It doesn't get much better than my mum's Irish Apple Cake recipe - authentically Irish with tart Granny Smith apples and a streusel topping.

3/4 cup (3 ¾oz/105g) all-purpose flour
1/4 cup (¾oz/21g) rolled oats
1/2 cup (4oz/115g) sugar
1/16 teaspoon salt
6 tablespoons (3oz/85g) butter
1/2 cup (4oz/115g) butter ((at room temperature))
1/2 cup (4oz/115g) sugar
2 teaspoons vanilla extract
2 large eggs
1 1/4 cups (6 1/4oz/177g) all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/8 teaspoon salt
3 tablespoons milk
3 granny smith apples ((peeled and sliced thin))

Steps:

  • Preheat your oven to 350°F (180°C) then butter and line a 9-inch bake pan. Set aside.

**pie crust recipe**
1 1/2 c all-purpose flour
3/4 c cake flour
1/2 tsp salt
1 Tbsp white sugar
1 c butter, unsalted
3 Tbsp shortening
1/4 c sour cream
1/8 tsp lemon juice
** apple filling recipe**
5-6 large apples, granny smith
1/2 c white sugar
2 Tbsp all purpose flour
1/2 Tbsp ground nutmeg
1/8 tsp lemon juice
1 egg beaten

Steps:

  • 1. Wash, peel, core and thinly slice your apples. Squirt just a little lemon juice over apples. Set aside until crust is ready.
  • 2. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie pan.
  • 3. ***MAKING CRUST*** In a large bowl, combine flours, salt and sugar. Cut in butter and shortening until coarse crumbs are formed. Mix in sour cream and lemon juice. Keep mixing until dough forms a ball; dough may be slightly lumpy, this is fine. Wrap dough ball in plastic wrap and allow to chill for 1 hour.
  • 4. Once chilled, take dough out of refrigerator and cut it in half. Put the other half back in the fridge COVERED to keep cold.
  • 5. Roll dough to 1/8 of an inch. Lift dough with rolling pin. Place in pie plate. Trim extra overhanging edges of pie crust.
  • 6. **MAKING APPLE PIE FILLING**
  • 7. To Make Filling: Place apples into pie shell. In a small bowl, combine sugar, flour and nutmeg; mix thoroughly. Sprinkle mixture over apples. Squirt lemon juice over apples. Place pie in refrigerator while top crust is rolled out.
  • 8. Roll out top crust. Remove pie from refrigerator. Brush outer edge of bottom crust with beaten egg.
  • 9. Place second crust on top of pie; crimp pie shell edges together. Brush entire top crust with egg and cut 4 steam slots into it.
  • 10. Bake in a preheated 350 degrees F (175 degrees C) oven for 45 minutes, or until crust is golden and apples are tender . Allow pie to completely cool before serving. Serve warm with whipped cream or vanilla ice cream.

1 recipe pastry for a 9 inch double crust pie
¾ cup white sugar
2 tablespoons all-purpose flour
⅛ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
6 tart apples - peeled, cored and sliced
2 tablespoons butter
2 tablespoons whiskey

Steps:

  • Preheat oven to 450 degrees F (225 degrees C). Fit bottom crust into a 9 inch pie plate.
  • In a small bowl, mix together sugar, flour, salt, cinnamon, and nutmeg. Place sliced apples in a large bowl and sprinkle with sugar mixture. Toss until apples are thoroughly coated. Spoon apples into pan.
  • Dot apples with butter or margarine, then sprinkle with whiskey. Cover with top crust. Seal edges and cut steam vents in top.
  • Bake in preheated oven for 10 minutes. Lower temperature to 350 degrees F (175 degrees C) and bake an additional 40 minutes. Serve warm.
