MULLED WINE
If coziness has a fragrance, it's the aroma of red wine simmering on the stove with citrus and spices (and a little brandy for a bit more zing). Choose a red wine that isn't bone-dry-a little fruitiness is just fine here. I like the inexpensive Zweigelt from Erdenlied for this, which conveniently comes in 1-liter bottles.

Steps:
- Using a peeler, remove the peel in strips from 1 orange then juice the orange. Slice the other orange into rounds and reserve for garnish.
- In a nonreactive saucepan, combine orange peel, juice and the rest of the ingredients. Stir over medium heat until the sugar dissolves, about 2 minutes. Increase the heat to high, bring mixture to a boil, then immediately reduce the heat to low. Simmer gently until flavors meld, about 30 minutes. Strain the mixture, discarding the solids.
- Ladle into cups or mugs. Garnish each with a reserved orange round.

A Manhattan is generally made with rye whiskey. Here we're using its sweeter cousin, bourbon, with a splash of sweet vermouth. You'll see precise measurements. But use this recipe as a guideline, and customize according to your preference.

SPIKED MULLED WINE
Wine-based cocktails require particular attention to balance, so neither the wine nor the spirits overwhelm the flavors. In this seasonal drink from Davio's Northern Italian Steakhouse in New York (where it is called Mull It Over), a pair of unlikely bedfellows, cabernet sauvignon wine and bourbon, are in total harmony, united by the bitter and sweet accents of amaro and cassis. Sip it by the fire.

- Fill a copper Moscow Mule mug or rocks glass with ice cubes. Add the bourbon, amaro, cassis and nutmeg and stir 20 seconds until cold. Top off with wine.
MULLED MANHATTAN
This classic grape-and-grain mixture came to us from Christopher Tunnah, the general manager and beverage director at the Bedford Post in Bedford, N.Y. It's as jolly and red as a Santa suit, and it derives its Dickensian tang from the nutmeg hints in Angostura bitters and the clove-studded orange flavors of orange bitters. Craving seconds is easy.

- Muddle the orange slice in the bottom of a mixing glass. Fill with ice then add the bourbon, Cointreau and bitters, and stir well. Top with the grape juice, pour into a glass and garnish with the orange twist and cherry.
