Steps:
- Heat oven to 350.
- In a medium bowl blend thoroughly butter, brown sugar and flour with a fork until mixture resembles coarse crumbs.
- Put 1 cup of the mixture aside for topping.
- Press remaining mixture into an 8x8x2 inch baking dish sprayed lightly with cooking spray; bake for 15 minutes.
- In another bowl combine sugar and cream cheese, mixing until smooth.
- Thoroughly beat in egg, milk, lemon juice and vanilla.
- Spread over the baked crust and sprinkle with remaining brown sugar mixture.
- Bake for 25 minutes.
- Let cool, then chill for at least 1 hour.
- Cut into 16 squares; serve.
CHEESECAKE COOKIES
Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Combine flour, sugar, cream cheese, butter, eggs, baking powder, vanilla, and salt in a bowl until a dough forms.
- Drop rounded tablespoons of dough 2 inches apart onto cookie sheets.
- Bake in the preheated oven until bottoms are very lightly golden brown and tops are just about to turn color, 10 to 14 minutes. Let cool for at least 10 minutes. Sprinkle with powdered sugar.

MOTHER IN LAW COOKIES
This is a recipe I came up with because I dreamed up my mother in law asking for oatmeal cookies with no cinnamon and almond extract. I made the cookies and they taste great, even if it was a request I had imagined up lol

Steps:
- 1. Preheat oven to 350.
- 2. Cream butter, sugar, eggs, almond extract together until creamy.
- 3. Whisk together flour and soda, stir into butter mixture
- 4. Stir in oats.
- 5. Drop by tablespoon onto cookie sheet.I use a small ice cream scopp because I am OCD and like them to all be exactly the same size and shape. :)
- 6. Bake for about 10-12 minutes. I like mine chewey, so I underbake slightly.
- 7. Let cool for a few minutes and then place on rack to cool. Let cookie sheet cool for 10-15 minutes between batches, or the cookies get flat and thin.
MOTHER-IN- LAW'S CHEESECAKE COOKIES
My late mil used to make these...they are so easy and just taste delish! Can be frozen, just make sure to put them in something that will keep them flat & seal them well. When you want to serve, put in fridge a while to thaw.

- 1. Preheat oven to 350°F. Mix crust ingredients together. Reserve 1 cup for topping. Press remaining mixture in bottom of 8" square pan. Bake 15 minutes. Remove from oven and top with cheesecake mixture.
- 2. In medium bowl, blend all the cheesecake ingredients together, mixing well (I use my KA hand mixer). Spoon over baked crust, then sprinkle with reserved crust mixture. Bake 15 minutes longer.
- 3. I have doubled this recipe and baked in a 13"x9"x2" pan without any problem. Crust baking time increases by about 5 minutes, with filling, it's about 10 minutes more in my elec oven...you may have to adjust time in your own oven.
