This easy Applesauce Bread recipe is healthier than most quick breads and is so moist and flavorful from the unsweetened applesauce, Greek yogurt, and the perfect blend of spices.

1/2 cup oil ((vegetable oil, canola oil, melted coconut oil, or melted butter))
3/4 cup granulated sugar
1/4 cup light brown sugar (packed)
2 large eggs
1 cup unsweetened applesauce
1/4 cup Greek yogurt
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 Tablespoon ground cinnamon
1 teaspoon ground nutmeg
pinch salt (optional and to taste)

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom of a 9X5-inch loaf pan with parchment paper. Lightly grease the insides of the pan with cooking spray.
  • In a large bowl, whisk together oil, granulated sugar and brown sugar. Add the eggs, whisking until smooth. Add the applesauce, vanilla, and Greek yogurt and mix until well-combined
  • Add the flours, baking soda, baking powder, cinnamon, nutmeg and salt and stir just until combined; don't over-mix the batter.
  • Pour the batter into prepared loaf pan and spread into an even layer.
  • Bake for 45-55 minutes or until a toothpick inserted near the center comes out clean or with just moist crumbs.
  • Remove from oven. Run a knife gently around the side of the pan and then remove bread onto a cooling rack.

1 loaf white bread
16 ounces cream cheese
1 cup blueberries
1 cup strawberry
1 cup raspberries
12 eggs
2 cups milk
1/3 cup honey
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Trim crusts off the bread and cut into cubes.
  • Cut cream cheese into i/2 inch cubes.
  • Spray a 13x9 inch baking pan with non stick baking spray.
  • Arrange 1/2 of bread cubes in the bottom of the pan.
  • Top with 1/2 of the cream cheese cubes, mixing the layers somewhat (you do not want smooth layers).
  • Mix all berries together and pour on top.
  • Top with remaining cream cheese and then ending with remaining bread cubes.
  • In large bowl beat together remaining ingredients.
  • Pour entire mixture on top.
  • This can be frozen as is or baked at 350 degrees for 30 minutes and then frozen. Be sure to wrap and label before freezing.
  • To reheat:
  • from raw: thaw in fridge overnight then bake as directed above.
  • from baked: cover with oven proof lid and bake at 375 degrees for 30-45 minutes or until completely warmed through.
  • Serve with your favourite syrup.

1-1/2 cups unsweetened applesauce
1 egg
1 cup sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup raisins
1 cup chopped walnuts

Steps:

  • In a bowl, combine the first five ingredients. Combine flour, baking soda, cinnamon, cloves and nutmeg. Add to applesauce mixture; mix well. Stir in the raisins and walnuts. Pour into two greased 8x4-in. loaf pans. Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

4 1/2 cups seasoned croutons
2 cups shredded cheddar cheese
1 medium onion, chopped
1/4 cup chopped sweet red pepper
1/4 cup chopped green pepper
1 (4 1/2 ounce) can sliced mushrooms, drained
8 eggs
4 cups milk
1 teaspoon salt
1 teaspoon ground mustard
1/8 teaspoon pepper
8 slices cooked bacon, crumbled

Steps:

  • Sprinkle croutons, cheese, onion, peppers and mushrooms into two greased 8-in. square baking dishes. In a bowl, combine the eggs, milk, salt, mustard and pepper. Slowly pour over vegetables. Sprinkle with bacon.
  • Cover and freeze one casserole for up to 3 months.
  • Bake the second casserole, uncovered, at 350° for 45-50 minutes or until a knife inserted near the center comes out clean.

This bread freezes delightfully, if you slice it and wrap pieces it's fantastic to grab in the morning going out of the door. To have at night as a snack, or to pull out for tea with friends :). I hate nuts.. but you could add 1 1/2 cups walnuts or pecans if desired. EDIT:When I wrote this I failed to see how I'd missed the "simple" steps. I have a kitchenaid stand mixer with one of those pour in spouts. I drop my wet stuff in the bowl, put on the spout, put the arm down and put it on mix. I just drop in the dry as it mixes. I think it really takes me like 10 minutes max, to actually make this, and that's with the putting stuff in the bowl and adding the attachment. One poster said she'd had problems with a "baking powder taste", just try cutting it back. Cut your recipe in half and try 1 loaf, if you still have the problem, cut the powder back by 1/8th of a tsp.

4 cups white flour
1 teaspoon salt
4 eggs
4 teaspoons baking powder
1 cup butter (soft room temp. or it doesn't blend right)
3 cups banana pulp (mashed ripe banana's)
2 cups sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla

Steps:

  • Put butter, eggs, vanilla, sugar and banana's into a large bowl and blend with an electric mixer.
  • Add flour, cinnamon, salt and baking powder, cinnamon and vanilla.
  • Beat for 1-2 minutes with the electric mixer until well blended.
  • If using fold in nuts at this point.
  • Pour into two sprayed or greased 9x5x3" loaf pans.
  • Bake at 325 for 1 hour and 30 minutes.
  • Remove, cool in pan for 5 minutes. Then on racks for 20 minutes. You must must must NOT let it cool too long, I wrap it when it's barely cool enough to handle. The longer it cools the more moisture it will lose.
  • Using a large knife (I use a large butcher knife) carefully slice into portions, then wrap very tightly with plastic wrap.
  • Freeze.
  • To reheat for a quick bite in the morning, microwave for 1.30 to 2 minutes.
