20 grape tomatoes
10 ounces mozzarella cheese, cubed
2 tablespoons extra virgin olive oil
2 tablespoons fresh basil leaves, chopped
1 pinch salt
1 pinch ground black pepper
20 toothpicks

Steps:

  • Toss tomatoes, mozzarella cheese, olive oil, basil, salt, and pepper together in a bowl until well coated. Skewer one tomato and one piece of mozzarella cheese on each toothpick.

4 ounces fresh mozzarella cheese (small balls, if available)
16 grape tomatoes
16 kalamata olives, pitted
2 tablespoons extra virgin olive oil
1 teaspoon minced garlic
1/4 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon pepper
1 dash crushed red pepper flakes
32 small fresh basil leaves (plus additional for garnish-optional)
16 wooden skewers (4"-6-inch)

Steps:

  • Cut the mozzarella into bite sized pieces. If you are lucky enough to find the small balls, keep them whole. Place in a medium bowl and stir in the tomatoes, olives, oil, garlic, thyme, salt, pepper and red pepper. Cover and refrigerate 1-3 hours.
  • If basil leaves are large, cut into smaller pieces.
  • Thread the marinated cheese, tomatoes and olives onto skewers, placing the basil leaves inbetween. Place skewers on a platter; garnish with additional fresh basil. Enjoy!

Marinated Mozzarella, Olives and Cherry Tomatoes image

This simple dish of marinated cherry tomatoes, olives and mozzarella is best, of course, when cherry tomatoes are in season. That it gets better as it sits is a boon: Bring it to potlucks or picnics, or simply let it sit in your refrigerator, a satisfying lunch at home. A generous handful of basil leaves, sprinkled atop just before serving, gives everything a bright, herbal finish. You'll want to make this all summer long.

1 pound cherry or grape tomatoes, a mixture of colors, halved
Salt and black pepper
3/4 cup olives, such as Moroccan or niçoise
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 garlic clove, smashed to a paste
Pinch of dried oregano
Pinch of red-pepper flakes
1 pound fresh mozzarella, cut into ¼-inch slices
Basil leaves, for garnish

Steps:

  • Put cherry tomatoes in a large bowl. Season with salt and pepper. Add the olives and toss.
  • In a small bowl, stir together olive oil, vinegar, garlic, oregano and red-pepper flakes. Pour mixture over tomatoes and olives. Toss well to coat and let sit for at least 10 minutes and up to an hour.
  • When ready to eat, arrange mozzarella in the center of a large platter (or arrange on individual plates). Spoon tomato and olive mixture over mozzarella. Garnish with lots of basil leaves.

30 cherry tomatoes
30 bite-size fresh mozzarella cheese balls, baby pearls
5 fresh basil leaves
12 slices pancetta or 12 slices as a last resort honey-roasted ham
30 toothpicks

Steps:

  • Halve the cherry tomatoes.
  • Pluck leaves from basil and tear into 1 inch pieces.
  • Cut the prosciutto into 2 inch segments.
  • Skewer a tomato half (uncut side first) with a toothpick and slide to the end of the toothpick.
  • Skewer basil, then mozzarella pearl, then basil.
  • Fold 2 inch piece of prosciutto in half and skewer.
  • Take another tomato half and skewer (cut side first).
