"My best friend made this refreshing salad for lunch one hot summer day," says Nikki Gaines of Covington, Georgia. "It was so good, I just had to have the recipe. Now I make it every chance I get. It's always a hit at picnics and church brunches."

1 can (11 ounces) mandarin oranges
1/4 cup plus 2 tablespoons mayonnaise
1-1/2 cups seedless grapes, halved
2 small apples, chopped
2 small bananas, sliced
1/3 cup sweetened shredded coconut
1/3 cup chopped walnuts
1/4 cup maraschino cherries, halved
1/4 cup raisins

Steps:

  • Drain oranges, reserving 4-1/2 teaspoons juice (discard remaining juice or save for another use). In a small bowl, combine mayonnaise and reserved juice. , In a large bowl, combine the oranges, grapes, apples, bananas, coconut, walnuts, cherries and raisins. Divide among serving dishes; drizzle with mayonnaise mixture. Serve immediately.

1 (16-ounce) container fresh pineapple wedges, diced
16 ounces frozen mango chunks, thawed
1 (15-ounce) can lychee fruit, drained
1 (15-ounce) container fresh red grapefruit segments, drained
3/4 cup fat-free vanilla yogurt
2 teaspoons key lime juice (recommended: Nellie and Joe's)
1 pinch cayenne pepper
1/2 cup fresh raspberries

Steps:

  • In a medium bowl, combine pineapple, mango, lychee, and grapefruit segments; set aside.
  • In a small bowl, stir to combine yogurt, key lime juice, and cayenne; set aside.
  • Divide mixed fruit into chilled bowls. Spoon over yogurt mixture and garnish with fresh raspberries.

1 (14 ounce) can blueberries
1 (14 ounce) can blackberries
1 (14 ounce) can of queen ann cherries
1 (14 ounce) can gooseberries

  • Mix together, chill and serve.
