Lebanese Lentils, Rice and Caramelized Onions (Mujadara) image

1 cup brown or green lentils (not lentils du Puy), sorted for debris and rinsed
1/2 cup extra-virgin olive oil
1 teaspoon cumin seeds
1/2 teaspoon cracked black peppercorns
3 medium red onions, thinly sliced
Kosher salt
3/4 cup basmati rice
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 (1-inch) cinnamon stick
2 tablespoons pine nuts, optional
Squeeze of fresh lemon juice
Greek yogurt, for serving, optional

Steps:

  • Throw the lentils into a medium saucepan. Fill with enough cold water to cover the lentils by about an inch. Bring it to a boil over medium-high heat, then turn down to a simmer and cook until the lentils are tender but not mushy, about 20 minutes. Drain and set aside.
  • Meanwhile, as the lentils cook, grab a large skillet. Pop it over medium-high heat and add the oil. Allow the oil to warm for a minute, then drop in the cumin seeds and cracked peppercorns and cook, shaking the pan once in a while until the cumin seeds darken a touch, about 1 minute.
  • Add the onions, sprinkle with a dash of salt and cook until they turn dark caramel brown, stirring often. This will take about 15 minutes. Splash the onions with a little water if they stick to the bottom of the pan. You'll know they're done both by their deep chestnut color and by the slight crispiness developing on some of the onions.
  • Using a slotted spoon or spatula, remove about half of the onions to a paper towel-lined plate; these are for garnish later. Sprinkle in the ground cumin, cayenne and then add the cinnamon stick; saute about 1 minute.
  • Add the rice and cook, stirring often (but gently so you don't break the rice!) until some rice grains start to brown. Quickly, add the cooked lentils, 3 cups of water and 1 1/2 teaspoons of salt; bring to a boil. Turn the heat down to low so that the pan is at a simmer, cover and cook 30 minutes. The water should be completely evaporated and rice should be tender. (If there's still too much water in the bottom, put the lid back on and cook for another 5 minutes.)
  • Turn off the heat, keep the lid on, and allow the rice to steam undisturbed for about 5 minutes.
  • Meanwhile, toast the pine nuts, if using, in a small skillet over medium-low heat, shaking often, about 5 minutes.
  • Taste the rice for seasoning. Serve with the reserved caramelized onions, toasted pine nuts, if using, and a little squeeze of lemon juice. I also like to serve this with some dollops of Greek yogurt.

There are literally dozens of recipes for mujadara out there-each country, possibly even each family, seems to have its own version.

1/3 cup olive oil
4 or 5 large onions, halved and thinly sliced (use the slicing blade on your food processor, or a mandoline if you have one)
Salt and pepper
N/A freshly ground black pepper
1 1/2 cups brown or green lentils, sorted and rinsed
1 1/4 cups long-grain white rice
Plain yogurt or sour cream, optional, for serving

Steps:

  • 1. Heat the olive oil in a very large nonstick skillet over low heat (if you only have smaller skillets, divide the oil and onions between two). When the oil shimmers, add the onions and cook, stirring frequently, until golden, 15 to 20 minutes. Season with salt and pepper to taste.
  • 2. Meanwhile, bring 4 1/2 cups water to a boil in a large saucepan or small stockpot and add the lentils. Simmer, uncovered, for 20 minutes, then add the rice and half the cooked onions. Season with salt and pepper to taste. Simmer, covered, over very low heat until the lentils and rice are tender, about 20 minutes more. You may need to add more water toward the end; check after 15 minutes. Remove from the heat and let rest, covered, for 5 minutes.
  • 3. While the rice and lentils are cooking, cook the onions remaining in the skillet over low heat, stirring often, until dark brown and nearly crisp, 15 to 20 minutes.
  • 4. Serve hot or at room temperature, with browned onions sprinkled on top. Add a dollop of the yogurt or sour cream if desired.

250g lamb mince (10% fat or lower)
2 large onions (320g), 1 very finely chopped, 1 halved and thinly sliced
1 garlic clove , finely grated
3 tsp ground cumin
1 lemon , half zested and juiced, half cut into four wedges to serve
2 tsp rapeseed oil
200g brown basmati rice
1 tbsp bouillon powder
390g can green lentils , drained
2 tbsp tahini
4 tomatoes , cut into wedges
¼ cucumber (about 150g), sliced
12 Kalamata olives , quartered
1 tbsp chopped mint , plus a few small leaves to serve

Steps:

  • Tip the lamb into a bowl with ¼ of the chopped onion, the garlic, ½ tsp cumin, the lemon zest and some black pepper. Mix well with your hands, then shape into 16 small meatballs. Chill for at least 30 mins.
  • Heat 1 tsp oil in a non-stick frying pan over a medium-high heat. Reserve most of the remaining chopped onion for the salad, then fry the rest for 5 mins until golden. Stir in the remaining cumin, then tip in the rice, bouillon powder, 500ml water and some black pepper. Reduce the heat to a simmer, then cover and cook over a medium heat for 30 mins. Tip in the lentils, cover again and cook for 5-10 mins more until the rice is tender and all the water has been absorbed.
  • Meanwhile, heat the remaining oil in a non-stick pan over a medium-high heat. Add the meatballs and sliced onion, cover and cook for 5 mins. Stir, then cook for 5 mins more until the meatballs are cooked through and the onions are golden. Stir the tahini and lemon juice together with 3-4 tbsp water to make a sauce.
  • Mix all of the salad ingredients with the reserved chopped onion. If you're following our Healthy Diet Plan, divide half of the mujadara between two plates and top with half of the meatballs and onions. Spoon over half of the tahini sauce and serve with half of the salad, two lemon wedges and a few mint leaves. Cover and chill the remaining portions to eat another day. Will keep for two to three days in the fridge.

One-Pot Mujadara With Leeks and Greens image

Cookbooks will tell you that, in the Middle East, mujadara is the essence of comfort food, a humble dish made from pantry staples. To that I will add how easy it is to make. The only part that needs some attention is the frying of the onions (or in this case, leeks). To get them crisp, you have to cook them until they are deeply brown and darker than you might be comfortable with. But without the deep color, you don't get the crunch. Just make sure to take them off the heat before they burn. You want the majority to be mahogany, not black (though a few black strands would be O.K.).

I grew up eating this- usually every Friday, because my family doesn't eat meat on Fridays. Its so good, I personally consider it comfort food. Its healthy, simple, and full of fiber! I often eat leftovers in a sandwich with veggies. Goes well with olives, pita bread, raw onion, celery, carrots, lettuce.

1 medium onion, diced (you can use more if you like, I do)
2 tablespoons olive oil
1 cup brown rice (I use Uncle Ben's)
1 cup brown lentils
4 cups water (approximately)
1/2 teaspoon salt (you can use more or less)

Steps:

  • Heat oil in pan.
  • add onions, and cook on medium high heat until they are brown- stir occasionally.
  • stir in rice and lentils, mix in with onions.
  • add water.
  • add salt, mix contents.
  • cover and simmer.
  • This will take over an hour. The water will be absorbed into rice and lentils. Make sure they are soft. Sometimes you may need to add a little more water. Stir occasionally.
  • Best if served in a shallow bowl, and let sit for 10 minutes or so. Enjoy warm or cold.

Mujadara is one of the most popular dishes across the Levant, with a complex taste that belies its simple ingredients. The mix of contrasting tastes - sweet onions with savory hearty lentils, tender bulgur with crunchy fried onions - is a feast for the tastebuds. The dish is quite forgiving as there is no right or wrong texture. Some people prefer it fluffy like a pilaf while others prefer it more dense, like sticky rice. This version falls somewhere in the middle. Since lentils and bulgur absorb different amounts of liquid depending on variety, check on them periodically, taste and add water as necessary while cooking. The finished dish is equally delicious warm or at room temperature. It is wholesome on its own, but combined with yogurt and served with a chopped salad, bread and olives, it becomes a most satisfying meal.

1 cup whole lentils (black, le Puy, brown or green), picked over and rinsed
1/2 cup olive oil
3 medium yellow onions, finely diced
1 teaspoon fine sea salt
1/2 teaspoon ground cumin
1 cup coarse bulgur
Vegetable oil, for frying
1 large yellow onion
1 teaspoon cornstarch

Steps:

  • Make the mujadara: Bring lentils and 4 cups of water to a boil in a medium pot over high. Reduce heat to low and simmer until lentils are partly cooked, 12 to 18 minutes. Taste a lentil to see if it's tender but still has a bite. The timing depends on the lentil variety: Black and le Puy need the most time; green needs the least. Remove from heat.
  • Meanwhile, heat the olive oil in a medium frying pan over medium-high. Add the onions and cook, stirring regularly, until deep golden brown and starting to crisp, 15 to 20 minutes. It is important to get them to this point because dark onions give mujadara its distinctive dark color and flavor. Onions go from deep brown to burned very quickly, so be sure to remove from the heat before they burn.
  • Pour the onions with the oil over the lentils, and stir in the salt and cumin. Add the bulgur, bring the mixture to a boil, then reduce heat to lowest setting and simmer, covered, until fully cooked, 10 to 15 minutes. Check on the mujadara periodically: If the bulgur and lentils are not fully cooked but the water has evaporated, add a few tablespoons of water and continue to cook until done. Place a tea towel or paper towels under the lid and let sit for 15 minutes.
  • If you are making the optional topping, prepare it while the mujadara rests: Heat about 1 inch vegetable oil in a small saucepan over medium to 350 degrees or until a small morsel of bread bubbles and immediately rises to the top. Cut the onion in half and slice through the core to create very thin crescents. Place onions in a medium bowl, sprinkle with the cornstarch and toss to combine. Working in small batches, carefully add to hot oil and fry, stirring occasionally for even browning, until crisp and golden brown, 1 to 2 minutes. Remove with a slotted spoon and drain on paper towels until dry and crispy, about 2 minutes.
  • To serve, transfer mujadara to a serving platter and top with crispy onions, if using.

1/4 cup extra-virgin olive oil

1 cup bulgur
1 1/2 teaspoons ground cumin

1/8 to 1/4 teaspoon cayenne
1 bay leaf
1 cinnamon stick

Steps:

  • 1. Prepare bulgur according to instructions (I use Bob's red mill). 2. In large pot or dutch oven sauté onions in olive oil until crisp. Add minced garlic for the last 2 minutes. 3. Add lentils 3 cups of water , 2 teaspoons salt, bay leaf and cinnamon stick, cumin, cayenne and allspice. Bring to a simmer. Cover and cook over low heat for 15- 20 minutes. 4. When most of the water is absorbed into the lentils and they are soft but firm add the just prepared bulgur (it should still be warm) to the lentils mix and let sit covered until the water is absorbed. 5. Adjust salt and pepper if desired 6. Just before serving add some high quality olive oil for taste and texture. 7.Can be served at room temperature or warm

1 cucumber
1 Tbls lemon juice
chopped fresh mint

Hot sauce
¼ cup of greek yogurt
1-2 Tbls of thai chili paste

Steps:

  • To make the hot sauce Combine yogurt and chili paste, set aside To make the lentils and rice Cover the lentils with water and cook until tender. In another pot sauté the chopped medium onion in 1 Tbls of olive oil until translucent then add the rice, cumin, cinnamon stick, all spice, tsp of and stock. Bring to a boil and then lower to a simmer until the rice is cooked through. Once the rice is finished mix the lentils in and keep warm To make the crispy onion garnish. Slice the 2 Large onions heat the remaining 3 tbls of olive oil in a sauté pan large enough to accommodate all the sliced onions adding a little salt as they saute. When the onions go in they should sizzle. Saute the onions on high heat stirring frequently until they turn brown then reduce the heat slightly and continue to cook until they have small dark spots and are crispy To make the salad garnish Combine lemon juice, cucumber, mint and ground sumac in a bowl To serve- Spoon some mujudara on the plate then top with the crispy onions. Serve the salad and yogurt hot sauce on the side.

  • Saute onion in oil until caramelized (about 50 minutes).

SEARED DAURADE WITH MUJADARA



Seared Daurade With Mujadara image

Mujadara, an Israeli and Middle Eastern mixture of seasoned rice and lentils upholsters a plate of seared fish fillet, brightening it with a generous swath of piquillo pepper puree. Mujadara is often served on its own, topped with a tangle of crisply fried onions, perhaps with yogurt on the side. But here, the earthy combination of grain and bean, with the bittersweet addition of the Spanish peppers, brings the fish into focus. You could serve the mujadara and pepper sauce without the fish, but in that case, fried onions are a must.

1 cup black lentils
1 cup basmati rice
1/2 cup extra virgin olive oil
3 scallions, sliced, white and green parts separated
4 shallots, diced fine, about 3/4 cup
2 teaspoons minced fresh ginger
1 1/2 cups canned piquillo peppers, drained and rinsed to remove any seeds, chopped
2 tablespoons sliced almonds, toasted
2 cups sliced onion
4 cloves garlic, sliced
2 teaspoons sherry vinegar
Salt and ground black pepper
Juice of 1 lemon
6 (6-ounce) fillets daurade, black sea bass or branzino, with skin
2 tablespoons chopped flat-leaf parsley leaves

Steps:

  • Place lentils in a 2-quart saucepan, add 4 cups water, bring to a simmer and cook until tender, about 40 minutes. Set aside. Bring 1 1/2 cups water to a boil in a 3-quart saucepan, add rice, reduce heat to a simmer, cover and cook 12 minutes. Set aside, covered.
  • Heat 4 tablespoons of the olive oil in a medium-size skillet, add white part of scallions, the shallots and ginger. Cook gently until tender and lightly browned, 6 to 8 minutes. Fold into the rice, then fold in 1/2 cup of the piquillo peppers and the almonds. Cover.
  • Heat 2 tablespoons of the olive oil in the skillet, add the onion and garlic, cook gently until tender but not brown, about 5 minutes. Stir in the remaining piquillo peppers and cook another couple of minutes. Puree this mixture in a food processor. Fold in the vinegar and season with salt and pepper. Return to the skillet and set aside.
  • To assemble the mujadara, fold the cooked lentils into the rice mixture. Add in the lemon juice and season to taste with salt and pepper. Gently stir in the green of the scallions and place over low heat, covered, to warm. Place the skillet with the piquillo pepper sauce over low heat.
  • Pat the fish dry and season with salt and pepper. Heat one or two cast-iron skillets, large enough to hold the fish with a little room to spare, until very hot. Add the remaining 2 tablespoons olive oil, sear the fish on the skin side and cook about 3 minutes, turn and cook another 2 minutes, until just done.
  • Spread a big circle of the piquillo pepper sauce on each of 6 dinner plates or one large platter. Divide the mujadara rice and lentil mixture among them, or in the middle of the platter. Top the mujadara with the fish, skin side up, add the parsley and serve.

1 c chopped nuts (cashews work well but mixed nuts are also good)
1 c brown or green lentils (not de Puy)
2 large onions (sweet onions work well)
2 1/4 t salt
1/3 - 1/2 c olive oil
2 cloves garlic, pressed
3/4 c long grain white rice
1 1/2 t ground cumin
1/2 t ground allspice
1/4 t cayenne
1 bay leaf, torn in half
1 cinnamon stick
4 c trimmed and chopped greens, e.g. chard, spinach, kale

Steps:

  • 1. Toast chopped nuts. 2. Place lentils in bowl and add warm tap water to cover by 1". Let soak. 3. Slice onions very thin. 4. Heat olive oil in Dutch oven over medium-high heat. Add onion slices and fry, stirring occasionally, until golden and crispy, about 10 minutes. Set aside 1/2 the onions, drain on paper towels, and salt liberally while onions are still hot. 5. Stir garlic into pot with remaining onions and cook for 15 seconds until fragrant. 6. Stir in rice and sauté a couple minute until rice is translucent. Add cumin, allspice and cayenne; sauté 30 seconds. 7. Drain lentils and stir into pot. Add 4 1/4 c water, 2 t salt, bay leaf and cinnamon stick. Bring to simmer. Cover and cook over low heat for 15 minutes. 8. Rinse greens. Spread damp greens over lentil mixture; cover and cook 5 minutes, until rice and lentils are tender, and green are wilted. Remove from heat and let stand, covered, for 5 minutes more. 9. Serve topped with crispy onions and toasted nuts, and hot sauce if desired.
