These burgers are a twist on the traditional backyard favorite. A dollop of dill and horseradish dressing gives extra bite to this standard. 1/2 cup reduced-fat sour cream
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1 tablespoon finely chopped onion
1 tablespoon sweet pickle relish
2 teaspoons prepared horseradish
BURGERS:
3/4 cup chopped fresh mushrooms
1/4 cup shredded carrot
1/4 cup finely chopped onion
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce
1/8 teaspoon pepper
1-1/4 pounds lean ground beef (90% lean)
6 whole wheat hamburger buns, split
6 lettuce leaves
12 tomato slices

Steps:

  • In a small bowl, combine the sour cream, dill, onion, pickle relish and horseradish; cover and refrigerate. In another bowl, combine the first eight burger ingredients. Crumble beef over mixture and mix well. Shape into six 1/2-in.-thick patties., Grill patties, covered, over medium-hot heat for 3-4 minutes on each side or until meat is no longer pink. Serve on buns with lettuce, tomato and horseradish sauce.

It is Friday again and that means it is another chance for me to try to invent a healthier burger. This week we actually wanted a beef burger so I wanted to try to get it low fat but still moist and tasty. I had the idea of a horseradish and mushroom burger and this is what came out of those thoughts. The mushrooms are used sort of in place of breadcrumbs and their high moisture content helps to keep things moist. I think I may have thought that the horseradish would have been a stronger taste but in reality it was rather mellow but nice. If you want more of a bite from the horseradish I would suggest spreading a bit of the horseradish sauce on your burger bun as much more in the mix might make it too moist to hold up. Cooking time includes the chilling time.

1 lb extra lean ground beef
1 small onion, quartered
2 garlic cloves
1 cup mushroom, quartered
3 tablespoons horseradish sauce
1 beef stock cube, crumbled
1 egg white

Steps:

  • Put the onion, garlic and mushrooms into a food processor or chopper and blitz for about 40 seconds to a minute until everything is mixed and the mushrooms are finely chopped.
  • Put the ground beef into a bowl and add the mixture you just blitzed, the horseradish sauce, stock cube and the egg white.
  • Combine the mixture with your hands and then put into the fridge for about 30 minutes to let it firm up.
  • Take out of the fridge and form into four equal sized patties.
  • Then either fry them in a pan or do as I do and lightly brush them with very little extra virgin olive oil and grill them on a Foreman type grill. It takes about 8 minutes for them to be cooked through.
  • Serve.

1 pound ground beef chuck
1 (8 ounce) package sliced fresh mushrooms
1 onion, chopped
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 (14 ounce) can beef broth
1 (10.75 ounce) can condensed cream of mushroom soup
2 tablespoons Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon salt
1 (12 ounce) package egg noodles
1 cup sour cream
2 teaspoons finely grated raw horseradish

Steps:

  • Heat a skillet over medium-high heat. Add beef, mushrooms, onion, and garlic. Saute until beef is browned and crumbly, 6 to 8 minutes. Add flour; cook and stir until combined, about 2 minutes. Add broth, cream of mushroom soup, Worcestershire sauce, pepper, and salt. Bring to a boil; reduce heat. Simmer, stirring occasionally, until flavors blend, about 15 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender yet firm to the bite, about 6 minutes. Drain.
  • Combine sour cream and horseradish in a bowl; add to the beef mixture. Stir. Cook until hot, about 5 minutes. Serve over hot cooked egg noodles.
