This is the rolled cabbage casserole-type recipe with a little different flavoring than I've seen before. Mr. Food says this recipe is "So-o good" and I am putting it here so I can find it to try for myself!

Number Of Ingredients 10

1 1/4 lbs ground beef
1/2 cup bread, crumbs unseasoned
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 medium head of cabbage, shredded (12-14 cups)
1 (16 ounce) can cranberry sauce (jelled or whole berry)
5 gingersnap cookies, crumbled (1/4 cup crumbs)
1 tablespoon lemon juice
1 (28 ounce) jar spaghetti sauce

Steps:

  • In a bowl, combine the ground beef, bread crumbs, egg, salt and pepper. Form into 1-inch balls (1 tablespoon each).
  • Place 1/2 of cabbage in a soup pot. Add the meatballs. Spread the cranberry sauce over and sprinkle with the gingersnap crumbs and lemon juice. Add remaining cabbage. Pour the spaghetti sauce over all. Do NOT stir.
  • Bring to a boil. Reduce heat and simmer, uncovered, 20 minutes. Stir gently. You do not want to break up the meatballs. Simmer 40 more minutes, stirring halfway.

Here is one of my favorite ways to cook and enjoy cabbage. It has all the good flavor of regular cabbage rolls, but it's a lot less bother to make. In fact, it's a one-pot meal! -Mrs. Bernard Snow, Lewiston, Michigan

TOMATO SAUCE:
1 large onion, chopped
1 medium head cabbage, coarsely chopped (about 8 cups)
1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup water
1/4 cup lemon juice
1/3 cup raisins
MEATBALLS:
1/2 cup uncooked long grain rice
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground beef (90% lean)

Steps:

  • In a large skillet, combine sauce ingredients. Bring to a boil; reduce heat and simmer. , Meanwhile, in a large bowl, combine the rice, Worcestershire sauce, salt and pepper. Crumble beef over rice mixture; mix lightly but thoroughly. Shape into 36 balls, about 1-1/4 in. in diameter. Add to simmering sauce. , Cover and simmer about 45 minutes or until the cabbage is tender. Uncover and cook for 15 minutes longer or until sauce is thickened.
