MOM'S CHOCOLATE MERINGUE PIE

This pie features a homemade chocolate custard, and is topped with meringue.

Number Of Ingredients 11

¾ cup white sugar
5 tablespoons unsweetened cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
2 cups milk
3 egg yolks, beaten
1 teaspoon vanilla extract
1 (9 inch) pie crust, baked
3 egg whites
¼ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Mix together sugar, cocoa, corn starch and salt in a medium saucepan. Gradually mix in milk. Cook and stir over medium high heat until thickened and bubbly. Reduce heat to medium low; cook and stir 2 minutes more. Remove pan from heat. Stir about one cup of the hot filling into the egg yolks; mix back into the custard. Return saucepan to heat, and bring to a gentle boil. Cook and stir for 2 minutes. Remove from the heat, and stir in vanilla. Pour hot filing into crust.
  • In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually beat in sugar, and continue to beat until stiff and glossy. Spread evenly over hot filling, sealing meringue to crust.
  • Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes, or until golden.

This recipe was given to me by a very dear friend. You want homemade chocolate pie? You can't go wrong with this it is from scratch and remarkable.

Number Of Ingredients 8

6 Tbsp cocoa
1 c sugar
2-1/2 can(s) whole milk or 1 can canned milk remaining with regular milk
4 egg yolks - save whites if you're making meringue
4 Tbsp flour
1/2 tsp salt
2 tsp vanilla (i use real vanilla)
4 Tbsp butter

Steps:

  • 1. In large kettle mix cocoa, sugar, salt and flour and whisk together.
  • 2. In separate bowl whisk together egg yolks and milk. Add egg/milk mixture to your kettle and put on stove over medium heat.
  • 3. Bring mixture to a boil whisking "constantly" and continue to cook, while whisking, until thickens and bubbly all over. Take off the burner and stir in butter and vanilla.
  • 4. Once the butter has melted your chocolate pudding is ready to put into your crust. You can then top with meringue or cool and cover with whipped cream.

This chocolate pie is not only a Southern traditional dish, but my mom has to make 2 to take to church lunches. Most people go back for dessert only to find all the pie gone - the smart ones get their piece on the first trip through. This is pie is also served as "birthday cake" on most everyone's special day. And the only way to top it off is with a piled-high meringue!

1 cup sugar
3 tablespoons all-purpose flour
3 tablespoons cocoa
1 dash salt
1 1/2 cups milk
2 egg yolks (reserve whites for meringue)
1 tablespoon butter
1 (9 inch) pie crusts, baked

Steps:

  • Combine all ingredients except butter in a saucepan.
  • Cook over medium heat until thick like pudding, stirring constantly to prevent scorching and lumping.
  • When mixture becomes thick, remove from heat and add butter; stir to combine.
  • If lumping does occur, beat filling with a whip.
  • Pour into pie shell.
  • Make meringue according to your favorite recipe and top pie, sealing the edges with the meringue.
  • Bake to brown meringue.
  • Best if allowed to cool to lukewarm or room temperature.

1 (9 inch) pie shell, baked
¼ cup butter
1 ¼ cups white sugar
2 tablespoons unsweetened cocoa powder
3 tablespoons all-purpose flour
2 egg yolks
1 cup milk
½ teaspoon vanilla extract
2 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a cast iron skillet over medium low heat, melt the butter.
  • Combine one cup of the sugar with cocoa and flour. Beat the egg yolks with the milk and add them to the sugar mixture.
  • Add the sugar and egg mixture to the skillet with the melted butter or margarine and cook gently, stirring constantly until thick. (Watch this mixture closely as it has a tendency to burn)! Add the vanilla. Pour the mixture into the baked crust.
  • Beat the egg whites until soft peaks form; add the remaining 1/4 cup sugar and beat until meringue is glossy and stiff peaks form. Spread beaten egg whites over the hot filling be sure the whites touch the edges of the crust. Bake in the preheated oven for 10 to 15 minutes (or until the meringue is golden brown).

Dough for single-crust pie
3/4 cup sugar
5 tablespoons baking cocoa
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, room temperature, beaten
1 teaspoon vanilla extract
3 large egg whites, room temperature
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°., In a saucepan, mix sugar, cocoa, cornstarch and salt; gradually add milk. Cook and stir over medium-high heat until thickened and bubbly. Gradually add sugar and continue to beat until stiff and glossy. Spread evenly over hot filling, sealing meringue to pie crust. Bake until meringue is golden brown, 12-15 minutes. Cool 1 hour on a wire rack. Refrigerate at least 4 hours before serving.

This is a delicious chocolate pie that I remember my mother making from the time I could remember such things. I'm sure she made up the recipe herself.

  • Cook sugar, salt, milk, cocoa, flour, and egg yolks in double boiler until thick.
  • Add vanilla and butter. Pour into baked pie crust.
  • Most of the time, Mother made a meringue from the egg whites and browned the pie in the oven. Later in life, she used either real whipped cream or Cool Whip instead, and I liked that just as much. Easier!
