Another recipe I stumbled across & fell in love with on a search for something else. My recipe source is "The New Enchanted Broccoli Forest" by Mollie Katzen. Recipes w/10 min prep times always get my attention (esp ones w/flavor combos like this one!) & the serving method sounded like so much fun to do w/your family or at a dinner party w/friends. :-)

6 large oranges
1 tablespoon honey
1/2 teaspoon cinnamon
1 lb mixed salad green (clean, dry & chill)
1/2 small red onion (thinly sliced)
10 radishes (thinly sliced)
6 tablespoons extra virgin olive oil
salt (to taste)
black pepper (to taste, freshly ground)
1 cup walnuts (toasted & chopped)

Steps:

  • Peel & section oranges using a sharp paring knife or serrated knife. (To do this, 1st cut off the polar ends of the peel & then slice the peel off the sides. W/a gentle sawing motion, cut in 1 side of the membrane & out the other, releasing ea orange section in a bowl. Squeeze all excess juice from the remaining membrane into the bowl as well & pick out seeds, if necessary.) Discard membrane.
  • Drizzle honey & sprinkle cinnamon into the orange slices. Stir gently to mix, cover & set aside till serving time.
  • Just b4 serving, toss greens in a lrg bowl w/onion, radishes & olive oil. Season to taste w/salt & freshly ground pepper.
  • TO SERVE: Bring orange sections, tossed greens & walnuts to the table in separate containers. Let ea person assemble his or her own salad by piling some greens on a plate, spooning over some oranges-au-jus & sprinkling a few walnuts on top.

3 -4 oranges, peeled and sliced
romaine leaf, washed and dried (optional)
1 tablespoon lemon juice
2 tablespoons fresh orange juice
3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
8 dates, sliced lengthwise
1/2 cup blanched slivered almonds or 1/2 cup blanched almond, chopped

Steps:

  • In a small bowl combine lemon and orange juices, confectioners' sugar, extract and cinnamon.
  • Arrange lettuce leaves on a serving plate. Layer oranges decoratively onto plate. Spoon juice/sugar mixture over the oranges and sprinkle with almonds and fresh dates. Chill until serving.

3 large seedless oranges
1/8 teaspoon cayenne
1 teaspoon paprika
1/2 teaspoon garlic
3 tablespoons olive oil
1 tablespoon red-wine or sherry vinegar
Salt
Freshly ground black pepper
1/3 cup chopped parsley
12 pitted black olives, preferably imported Greek or Italian

Steps:

  • Peel the oranges, paring away all the exterior white pulp. Cut each orange into 8 wedges. Cut each wedge into 1-inch pieces. Set aside.
  • Place the cayenne, paprika, garlic, olive oil and vinegar in a salad bowl. Add salt and pepper to taste and whisk to combine. Add the oranges, parsley and olives. Toss gently to blend. Serve cold or at room temperature.

vegetable oil cooking spray
3 tablespoons sugar, for top
3 tablespoons orange juice, from can
2 cups walnuts, chopped large
1/2 teaspoon ground cinnamon
2 heads butter lettuce, washed and dried
16 ounces mandarin orange segments, 2 cans
1/2 red onion, very thinly sliced
2 avocados, chopped
2 tomatoes, chopped large
1 cup asian-style dressing (such as miso dressing or ginger dressing)

Steps:

  • Preheat oven to 375 degrees F.
  • Line a large cookie sheet with foil and spray with nonstick spray. In a 10-inch skillet over medium heat, add 6 tablespoons sugar and mandarine orange juice. Bring to a simmer, and then add walnuts. Cook until sugar is absorbed and mixture starts to caramelize around walnuts, stirring constantly, about 2 minutes.
  • In a small bowl, mix cinnamon and remaining 3 tablespoons sugar. Toss walnuts in cinnamon-sugar. Place walnuts in single layer on prepared cookie sheet. Bake until walnuts appear crystallized and toasted, about 8 minutes. Set aside
  • Chop lettace. Mix all ingredients together.
  • Drizzle 2 tablespoons of dressing on top of each salad and serve.

1/2 teaspoon cinnamon

1 1/2 cups chopped pitted dates
1/3 cup granulated sugar
1/4 cup lemon juice
