MOROCCAN-SPICED LAMB BURGERS WITH BEET, RED ONION, AND ORANGE SALSA



Moroccan-Spiced Lamb Burgers with Beet, Red Onion, and Orange Salsa image

Number Of Ingredients 22

Salsa
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon honey
2 beets, boiled, peeled, cut into 1/3-inch cubes
1 large orange, peel and pith cut away, flesh cut into 1/3-inch cubes
1 cup chopped red onion
1/4 cup chopped pitted green Greek olives
Burgers
1 large shallot, minced
2 tablespoons chopped fresh cilantro
1 jalapeño chile, seeded, minced
1 garlic clove, minced
1 1/4 teaspoons salt
3/4 teaspoon ground black pepper
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1 3/4 pounds ground lamb
Nonstick vegetable oil spray
4 large cracked-wheat hamburger buns, split horizontally
1 1/3 cups thinly sliced Bibb lettuce
Mayonnaise

Steps:

  • For salsa:
  • Whisk first 3 ingredients in medium bowl to blend. Mix in next 4 ingredients. Season salsa to taste with salt and pepper.
  • Do ahead: Can be made 8 hours ahead. Cover and chill.
  • For burgers:
  • Stir shallot, cilantro, jalapeño, garlic, salt, black pepper, paprika, and cumin in large bowl to blend. Add lamb and mix gently to combine. Shape mixture into four 1/2-inch-thick patties. Arrange on small baking sheet.
  • Do ahead: Can be made 8 hours ahead. Cover and chill.
  • Spray grill rack with nonstick spray and prepare barbecue (medium-high heat). Grill buns, cut side down, until golden, about 2 minutes; transfer to work surface. Place lettuce and large spoonful of salsa on each bun bottom. Grill burgers until slightly charred and cooked to desired doneness, about 4 minutes per side for medium-rare. Place 1 burger on each bun. Top each with mayonnaise and bun top. Serve with remaining salsa.

SEA BASS WITH MOROCCAN SALSA

3 medium-size red bell peppers
5 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 cup chopped pitted Kalamata olives or other brine-cured black olives
1/2 cup chopped red onion
1/3 cup chopped fresh cilantro
1/4 cup golden raisins
3 tablespoons fresh lemon juice
2 tablespoons (packed) chopped fresh mint
2 teaspoons grated orange peel
1/2 teaspoon (scant) cayenne
6 6-ounce sea bass fillets

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides, turning frequently with tongs. Transfer peppers to medium bowl. Cover with foil; let stand 10 minutes. Peel, seed and coarsely chop peppers; return to same bowl.
  • Heat 1 tablespoon oil in heavy small skillet over medium heat. Add cumin and cinnamon; stir until fragrant, about 1 minute. Pour oil mixture over peppers. Mix in olives, next 7 ingredients and 2 tablespoons oil. Season salsa with salt and pepper. (Can be made 2 hours ahead. Cover; let stand at room temperature, tossing occasionally.)
  • Preheat broiler. Brush fish all over with 2 tablespoons oil. Sprinkle with salt and pepper. Broil until fish is opaque in center, about 2 1/2 minutes per side. Transfer fish to plates. Spoon salsa over.

This is in response to a recipe request. I can get matbucha from my local supermarket any day, but now that I have a recipe it should be simple to make it myself, and alter it to my tastes.

5 red bell peppers
5 ripe tomatoes
3 cloves garlic, minced
1 lemon
sea salt
2 -3 teaspoons olive oil

Steps:

  • Grill or flame-roast the peppers and tomatoes.
  • If you don't have a grill available, roast the peppers and tomatoes in the oven.
  • After removing from the flame or heat source, place them in a paper bag and seal.
  • After 5-10 minutes, the skins will peel off easily.
  • Peel and seed peppers and tomatoes.
  • Slice and chop into small cubes.
  • Add garlic to vegetables and mix.
  • Squeeze lemon juice and drizzle oil over salad.
  • Stir.
  • Salt to taste.
  • Refrigerate.
  • Serve cold.

  • Preheat oven to 450º.

This is a great way to prepare salmon. The salsa adds a great touch, providing the entire dish a sweet and spicy element.

1 large mango, peeled and chopped (1 1/2 cups)
1 small sweet red pepper (or red bell pepper), diced
2 Tbsp finely chopped red onion
1 tsp ground ginger (optional)
2 Tbsp chopped fresh mint
2 Tbsp orange juice
1 1/2 tsp harissa (a hot red pepper sauce)
4 large salmon fillets, skinned (about 1 1/2 lb total)
1/4 tsp salt

Steps:

  • 1. Preheat oven to 450ºF.
  • 2. Combine chopped mango, red pepper, onion, ginger (if using), mint and orange juice in a bowl. Cover and store in refrigerator until ready to use.
  • 3. Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
