This make-ahead starter delivers all the flavour of mushrooms on toast without any last-minute frying

250g pack butter , softened
1 onion , very finely chopped
3 garlic cloves , finely chopped
2 thyme sprigs, plus extra to serve
30g pack dried porcini mushrooms, soaked, drained and finely chopped
250g pack chestnut mushrooms , finely chopped
2 tbsp brandy
juice ½ lemon
small handful each parsley and tarragon, finely chopped
toasted bread and salad leaves, to serve

Steps:

  • Melt 50g butter in a pan and gently fry the onion until softened. Add the garlic and thyme and fry for 1 min more. Tip in all the mushrooms and toss to coat in the butter. Cook on a high heat for 5-8 mins until soft. Pour over the brandy and lemon juice, then cook for 2-3 mins more or until all the liquid has evaporated. Turn off the heat, add the herbs and seasoning, then allow to cool.
  • Once cooled, remove the thyme. Mix the mushrooms with the remaining butter, then divide between 4 ramekins. Chill until firm, or for up to 2 days, then serve a ramekin, topped with a thyme sprig, between 2 to share with toasted bread and dressed salad leaves.

Easy creamy mushroom toast is perfect for breakfast, lunch and dinner and can be made in no time at all for a delicious, easy vegetarian meal.

500 g (+- 1lb) mushrooms of your choice ((cleaned and chopped) )
3-4 garlic cloves (crushed)
1 tsp chilli/red pepper flakes
1 tsp dried oregano/thyme
2 tbsp butter
juice of 1/2 lemon
salt and pepper to taste
chopped parsley (for serving)
4 slices bread of your choice (toasted)
cream cheese ((optional))

Steps:

  • Heat a large frying pan over high heat then add a tablespoon or two of olive oil.
  • Fry the mushrooms in batches, until well-browned all over.
  • Add all the mushrooms back to the pan with their resting juices and add the garlic, herbs and chilli flakes. Cook for 1-2 minutes.
  • Add the butter and lemon juice and stir well while the butter is melting to create a creamy sauce then take off the heat. Season to taste.
  • Serve the creamy mushrooms on toast smeared with cream cheese (optional).

4 large slices sourdough bread
1 tbsp olive oil
4 slices prosciutto
knob of butter
350g mixed mushrooms
1 garlic clove, crushed
4 tbsp crème fraîche
handful parsley leaves, finely chopped

Steps:

  • Toast the sourdough bread, cut each slice in half, then set aside. Heat a large frying pan with the olive oil. Fry the prosciutto in the pan for about 2 mins on each side until golden and crisp. Break into large pieces and set aside on some kitchen paper.
  • Add the butter to the pan followed by the mushrooms. Cook for 2 mins, then add the garlic and crème fraîche. Cook for 3-5 mins more until the mushrooms are soft and lightly coated in the crème fraîche. Stir through a little parsley. Pile up on the toasts and top with the prosciutto and more parsley.

One pound of mushrooms is just right for two servings.

2 tablespoons unsalted butter, more as needed
1 pound thinly sliced portobello or cremini mushrooms
1 teaspoon chopped thyme
2 small garlic cloves, minced
Salt and pepper
Splash of sherry or Marsala (optional)
1/4 cup crème fraîche
2 thick slices country bread, for toasting
2 tablespoons chopped parsley

Steps:

  • Heat a wide skillet over high heat and add butter, swirling pan. When butter begins to sizzle, add mushrooms and cook, stirring, until lightly browned, 6 to 8 minutes.
  • Add thyme and garlic, and stir to coat. Season well with salt and pepper and continue to sauté for a minute more, then add sherry, if using. Add crème fraîche and let mixture simmer 2 minutes.
  • Meanwhile, toast bread slices until golden. Lightly butter them and place on individual warm plates.
  • Spoon mushrooms and juices over toasted bread. Top with chopped parsley.

2 tablespoons butter, softened
1 tablespoon minced fresh basil
1 garlic clove, minced
1 French bread baguette (10-1/2 ounces)
MUSHROOMS:
2 tablespoons butter, softened
1 pound sliced baby portobello mushrooms
2 garlic cloves, minced
1 package (3 ounces) julienned soft sun-dried tomatoes (not packed in oil)
1/4 cup dry red wine
3 tablespoons chopped fresh basil, divided
1/4 teaspoon salt
1/8 teaspoon pepper
8 ounces fresh mozzarella cheese, thinly sliced

Steps:

  • Preheat broiler. Mix butter, basil and garlic. Cut baguette horizontally in half; spread with butter mixture. Cut each half into six portions; place on a baking sheet, cut side up., In a broiler-safe skillet, heat 2 tablespoons butter over medium heat; saute mushrooms until tender, 5-7 minutes. Add garlic; cook 1 minute. Stir in tomatoes, wine, 2 tablespoons basil, salt and pepper; cook, uncovered, 3 minutes, stirring occasionally. Remove from heat; top with cheese. Broil 4-5 in. from heat until cheese is melted, 2-3 minutes; sprinkle with remaining basil., Broil baguette portions until lightly toasted. Serve with mushrooms.
