MR. FOOD'S PIZZA PASTA SALAD
From the Mr. Food Website, passed on to me by a co-worker, but adjusted to fit my tastes (decreased oil, decreased cheese). So tasty, you won't believe that it's made from such simple ingredients. Perfect seasonings and done in a flash...even DH couldn't stop commenting on how tasty it was!

Steps:
- Cook pasta to al dente, drain well and transfer to a large bowl.
- While pasta is cooking, whisk oil, vinegar, parmesan cheese, salt, pepper, italian seasoning and garlic powder together in a separate bowl.
- Toss pepperoni halves, diced tomatoes, shredded cheese and diced scallions into the pasta bowl. Add dressing and toss well.
- Refrigerate at least 2 hours before serving.

I love experimenting with cold pasta salads. This one was such a success I kept running back to the fridge to get more, so I think I'll wait a little bit before making another batch. Measurements are a guessing game for me 'cuz I never measure anything (you shouldn't either) and this always turns out killer !

- Cook macaroni al dente, cool under water and drain.
- Mix remaining ingredients using the parmesan and dressing, marinated artichokes last to get the right consistency. I like it a little dry but it is your dish now, ya ?

SUPREME PIZZA PASTA SALAD
This recipe comes straight from Rachel Ray's 30 Minute Meals. It really does taste like a Supreme Pizza. The best part is, you make it the day before you want to serve it and refrigerate. The cook time, is really chill time. I put down 2 hours, but it is really better the next day. NOTE: The original recipe calls for a pound of mozzarella cheese, but I only use 1/2 pound. If you like a lot of cheese...go for a pound!!!!

- Combine tomatoes, onion, mushroon, pepper, pepperoni, mozzarella, basil and pasta in a large bowl.
- Whisk all dressing ingredients, except olive oil together.
- Slowly add olive oil while whisking.
- When oil is incorporated in dressing, pour over pasta salad and toss to coat evenly.
