CHINESE BROCCOLI SLAW
This recipe was passed around for years in my Grandmother's beauty salon. She took it to every church supper. It was on the table every Thanksgiving and Christmas.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Melt butter in a microwave-safe bowl in the microwave. Crush the ramen noodles into small pieces; stir the crushed noodles, almonds, and sesame seeds into the butter. Spread the mixture onto a baking sheet.
- Bake in the preheated oven until golden brown and crunchy, 8 to 10 minutes; allow to cool completely.
- Toss together the coleslaw mix and the green onion in a large bowl.
- Whisk together the salad oil, vinegar, sugar, soy sauce, and reserved seasoning packets in a separate bowl; stir the noodle mixture into the dressing. Pour the dressing over the coleslaw mix and toss to coat.

- Break Noodles apart; place in large bowl. Add slaw, onions, sunflower kernels and nuts; mix lightly.

Steps:
- Mix the broccoli slaw, carrots, cucumbers, scallion and cilantro in a medium bowl.
- In a jar, mix the oil, soy sauce, sesame oil, rice vinegar, peanut butter, sugar, salt and pepper. Stir vigorously to mix(or you could mix in a food processor or blender).
- Pour over salad and toss well to mix.
- Enjoy!
CRUNCHY ASIAN BROCCOLI COLESLAW
This is a terrific Asian inspired salad for it's crunch and flavour. It compliments a variety of dinner choices. It's a nice change from a regular salad and it's appealing to all members of the family!( You use 1 85 gram package of ramen chicken noodle soup mix...for some reason this is not recognized in the ingredients....)Hope this helps!!!

- Mix dressing with seasoning packet from the ramen noodle soup mix* I used 1/4cup kraft italian and 1/4 cup of tuscan salad dressing. Mix until smooth.
- Break apart noodles and place in a bowl when you are ready to serve add the slaw, onions, and toasted almonds and seeds. Mix slightly.
- Add dressing mixture toss to coat and serve. Do not do this to far in advance of serving your meal or the noodles will go soggy. This is also no the greatest salad when serving as leftovers due to the fact that the noodles become soggy.

- In a medium mixing bowl, combine the vinegar, sugar, salt and pepper. Drizzle in the oil, whisking as you go, until well mixed and set aside.
- For slaw:.
- Heat a dry medium frying pan over low heat and toast the nuts or seeds for about 1 minute until lightly browned and/or fragrant. Turn off heat and set aside.
- In a large bowl, combine the slaw mix, onions, nuts or seeds, cranberries and ramen noodles. Drizzle with dressing and toss until well coated. Refrigerate until serving.

- Cook bacon in a large skillet or on a griddle over medium heat until browned and crisp. Drain on paper towels. Crumble into 1/2" pieces; set aside.
- Cut florets from broccoli stems and chop into small pieces. Transfer to a salad bowl and toss with minced onion and raisins.
- In a small bowl, whisk together mayonnaise and vinegar until smooth. Add honey, salt and pepper, whisking to combine. Pour dressing over broccoli mixture and toss to coat evenly. Crumble bacon pieces over broccoli slaw and serve immediately.

ASIAN BROCCOLI SLAW
Asian Broccoli Slaw This is very easy to make and quite satisfying to eat. Nice and crunchy. I am going to try adding cooked chicken breast next time I fix it. I think it will taste like Chinese Chicken Salad.

Steps:
- Combine the cider vinegar, brown sugar, oil and one packet of the seasoning mix from the ramen noodles and let sit while preparing noodles.
- Crush the ramen noodles by placing in zip-lock bag and roll with rolling pin or anything that will work - this is very easy to do.
- "Lightly" brown the noodles and the slivered almonds in frying pan with two tablespoons of olive or canola oil - do not scorch - take off heat and cool.
- Place broccoli in large bowl and pour cooled noodles over broccoli with sunflower seeds and other ingredients. This gets better the longer it sits but still good when it is freshly made.
- Garnish with green onions.
