or as needed
1 onion, diced
1 (10 ounce) package fresh mushrooms, chopped
salt and ground black pepper to taste
1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
2 cloves garlic, finely chopped
2 sprigs fresh dill, chopped, or to taste
1 (10 ounce) package diced cooked chicken
1 cucumber, thinly sliced

Steps:

  • Beat eggs with 3/4 cup plus 2 tablespoons mayonnaise in a bowl. Add Gouda cheese and flour; mix well. Pour 1/2 the batter into another bowl.
  • Heat 1 tablespoon oil in a skillet over medium heat and cook grated carrot while stirring until softened, about 5 minutes. Add the carrot to 1 portion of batter; mix a small bunch of dill into the other portion.
  • Heat a nonstick or well-seasoned cast iron skillet over medium-low heat. Pour in 2 tablespoons of one of the batters; immediately rotate the pan in a circular motion to spread. Cook until edges are crispy, 1 to 2 minutes. Flip until browned and dry on the other side, 1 to 2 minutes more. Repeat with all the batters, ending up with a stack of dill crepes and a stack of carrot crepes.
  • Heat 1 tablespoon oil in a separate skillet over medium-low heat. Cook onion, while stirring, until soft and translucent, about 5 minutes. Add mushrooms; cook until liquid evaporates, about 5 minutes more. Remove from heat and season with salt and pepper.
  • Blend cream cheese and 1/2 cup mayonnaise together in a bowl. Season with salt and pepper; add garlic and 2 sprigs dill.
  • Spread a portion of cream cheese mixture over a dill crepe; add a layer of the mushroom-onion saute. Top with a carrot crepe, spread with more cream cheese, and top with some of the chicken. Repeat layers until all crepes are used up. Decorate with thinly sliced cucumber. Cover with plastic wrap and chill until ready to serve.

1 medium onion, chopped
1 jalapeno chile (ribs and seeds removed for less heat), minced

10 ounces white button mushrooms, trimmed, thinly sliced
1 rotisserie chicken (about 2 1/2 pounds), skin removed and meat shredded (about 4 cups)
1 package (10 ounces) frozen corn kernels
1 cup prepared green salsa, plus more for serving
6 burrito-size (10-inch) flour tortillas
1 bunch flat-leaf spinach, thick stems removed (3 cups)
1 log (5 ounces) soft goat cheese, crumbled

Steps:

  • In a large skillet with a lid, heat oil over medium. Add onion and jalapeno; season with salt and pepper. Cook, stirring occasionally, until softened, 3 to 5 minutes.
  • Add mushrooms; cover, and cook until they begin to release their liquid, 3 to 5 minutes. Uncover; cook, stirring occasionally, until mushrooms begin to brown and skillet is dry, about 5 minutes more.
  • Add chicken, corn, and salsa. Cook, stirring, until heated through and mixture is saucy, 4 to 5 minutes.
  • Meanwhile, heat tortillas according to package instructions. In center of each tortilla, layer spinach, chicken mixture, and goat cheese.
  • Wrap burritos one at a time: Fold side of tortilla closest to you over filling. Fold right and left sides toward center, and roll up. Halve if desired; serve with additional salsa.

4 ounces Goat Cheese, room temperature
1 tablespoon Chopped Fresh Rosemary Leaves
2 tablespoons Extra-Virgin Olive Oil, plus more for sauteing
Salt and Freshly Ground Black Pepper
4 tablespoons Butter, divided
1/4 cup Chopped Shallots
4 ounces Morel Mushrooms, cleaned and sliced in half lengthwise
4 ounces Black Trumpet Mushrooms, cut into 1 1/2-inch pieces
3/4 cup Chicken stock or broth
2 tablespoons Chopped Chives

Steps:

  • 1. Preheat the oven to 450 degrees F. 2. In a small bowl, combine the goat cheese, rosemary, and olive oil. 3. Season with salt and pepper and mash together with the back of a fork. 4. Gently loosen the skin by inserting your fingers underneath it to make a pocket. 5. Stuff the rosemary goat cheese under the skin evenly. Tuck the skin back over the chicken. 6. Season both sides of the chicken well with salt and pepper. 7. Drizzle a little olive oil over the chicken and rub well. 8. Heat a large, ovenproof saute pan over high heat. 9. When the pan is hot, add enough olive oil to coat the bottom of the pan. 10. When the oil is hot and begins to shimmer when swirled, add the chicken, skin side down. 11. Cook the chicken until the skin side is a deep golden brown, about 8 to 10 minutes. 12. Carefully turn the chicken over and transfer to the oven. 13. Roast for 10 minutes, or until the chicken is cooked through and the juices run clear. 14. Remove the chicken from the pan and keep warm. 15. Remove all but 2 tablespoons of the fat from the pan and return to the heat. 16. Add 1 tablespoon of the butter and the shallots and saute for 2 minutes, scraping the bottom of the pan with a wooden spoon to loosen the browned bits. 17. Add the mushrooms and season with salt and pepper. Saute for 2 minutes, or until the mushrooms begin to brown. 18. Add the stock and bring to a simmer. 19. Cook 5 minutes or until reduced by 1/3. 20. Stir in the remaining tablespoon of butter and remove from the heat. 21. Pour the sauce over the chicken and garnish with the chives. 22. Serve immediately.

420 g chicken breast fillets, diced (3 small single)
1 medium onion, finely chopped
2 garlic cloves, crushed
200 g button mushrooms, sliced
8 sheets phyllo pastry
60 g weight watchers reduced-fat tasty cheese, grated
2 teaspoons sesame seeds
baby spinach leaves, to serve

Steps:

  • Preheat oven to 200°C.
  • Coat an oven tray with cooking oil spray.
  • Coat a medium non-stick fry pan with cooking oil spray.
  • Place over medium heat.
  • Add the chicken, onion and garlic, and cook stirring, for 5 minutes or until chicken is tender.
  • Add the mushrooms and cook for 2 minutes.
  • Drain off any excess liquid.
  • Set aside for 10 mins to cool.
  • Place two sheets of phyllo on a clean work surface, spaying between each with cooking spray.
  • Spoon 1/4 of the chicken mixture onto the centre.
  • Top with 1 tablespoon of the cheese.
  • Fold to enclose.

CHICKEN
4 boneless skinless chicken breasts
2 cups water
4 sun-dried tomatoes (not oil packed)
4 oz goat cheese
1 tsp fresh rosemary
1 clove garlic, finely chopped
1 large egg
1 cup plain breadcrumbs
2 Tbsp unsalted butter, melted
MUSHROOM WINE SAUCE
1 Tbsp olive oil
8 oz sliced button mushrooms
1/2 cup chicken broth
1/2 cup dry white wine
1 Tbsp unsalted butter, cold

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Pound chicken breasts to flatten to about 1/4-inch thickness; set aside.
  • 3. Bring water to boil in a saucepan. Remove pan from heat, add tomatoes to hot water, and let soak for 5 minutes. Remove tomatoes from water and pat dry with a paper towel, then finely chop the tomatoes.
  • 4. Mix together the chopped tomatoes, goat cheese, rosemary and garlic. Spread equal amounts of the cheese mixture lengthwise over the center of each flattened chicken breast. Fold each chicken breast lengthwise overlapping left and right edges to cover filling in the center and tucking short ends inside. Secure with toothpicks.
  • 5. Place egg in a shallow bowl, and beat well; set aside. Place breadcrumbs in a separate shallow bowl. Roll each rolled chicken breast in the beaten egg, then roll in the breadcrumbs until well coated.
  • 6. Place coated chicken breasts in a baking dish. Pour melted butter over the chicken breasts. Tilt the baking dish from side to side to allow butter to coat the bottom of the baking dish (to help prevent the chicken from sticking to the pan).
  • 7. Bake for 30 to 40 minutes, or until chicken is thoroughly done.
  • 8. Make Mushroom-Wine Sauce while chicken is baking: Heat the olive oil in a skillet over medium heat. Add mushrooms and saute for 7 minutes. Add chicken broth and wine, and cook over medium-high heat for 5 minutes or unti liquid is reduced to about 1/3 cup. Remove pan from heat and stir in cold butter, stirring frequently until butter is melted.
  • 9. To serve, remove toothpicks, and cut each chicken breast into 1/2-inch slices. Arrange chicken slices on a plate, and spoon Mushroom-Wine Sauce on top. Serve immediately.

8 slices Bacon
1/2 cup Onion
1/2 cup Mushrooms
1/2 cup Shredded Swiss Cheese

1 can (14-1/2 oz.) diced tomatoes, well drained
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup KRAFT Shredded Mozzarella Cheese, divided
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 375ºF.
  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook and stir chicken, mushrooms and basil in large nonstick skillet on medium-high heat 3 min. or until chicken is lightly browned. Stir in pasta sauce and tomatoes; bring to boil.
