1 clove garlic, minced
4 slices cooked OSCAR MAYER Bacon, crumbled
1/2 cup KRAFT Shredded Sharp Cheddar Cheese
1 Tbsp. chopped fresh parsley

Steps:

  • Heat oven to 350°F.
  • Remove stems from mushrooms; discard or reserve for another use.
  • Mix remaining ingredients; spoon into mushroom caps. Place, filled-sides up, in shallow baking dish.

1 pound baby bella mushrooms
1 small onion, diced
1 cup sour cream
2 tablespoons cream cheese
6 slices bacon
1 cup sharp cheddar cheese, shredded
salt and pepper to taste

Steps:

  • Pre-heat oven to 350 degrees. Dice bacon slices and in a large skillet cook until crispy. Remove bacon from pan and let drain on paper towel. Clean and dice mushrooms and place in bacon grease (medium-high heat) with onions and season with salt and pepper. Saute until mushrooms are tender and the onions begin to caramelize. Mix in sour cream and cream cheese incorporating all the ingredients until creamy. Place ingredients in a 8" X 8" pan, then add cooked bacon and top with shredded cheese. Bake for 10- 15 minutes or until cheese has melted.

2 tablespoons minced shallots
1 clove garlic, minced
1 ½ cups chanterelle mushrooms, finely chopped
1 tablespoon brandy
½ teaspoon minced fresh thyme
1 tablespoon minced fresh parsley
¼ teaspoon salt and pepper to taste
1 egg
¼ cup milk
¼ cup shredded Swiss cheese
2 tablespoons cream cheese, softened
2 slices bacon, cooked and crumbled
24 mini phyllo tart shells

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat olive oil in a large skillet over medium heat. Saute shallots until they begin to brown. Add garlic and mushrooms, and cook until tender. Deglaze pan with brandy, and season with thyme, parsley, salt, and pepper. Remove from heat, and allow to cool.

1-3/4 cups soft bread crumbs
1 cup grated Parmesan cheese
6 tablespoons butter, melted
FILLING:
1 cup finely chopped onion
1 cup finely chopped sweet red pepper
1 tablespoon olive oil
4 cups assorted chopped fresh mushrooms
3 packages (8 ounces each) cream cheese, softened
1 teaspoon salt
1 teaspoon pepper
1/2 cup sour cream
4 large eggs, room temperature, lightly beaten
12 bacon strips, cooked and crumbled
1 cup crumbled feta cheese
1/2 cup minced fresh parsley
Roasted sliced mushrooms, fresh parsley and additional cooked bacon strips, optional

Steps:

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. , In a small bowl, combine the bread crumbs, Parmesan cheese and butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 10-15 minutes or until golden brown. Cool on a wire rack., Meanwhile, in a large skillet, saute onion and red pepper in oil for 2 minutes. Add mushrooms; cook and stir for 10 minutes or until liquid has evaporated. Set aside to cool., In a large bowl, beat the cream cheese, salt and pepper until light and fluffy. Beat in sour cream. Add eggs; beat on low speed just until combined. Fold in the bacon, feta cheese, parsley and mushroom mixture. Pour into crust. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan., Bake at 350° for 55-65 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., Remove sides of pan. Top with mushrooms, parsley and additional bacon if desired. Serve with crackers.

3 slices bacon
8 crimini mushrooms
1 tablespoon butter
1 tablespoon chopped onion
¾ cup shredded Cheddar cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, dice and set aside.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove mushroom stems. Set aside caps. Chop the stems.
  • In a large saucepan over medium heat, melt the butter. Slowly cook and stir the chopped stems and onion until the onion is soft. Remove from heat.

3 large eggs
2 tablespoons milk
1 1/2 tablespoons unsalted butter
3 strips crisply fried bacon
1 cup baby portobello mushrooms, sliced and cooked
1/4 cup grated gruyere cheese
1 scallion, sliced thin, for garnish

Steps:

  • Crack the eggs into a bowl, add the milk, and beat them well. Melt the butter in a 7-inch nonstick skillet over medium-high heat. Add the eggs and scramble slightly. Allow the eggs to coat the pan and cook evenly. Crumble the bacon into the eggs, add the mushrooms and cheese, and cook for 1 minute. Carefully slide 1 end of the omelet onto a plate while folding the other end over on top, like a taco. Garnish with scallions and serve immediately.

400g penne (or other tube shape) pasta
250g pack chestnut or button mushrooms, wiped clean
8 rashers streaky bacon
4 tbsp pesto (fresh from the chiller cabinet if possible)
200ml carton 50% fat crème fraîche
handful basil leaves

Steps:

  • Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.
  • Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.
  • Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.
