4 boneless skinless chicken breasts (1 lb.)
1/2 cup sliced onions
1/2 cup green pepper strips
1 Tbsp. oil
1/3 cup KRAFT Original Barbecue Sauce
4 kaiser rolls, split
4 KRAFT Slim Cut Mozzarella Cheese Slices

Steps:

  • Heat grill to medium-high heat.
  • Grill chicken 8 min. Meanwhile, cook and stir vegetables in hot oil in large skillet on medium heat 5 min. or until crisp-tender. Remove from heat; cover to keep warm.
  • Turn chicken; brush with barbecue sauce. Grill 7 to 9 min. or until chicken is done (165°F), turning and brushing occasionally with remaining sauce and adding rolls, cut sides down, to the grill for the last few minutes.
  • Fill rolls with chicken, cheese and vegetables.

Roasted Red Pepper, Chicken & Mozzarella Sandwich image

2 tablespoons Mayonnaise
1 tablespoon Pesto
1 piece Baguette, Ciabetta or foccacia bread, halved horizontally
1/4 pound Cooked Chicken
1 slice Prociutto
1 piece Roasted Red Peppers, jarred or homemade
1 pieces Sliced Low Moisture Mozzarella
2 pieces Arugula, spinach or basil leaves
1/4 teaspoon Salt or pepper to taste

Steps:

  • 1. Stir together the mayonnaise and pesto. Spread the bottom half of the loaf with the pesto-mayonnaise mixture. Add a layer of chicken, followed by prosciutto, red peppers, mozzarella, and arugula. Season with salt and pepper.
  • 2. Wrap the sandwich in aluminum foil and toast in a toaster oven or warm oven until cheese is melted. Slice in half crosswise and serve.

1/4 c (about 2 oz) sun-dried tomato pesto (such as Classico)
2 T fat-free mayonnaise
3/4 pound skinless, boneless chicken breasts
1/4 t pepper
1/8 t salt
1 t olive oil
1 (8 oz) loaf ciabatta
12 large basil leaves
3/4 c (3 oz) shredded part-skim mozzarella cheese
1/2 c sliced bottled roasted red bell peppers
1 large tomato, thinly sliced

Steps:

  • 1. Combine pesto and mayonnaise in a small bowl, stirring to blend. 2. Sprinkle chicken with pepper and salt. Heat oil in a lart nonstick skillet over medium-high heat. Add chicken, and cook for 3 minutes on each side or until done. Remove chicken to cutting board, and cool slightly. Cut chicken lengthwise into thin slices. 3. Preheat broiler. 4. Cut ciabatta in half horizontally. Place bread, cut sides up, on a baking sheet. Broil 3 minutes or until lightly browned. Remove bread from pan. Spread pesto mixture evenly over cut sides of bread. Arrange the chicken slices evenly over bottom half. Top chicken evenly with basil leaves, and sprinkle cheese over top. Place bottom half on baking sheet, and broil 2 minutes or until cheese melts. Arrange bell pepper and tomato over cheese, and cover with top half of bread. Cut into 4 equal pieces.
