10-MINUTE MUSHROOM CARBONARA
This is a quick and easy upgrade to weeknight spaghetti dinner. I tend to make this low sodium, but you may want to add salt in the pasta water and while the mushrooms are cooking.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
- Meanwhile, place mushrooms in a dry skillet over medium heat. Cook until they begin to brown and release moisture, 3 to 5 minutes. Add oil and garlic. Fry until softened, about 3 minutes more.
- Beat eggs together in a bowl. Add 1/2 the Parmesan cheese. Mix well and stir into cooked mushroom mixture.
- Serve the pasta topped with mushroom sauce and remaining Parmesan cheese.

- Cook tortellini in pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1 cup cooking liquid.
- Sauté bacon in large skillet over medium-high heat until crisp and brown. Using slotted spoon, transfer bacon to paper towels to drain. Pour off all but 3 tablespoons drippings from skillet. Add mushrooms, onions, garlic, and sage to skillet. Sauté over medium-high heat until mushrooms are tender, about 8 minutes. Add 1/2 cup reserved pasta cooking liquid to skillet. Transfer pasta to serving bowl and sprinkle with remaining 1/3 cup Parmesan cheese.

- Peel the sweet potatoes and pass through a spiralizer. You should get about 6 cups of "noodles." Cut the noodles with scissors to make 8- to 10-inch pieces.
- Cook the bacon in a large Dutch oven over medium-high heat until well browned, 4 to 6 minutes. Remove the bacon to a paper-lined plate, add the mushrooms to the pan and sauté until softened, 2 to 3 minutes. Add the baby kale, red pepper flakes, garlic and some salt and pepper, then cook for 30 seconds just to soften.
- Add the sweet potato noodles and 3/4 cup water to the pan and gently toss to cook the noodles until they are just approaching al dente, 3 to 4 minutes. Add an additional 1/4 cup water, if necessary, to "steam" the noodles.

MUSHROOM CARBONARA
Steps:
- Boil water for pasta. Tear off and discard stems of 1½ lb. crimini or button mushrooms, then tear them into quarters (or in halves if small). Transfer to a medium bowl. Lightly smash and peel 6 garlic cloves, then thinly slice. Peel and finely chop 2 medium shallots. (A small red onion will work fine in a pinch.) Coarsely chop 1 cup parsley leaves with tender stems.
- Whisk 5 large egg yolks, 1 large whole egg, 4 oz. store-bought pre-grated Parmesan (about 1¼ cups), and 1½ tsp. freshly ground black pepper in another medium bowl; set aside.
- Heat a large Dutch oven over medium-high for a good 3 minutes. You want to get the pan very hot since adding the mushrooms is going to lower the temperature of the surface of the pan. Toss mushrooms and ¼ cup extra-virgin olive oil once in pan to coat in oil. Cook, tossing once every 4-5 minutes (but mostly undisturbed), until mushrooms are mostly golden brown, 13-16 minutes. This will take some time and they will let out a lot of moisture before they start to brown, so stick with it!
- Once mushrooms have been cooking for about 10 minutes, drop 1 lb. orecchiette into boiling salted water and set a timer 2 minutes shy of al dente according to package directions.
- Back to those mushrooms! Once you've finished the browning process, reduce heat to medium-low and add garlic, shallots, and 1½ tsp. salt. Cook, stirring often, until aromatics are softened but not browned, 30-60 seconds.
- When pasta is 2 minutes shy of al dente, scoop out 2 cups pasta cooking liquid, then drain pasta.
- Add pasta along with 1 cup pasta cooking liquid to mushroom mixture. Cook over medium-low heat, stirring often to finish cooking the pasta and absorb liquid, about 2 minutes (this is why you're cooking the pasta 2 minutes shy of al dente; it allows for the flavors to meld as the pasta finishes cooking in the sauce). Remove from heat and let cool 1 minute. (Don't skip this step-if the pasta is too hot when you add the egg mixture, it will turn into scrambled eggs instead of a luxurious sauce.)
- Add ½ cup pasta cooking liquid to reserved egg mixture and whisk to combine and loosen eggs. Gradually add egg mixture to pot, stirring vigorously with a wooden spoon and adding more pasta cooking liquid as needed to loosen things up, until a very creamy, luscious sauce coats all noodles.
- Add parsley and stir again to combine. Taste and adjust seasoning for salt. Divide pasta among bowls. Top with Parmesan and a few cranks of pepper.

COURGETTE & MUSHROOM CARBONARA

- Put a large pan of water on to boil. Cut or snip the bacon into small strips, slice the courgettes length ways in quarters and then remove the soft seedy part by running a knife along each strip. Chop these long strips into 'penne' sized chunks. Strip the leaves off the thyme and set all aside.
- Heat the olive oil in a large deep pan and begin to fry the bacon on a moderately high heat. Once browned and crisp, add the courgette, mushrooms and thyme and turn the heat down and continue to cook slowly until veggies are soft. Stir often, coating the veggies in the fried bacon residue.
- The water should now be boiling, add the spaghetti and cook to packet instructions. Mix together the egg yolks, double cream and half the parmesan, season with black pepper (you could add salt if you like but I find that with the parmesan and bacon it is not necessary)
- Once your veggies are lightly browned and soft and your spaghetti is cooked, take the veggie pan off the heat. Drain the spaghetti keeping aside a little cooking water, and add this to the veggie pan immediately. Stir round and then quickly add the creamy sauce (the heat of the spaghetti will be enough to cook the eggs without scrambling them.) Stir through ensuring the spaghetti is coated in sauce and then add the remaining parmesan.
- Take straight to the table and serve from the pan! Eat up quickly, the fresher the better with this one - although I have microwaved leftovers before to satisfactory result.
