Grandma's Sweet Potato Crunch (Also Called Sweet Potato Souffle) image

My grandma did not like marshmallows on her sweet potatoes, but she would make it half and half for the kids. When she would make this for the holidays there was always a little Maker's Mark in it, but you can also leave the bourbon out if you don't have any on hand. I make mine just like she always did, and I still sneak into the fridge with a spoon and go after these potatoes! This recipe makes enough for about 6-8 people, but we usually double it since it's so good cold.

3 large sweet potatoes
1/4 cup butter, room temperature
2 eggs, beaten
1/3 cup evaporated milk
1 teaspoon vanilla, good vanilla
1/2 cup sugar
1/4 cup Bourbon (optional)
cooking spray
1/3 cup butter, melted and cooled
1 cup light brown sugar
1/2 cup flour
1 cup pecans, chopped
mini marshmallows (optional)

Steps:

  • Bake the sweet potatoes at 350 degrees until tender, approx 45 minutes - 1 hour. Remove the outer skins of the potatoes and mash them.
  • Combine potatoes and the remaining ingredients with a mixer.
  • NOTE: If you make this ahead of time, do not add the bourbon until you are ready to bake. I have made that mistake once, and the bourbon taste gets STRONG and overpowers the potatoes!
  • Spread into a sprayed baking dish. I use a 2 1/2 quart round Corningware dish.
  • For the topping: Mix all ingredients together except for the marshmallows. Spread the topping in an even layer over the potatoes.
  • Sprinkle the marshmallows on top if you are using them. I don't like them, so I leave them off.
  • Bake at 350 degrees for 30-45 minutes, or until the top gets brown and crunchy.

4 teaspoons sugar, divided
1 (12 ounce) sweet potatoes, peeled and cubed
1 teaspoon lemon juice
1/2-3/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 tablespoon butter or 1 tablespoon margarine
4 teaspoons flour
1/2 cup milk
2 eggs, separated
1/4 cup miniature marshmallow

Steps:

  • Preheat oven to 350°F
  • Grease two 2-cup souffle dishes or custard cups and sprinkle each with 1/2 a teaspoon of sugar; set aside.
  • Place the sweet potato in a saucepan; cover with water.
  • Cover and cook until tender, about 10-15 minutes; drain well.
  • Mash lemon juice, salt, and nutmeg into the sweet potatoes. You should have about 1 cup.
  • Set aside to cool.
  • In another saucepan, melt butter; stir in flour and 3 teaspoons sugar until smooth.
  • Gradually add milk; cook and stir until thickened and bubbly.
  • Remove from the heat.
  • In a small bowl, beat egg yolks; stir in mashed potato and milk/butter mixture.
  • In another bowl, beat egg whites until stiff peaks form; gently fold into potato mixture.
  • Divide and spoon into prepared dishes; top with marshmallows.
  • Bake, uncovered for 35-38 minutes or until a knife inserted in the center comes out clean.
  • Serve immediately.

6 sweet potatoes
1 cup white sugar
½ cup milk
½ cup melted butter
1 teaspoon vanilla extract
2 eggs, beaten
½ teaspoon salt
1 cup dark brown sugar
⅓ cup all-purpose flour
⅓ cup melted butter
1 cup chopped pecans

Steps:

  • In a large stockpot, cover sweet potatoes with 1 inch of water; boil for 20 minutes, or until fork tender. Drain, allow to cool and remove skins.
  • Preheat oven to 350 degrees F (175 degrees C). Grease or butter one 2 quart casserole dish.
  • Place potatoes in a mixing bowl and with an electric mixer, beat on low speed until potatoes begin to break up. Increase speed to medium high and blend until smooth.
  • Reduce speed to low and add sugar, milk, butter, vanilla, eggs and salt. Mix well.
  • Allow any potato 'fibers' to remain on the beater and remove. Pour sweet potato mixture into the casserole dish.
  • Prepare the topping in a small bowl by whisking together the brown sugar, flour, butter and pecans. Sprinkle mixture over potato mixture and bake for 40 minutes.

2 eggs
3 -4 large sweet potatoes, cooked and mashed

This is one of my go-tos for Thanksgiving...the Gruyere cheese makes a wonderful nutty flavored crust and cuts down on the sweetness of most sweet potato casseroles. It can also be made a day ahead and then baked right before serving. Featured in the Dec 2006 Edition of Food and Wine magazine. Delish!

3 lbs large sweet potatoes
6 tablespoons unsalted butter, softened
1/2 cup heavy cream
1/2 cup shredded gruyere cheese
2 tablespoons light brown sugar
1 teaspoon chopped thyme
salt
fresh ground pepper
3 large eggs

Steps:

  • Preheat the oven to 350°F Bake the sweet potatoes for 90 minutes or until tender. Raise oven temperature to 425°F.
  • Peel the sweet potatoes as soon as they are cool enough to handle; transfer to a bowl. Using an hand held electric mixer, beat the sweet potatoes with the butter until smooth. Beat in the cream, Gruyere, brown sugar, and thyme; season with salt and pepper. Beat in the eggs one at a time, beating well after each addition.
  • Transfer the sweet potato puree to a buttered 8 by 10 inch baking dish and bake for 15 minutes. Reduce the oven temperature to 400 degrees and bake for 30 minutes longer or until the sweet potatoes are lightly puffed and browned. Let the sweet potato souffle rest for 10 minutes before serving.
  • TO MAKE AHEAD: The recipe can be prepared through Step 2; refrigerate overnight. Let come to room temperature before baking.

5 -6 baked peeled and mashed sweet potatoes
1 cup sugar
1 teaspoon salt
1/2 cup butter
4 eggs
1 cup evaporated milk
2 teaspoons vanilla
1 cup brown sugar
1/2 cup flour
1 cup chopped pecans
1/2 cup melted butter
1/3 cup coconut

Steps:

  • Bake sweet potatoes in oven until soft 1 to 1 1/2 hours at 350°F Pierce with fork to test.
  • Peel then mash with egg beater.
  • Mix in each ingredient separately except for eggs and beat after each addition until light and fluffy.
  • Separate the egg whites and yolks; throw away the yolks.
  • In a separate bowl, whip the egg whites until they have medium peaks (the peaks should lean at about 45 degrees.).
  • Pour the egg whites into the heavier base custard.
  • Mix by lightly pushing down and pulling the custard up and over the egg whites using a sweeping "S" motion as you work.
  • Pour into 15x10-inch Pyrex pan or two 9x13-inch.
  • Mix topping ingredients together and sprinkle over sweet potatoes.
  • Bake at 325°F for 25 minutes.
  • This will puff up so don't have the pans too full.
  • This freezes very well. If you use yams it is much dryer than using sweet potatoes.
  • Full recipe serves 15.

Sweet Potato Souffles image

It's a universal fact that people love puffy food, souffles being one of most versatile. As long as you don't knock all the air out of the egg whites in the batter, not much can actually go wrong. Since mashed sweet potato is the base, these souffles are even easier than the traditional method that requires a saucy base. They'll deflate quickly after exiting the oven, so hurry and snap those photos! Serve with cayenne-seasoned maple syrup if you like.

2 orange-fleshed sweet potatoes
4 large eggs, at room temperature
2 teaspoons butter, at room temperature
¼ cup milk
1 teaspoon kosher salt, or to taste
1 pinch cayenne pepper
4 fried sage leaves

Steps:

  • Place sweet potatoes on a microwave-safe plate. Prick sweet potatoes with the tip of a knife. Microwave until very soft, about 10 minutes. Let cool briefly until safe to handle.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Halve sweet potatoes and scoop flesh out into a bowl.
  • Separate egg whites and yolks into individual mixing bowls. Generously butter four 5-ounce ramekins.
  • Transfer 1 cup mashed sweet potato to the bowl of egg yolks. Pour in milk. Season with salt and cayenne. Whisk until smooth, slowly at first and faster once mixture starts to come together.
  • Add a pinch of salt to the egg whites. Beat with a clean whisk until peaks are well-defined but still soft. Transfer 1/2 of the egg whites to the sweet potato mixture. Fold in with a spatula somewhat gently until most of the white streaks disappear. Add the remaining egg whites and fold in very gently, turning the bowl and scraping the sides, until whites are mostly blended in; a few streaks should still be visible.
  • Gently spoon sweet potato mixture into the ramekins.
  • Bake in the preheated oven until fully inflated and browned, about 15 minutes. Garnish with sage. Unmold or serve in ramekins.
