1 cup butter
2 1/4 cups flour
5 -6 tablespoons cold water
1/2 cup butter
1 cup chopped celery
1/2 cup chopped onion
1/4 cup flour
2 vegetarian vegetable bouillon cubes
3 cups milk
1 cup frozen soybeans
1 cup cooked broccoli
1 cup cooked potato
1/2 cup cooked carrot
2 cups cooked white pearl onions
1 teaspoon thyme leaves
1/2 teaspoon pepper

Steps:

  • Make the dough:.
  • Crumble salt, flour, and butter.
  • Add water one tablespoon at a time.
  • Stir lightly until dough clings in a ball.
  • Roll with rolling pin to make dough for 2 pies.
  • Cook the Vegetables:
  • Ahead of time, boil the pearl onions, carrots, potatoes, and broccoli until they are not quite fully cooked.
  • Make the filling:.
  • Sauté celery and chopped onions with butter.
  • Add flour to make a paste.
  • Add milk and boullion.
  • Cook until thickened.
  • Add cooked vegetables, frozen vegetables, and spices.
  • Put the filling in the pie crusts and put the tops on the pies.
  • Bake 20-25 min at 375 degrees.

1/4 cup diced tomato
1/3 cup mayonnaise
1 tablespoon chopped scallion
1 teaspoon prepared horseradish
1 teaspoon cider vinegar
1/2 teaspoon salt
1 1/2 teaspoons ground black pepper
1 dash hot pepper sauce
1 teaspoon tomato paste (optional)
8 slices bread or 8 slices toasted rye bread
1 cup drained sauerkraut
1 1/2 cups grated swiss cheese
3 tablespoons olive oil
2 garlic cloves, minced
1 dash salt and pepper
4 portabella mushrooms, rinsed and dried (about 8 oz.)

Steps:

  • To cook portabellos:.
  • Preheat the oven to 400°F or turn on broiler.
  • Combine the oil, garlic, salt, and peper in a small bowl and set aside.
  • Remove the stems from the portabellos and slice the caps into 1/2 to 3/4 inch thick slices.
  • Brush the slices with the oil mixture and arrange at least 1 inch apart on a baking sheet.
  • To roast, bake on one side for 4 to 8 minutes, then turn with a spatula and bake for 4 to 8 minutes more, until tender and juicy.
  • To broil cook for 3 to 5 minutes, turn with a spatula, and cook for 3 to 5 minutes on the other side.
  • Sandwich:.
  • Preheat oven to 400*F.
  • Combine all of the dressing ingredients in a blender or food processor and puree until smooth and creamy.
  • Spread Russian Dressing on 4 slices of bread and place plain side down on a baking pan.
  • Layer each slice with 1/4 of the portabello slices, 1/4 cup of the sauerkraut, and a generous 1/3 cup of the cheese.
  • Top each sandwich with a second slice of bread spread with dressing, and bake for about 4 minutes, until the cheese melts.
  • Serve immediately.

Basic Skillet Black Beans image

From "Moosewood Restaurant: New Classics" (C: 2001). Serve it on rice, polenta, or grits, topped with salsa, grated cheese or sour cream and chopped fresh cilantro. You may also embellish with garlic, ground fennel, thyme, chili powder, chiles, chipotles, or cayenne. Can use beans a filling for tacos.

2 teaspoons olive oil
1 1/2 cups onions, diced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 cup salsa or 1 cup tomato juice
3 cups black beans, cooked (two 15-ounce cans, rinsed & drained)

Steps:

  • In a covered skillet, heat the oil on medium high heat. Add the onions and sauté for 5 minutes, stirring frequently. Add the cumin and coriander and stir for a minute to toast the spices.
  • Add the salsa or tomato juice, stir well and cover; simmer until the onions are soft (about 5 minutes). Add the black beans and simmer until slightly thickened (about 5 minutes). If you like, mash a few times with potato masher. May finish with chopped fresh cilantro.
  • OPTIONAL ADD-INS: corn, bell peppers, carrots, celery, squash.

Good vegan holiday or potluck dish. My favorite recipe from my friends the Farley's. I would always request this dish when we would get together and I'm so happy to have the recipe! Always got rave reviews at potlucks we'd attend when my friends brought this dish. Enjoy!

2 cups potatoes, diced small
1 1/2 cups carrots, diced small
1/2 small onion, chopped
16 ounces frozen peas (can use green beans instead if you prefer)
1 cup seitan (gluten steaks or any other kind of mock meat can be used. My favorite is Worthington FriChik, but I ) or 1 cup textured vegetable protein (my favorite is Worthington FriChik, but I believe it has egg in it so its not vegan only vegetarian)
2 tablespoons flour
2 tablespoons oil
2 cups soymilk
2 teaspoons vegetable stock
1 cup whole wheat flour
1 cup unbleached white flour
1 teaspoon salt
1/2 cup oil
1/2 cup water

Steps:

  • Steam potatoes, carrots, and onion until tender.
  • Add vegetable protein and peas. Mix lightly.
  • Place this mixture in a casserole dish and set aside.
  • Combine Cream Sauce ingredients in a bowl.
  • Pour Cream Sauce ingredients into a saucepan and cook on low to medium heat, stirring constantly until thickened.
  • Pour Cream Sauce over vegetables in casserole dish.
  • Start pie crust by mixing whole wheat flour, unbleached white flour and salt together in a bowl.
  • Blend together oil and water and then add this liquid mixture to the dry mixture (flours and salt). Stir.
  • Roll out between two sheets of wax paper.
  • Cover vegetables and cream sauce in casserole dish with pie crust.
  • Bake in the oven, 424-450 degrees F, for 20 minutes or until nicely browned.

NO-FAULT PUMPKIN PIE

From the Moosewood Cookbook with no variation. Our family has a controversy about 'pumpkin' pie vs. 'punkin' pie. This recipe comes closest to the PUNKIN pie my father remembers from childhood. I imagine it's the hint of molasses that makes the difference.

3 cups pumpkin puree
3/4 cup honey
2 tablespoons molasses
1/4 teaspoon ground cloves
3 teaspoons cinnamon
1 1/2 teaspoons ginger

4 eggs, slightly beaten
1 (12 ounce) can evaporated milk

Steps:

  • Mix in order given.
  • Pour into whole wheat pie shell and bake 10 minutes at 450, then 40 minutes at 350, or till set.
  • Variation: for a delicious pmpkin pudding, omit pie shell. Bake filling in buttered baking dish and serve with vanilla ice cream or heavy cream.
