If you can use home made muesli/granola, because some of the bought mueslis can be very sweet.I sometimes add some dried cranberries, about a tablespoon.

1/2 cup butter
1/3 cup demerara sugar
1 tablespoon golden syrup or 1 tablespoon light corn syrup
1 cup self-rising flour
2 cups breakfast muesli
1 teaspoon baking soda

Steps:

  • Preheat oven to 325 degrees F.
  • Lightly grease one or two baking sheets.
  • Put butter, sugar and syrup in a pan and heat gently until the butter is melted Measure all the other ingredients in a large bowl and add the melted mixture, stir until well blended.
  • Spoon teaspoonfuls on the baking sheet (s), making sure you give them room to spread Bake them for approx 15 minutes.
  • Leave them to cool on the baking sheet for a few moments, lift them of with a metal spatula and let them cool completely on a cake rack.

Really nice muesli cookies. I like that I can put in variety of dry fruits and muesli. They are perfect for lunch box, on the go or enjoy with cup of tea.

185 g butter, melted, cooled
1 cup muesli, your choice
1 cup desiccated coconut
1 tablespoon sesame seeds
1 cup quick oats
150 g self-raising flour
120 g caster sugar
1 tablespoon honey
1 egg
1 tablespoon wheat germ or 1 tablespoon natural bran
1/4 cup dried fruit (cranberry, raisins, apricots, apples...chopped)

Steps:

  • Preheat oven to 170°C.
  • Line cookie sheets with baking paper or spray it.
  • In a large bowl mix all dry ingredients.
  • Add melted butter, honey, beaten egg. Mix well.
  • Mixture will be quiet dry and crumbly. That is OK.
  • Make a small balls and flatten slightly.
  • Bake for 15-20 minutes.

500 g butter
460 g sugar (White)
300 g golden syrup
2 teaspoons baking soda
550 g all-purpose flour
550 g rolled oats
2 cups pumpkin seeds
2 cups sunflower seeds
2 cups chopped dried apricots
2 cups threaded coconut or 2 cups flaked coconut

Steps:

  • Bring butter, sugar, and syrup to the boil add soda mix until frothy.
  • Mix flour, oats, pumpkin seeds,sunflower seeds, apricots, and coconut.
  • Add hot mixture to dry ingredients.
  • Mix all and roll into 60 g cookies.work quickly with the mixture as it will harden as it cools.
  • bake 160 c for approx 20 mins when cooled completely store in airtight container, they keep very well and are extremely moorish, to make different add chopped Glace Ginger, I sell loads of these.
