Butter, for greasing the pan
8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

2 tablespoons vegetable oil, lard or bacon fat, plus oil or fat for greasing casserole
1 large onion
2 fresh jalapeno peppers, chopped and minced
1 teaspoon ground cumin
1 cup chopped fresh or canned plum tomatoes
2 cups cubed cooked chicken
1 recipe hominy with red chilies
Salt
3 ounces Monterey Jack cheese, shredded or slivered

Steps:

  • Grease an eight-quart oven-proof casserole. Preheat oven to 350 degrees.
  • Heat the oil or fat in a heavy four-quart saucepan. Add the onion and saute over medium-low heat until golden. Stir in the jalapeno peppers and the cumin and saute another few minutes. Stir in the tomatoes and cook five minutes longer. Add the chicken and bring to a simmer.
  • Stir in cooked hominy with red chilies and cook till mixture simmers again. Season to taste with salt.
  • Spoon the mixture into the casserole. Top with the cheese. Bake in the oven about 30 minutes, until the casserole is bubbling and the cheese has melted and is beginning to brown. Serve at once. If desired, the casserole can be prepared in advance and set aside to be baked later. If it is not simmering just before being put in the oven, increase the baking time to about 45 minutes.

My grandmother used to make this recipe. She got it from a ladies cookbook in Lubbock, Texas. My mom made it, and now I make it. It is a family favorite!

2 (14 ounce) cans yellow hominy, drained
1 cup grated cheddar cheese
1 (4 ounce) can chopped green chilies, drained
1 (8 ounce) carton sour cream
1 small onion, chopped
salt, to taste
pepper, to taste

Steps:

  • Mix all ingredients except the cheese.
  • Pour into 8 or 9" baking dish.
  • Sprinkle grated cheddar cheese on top.
  • Bake at 350 degrees for 25 minutes or until cheese is thoroughly melted and sides of casserole are bubbling.

1 medium onion, chopped
1 tablespoon canola oil
1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

One of mom's Alabama recipes from her grandma . Grandma made it with a roux and mushrooms ,mom used cream of mushroom soup both ways are good.

3 Tbsp bacon grease or butter
1/4 c chopped onions
1/2 c diced green bell peppers
15 oz can hominy, drained and rinsed
10 oz can mushroom soup
1/2 can(s) (soup can) milk
1/2 tsp dry mustard
1/3 c black olives, chopped, optional
s&p to taste
1 c mild cheddar cheese,shredded
1 small can fried onion rings or use crushed potato chips

Steps:

  • 1. Heat oven to 325^. Grease a 2 quart casserole and set aside. Add the bacon grease in a medium saucepan heat to melt over medium heat . Add the onion and pepper and sauce until tender; about 2 minutes; then add the soup, milk and hominy to the pan with the mixture. Stir to combine.
  • 2. Now add the mustard, olives, and salt and pepper to taste. stir to combine. In the prepared casserole layer 1/2 the hominy mixture, 1/2 the grated cheese, and 1/2 of the onions rings or crushed potato chips. Repeat layering and end with the onion rings or crushed potato chips on top. Bake for 30 minutes, or until bubbly and heated through.
  • 3. Grandma's: Instead of the mushroom soup. 1/2 cup chopped mushrooms 1/4 cup chopped onions 1/2 cup diced bell pepper Sauté in 3 tablespoons of bacon grease then add 3 Tablespoon of flour and the 1/2 cup milk and dry mustard, salt and pepper; Stirring until well blended and thickened. Remaining recipe the same.

1 large onion, Finely Diced
4 (14 1/2 ounce) cans white hominy, Drained
2 (4 ounce) cans diced green chilies
1 cup grated sharp cheddar cheese
1 whole jalapeno, Seeded And Finely Diced
extra cheddar cheese
bacon, And
chile, For garnish

Steps:

  • Fry the bacon until almost crisp; remove from skillet and drain all but a couple of tablespoons bacon grease. Crumble the bacon and set aside.
  • Add onion to skillet and cook for a couple of minutes. Pour in hominy and stir for a couple of minute until warm. Add cheese, chilies, jalapenos (if using), and bacon and stir until cheese is melted. Remove from heat.
  • Pour mixture into a large baking pan and sprinkle with a little more cheese, bacon, and green chilies, if desired.
  • Bake at 350 for 15 minutes, or until hot and heated through.

This is a recipe from The Grange Cookbook I got in the 70's. When our daughter was a toddler, she tried to flush it down the toilet! When she went out on her own, I gave her the cookbook along with my very first one my dad gave me. It is very versatile. I'm listing the original recipe, but through the years I have added different things to it, such as left over squash casserole, Velveeta instead of cheddar, soy sauce, or beef bouillon to make a soup rather than a casserole. I serve it with tortilla chips.

1 tablespoon flour
16 ounces diced tomatoes (1 can)
1 teaspoon chili powder
2 1/2 cups hominy, drained (1 can)
1 onion, medium, chopped

The taste and texture of this dish is subtle and unusual but my BF and I think it's absolutely delicious. My apologies if you haven't found this as appealing as we do. The recipe comes from a fantastic cookbook of the midwestern region (of the U.S.) called "Hollyhocks and Radishes." The original ingredients call for 2 cups cream instead of milk and twice the butter, so if you don't mind the extra fat, go ahead. I also like to add more horseradish, at least 1 tablespoon. In my area hominy can be found in the mexican foods section of the supermarket.

2 teaspoons prepared horseradish
2 (15 ounce) cans hominy, drained

1 can Ro-Tel tomatoes

2 Tbsp olive oil
1 onion, minced
1 can(s) (4 oz.) chopped green chiles, drained
2 clove garlic, minced
1 tsp ground cumin
2 can(s) (15 oz.ea.) white hominy, drained and rinsed
1/2 tsp salt
1/4 tsp pepper
1 c sour cream
1 c shredded cheddar cheese

Steps:

  • 1. Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 to 7 minutes.
  • 2. Stir in the chiles, garlic, and cumin and cook until fragrant, about 30 seconds.
  • 3. Add the hominy, salt and pepper and cook until the hominy is heated through, 3 to 5 minutes. Remove from heat and stir in sour cream and 3/4 cup of the cheese.
  • 4. Transfer the mixture to a greased 8-inch square baking dish. Sprinkle the remaining 1/4 cup cheese over the top.
  • 5. Place the baking dish on a foil-lined rimmed sheet and bake in a preheated 350º oven until the sauce is bubbling and the cheese is melted, about 20 minutes. Cool for 10 minutes before serving.
