This cake is made simply with cake mix, pudding mix, eggs, oil, and good ol' Mountain Dew® and features a pineapple topping.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, combine cake mix, pudding mix, oil, eggs and citrus soda. Mix until all ingredients are moistened.
- Pour into prepared 9x13 inch pan and bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool completely.
- To make the topping: In a saucepan, combine pineapple (with juice), sugar and corn starch. Bring to a boil and cook, stirring constantly, until thick. Remove from heat. Add butter and coconut. Spread topping evenly over cake.

- Preheat oven to 325° Spray a 12 to 15 cup fluted pan with nonstick baking spray with flour.
- In a large bowl, combine cake mix and pudding mix. Add soda, oil, and eggs. Beat at medium speed with an electric mixer until smooth.
- Pour batter into prepared pan, and bake for 45 to 50 minutes, or until a wooden pick inserted in center comes out clean.
- Let cool in pan for 10 minutes. Remove from pan and let cool completely on a wire rack.

MOD'S MOUNTAIN DEW CAKE (RCDC)
I wanted to make this because of my boyfriend and one of our very nice mutual friends, Doug (Mod), who are basically Mountain Dew addicts. Soda cakes perplexed me at first, but they turn out to be very yummy. Doug claimed if I started making this, he'd lock me in his basement doomed to make cakes forever and that my boyfriend would never see me again! This recipe is very Mountian Dew-yum! Nicknamed the Really Cool Dew Cake (RCDC). I don't like many other recipes of this simply because they have a lot of lemon or pineapple or coconut and it detracts from the Mountain Dew...which of course is the main point for my boys. It even has a Mountian Dew glaze.. If you'd rather ice (or do both!), that's okay too. See my Pineapple icing recipe (#187414) for that!

- Preheat oven to 350 degrees F (175 degrees C).
- Grease and flour a 9x13 inch pan or a tube pan.
- In a large bowl, combine cake mix, pudding mix, oil, eggs and Dew. Mix until all ingredients are moistened.
- Pour into prepared 9x13 inch pan and bake for 30 too 35 minutes. Or in a tube pan for 45 minutes.
- Cool completely.
- Mix together glaze ingredients in a saucepan and bring to a boil on the stove.
- Continue boiling for two minutes.
- Pour glaze onto cake while glaze is still hot.
- Let cool before flipping onto platter.

- 1. Pre-heat the oven to 350 F
- 2. In a medium bowl, add cake mix, oil, pudding mix and eggs. Mix to combine.
- 3. Add the Mountain Dew; beat with electric mixer on medium speed for 2 or 3 minutes.
- 4. Pour batter into prepared bundt cake pan (sprayed with cooking spray with flour.) My handwritten recipe suggested a bundt pan but I really prefer to use a 9 x 13 cake pan.
- 5. Bake for 35 to 40 minutes or until a toothpick inserted in the cake comes out clean.
- 6. In a medium saucepan, combine sugar, pineapple and cornstarch. Stir and cook until thick.
- 7. Remove from heat and add butter and coconut. Stir to combine well. Slowly pour hot icing over cake.

- 1. Preheat the oven to 375 degrees F. Be sure that your 10 inch tube pan is clean and dry. Any amount of oil or anything could cause the cake not to rise. Sift together the flour, and 3/4 cup of the sugar, set aside.
- 2. In a large bowl, whip the egg whites along with the vanilla, cream of tartar and salt, to medium stiff peaks. Gradually add the remaining sugar while continuing to whip to stiff peaks.
- 3. When the egg white mixture has reached its maximum volume, FOLD, DON'T MIX in the sifted ingredients gradually, one third at a time. DO NOT OVER MIX . Put the batter into the tube pan.
- 4. Bake for 40 to 45 minutes in the preheated oven, until the cake springs back when touched. Balance the tube pan upside down on the top of a bottle, to prevent decompression while cooling. When cool, run a knife around the edge of the pan and invert onto a plate.
- 5. While the Cake cools, Mix together 3/4c Powdered Sugar, with enough Mountain Dew to form a glaze that will fall like a Ribbon when mixed together
- 6. Pour Glaze over the cake, And Enjoy immediately :)

- Grease and line a Bundt pan with chopped pecans.
- Mix all cake ingredients together; pour into bundt pan.
- Bake at 350 degrees for 40-50 minutes or until cake is done. Take out of oven and poke holes all over it.(I like to use a wooden skewer).
- In a saucepan bring all icing ingredients together and boil for two minutes. Pour over cake. Immediently turn cake onto plate.
- Do not let the cake set in the bundt pan after adding the icing to it. It will not come out or it will fall apart.
