2 cups chopped cooked ham
1 tablespoon vegetable oil
3 cups chicken broth
1 (16 ounce) package frozen chopped turnip greens
1 (10 ounce) package diced frozen bell peppers onions and celery (red and green peppers)
1 teaspoon sugar
1 teaspoon seasoned pepper

Steps:

  • Saute ham in hot oil in a Dutch ovenover medium high heat 5 minutes or until lightly browned. Add broth and reamining ingredients, bring to a boil. Cover, reduce heat to low, and simmer, stirring occasionally, 25 minutes.

PERSIAN SPLIT PEA AND BARLEY STEW

1/2 cup raw barley
1 bay leaf
1 garlic clove
4 cups water
1 cup dried split yellow peas
1/2 teaspoon cinnamon
1 teaspoon ground cardamom
1 cup onion, chopped
1 cup carrot, peeled and cut in 1 inch chunks
2 cups potatoes, cut in 1 inch chunks
1 1/2 teaspoons salt
1 pinch cayenne
2 cups vegetable broth
2 cups tomatoes, coarsely chopped
1/4 cup fresh parsley, chopped
1 lemon, juice of
salt and pepper

Steps:

  • In a medium saucepan, bring the barley, bay leaf, garlic and 2 cups of water to a boil.
  • Reduce the heat, cover and simmer for 15 minutes.
  • Add the split peas, cardamom, cinnamon and the remaining water and simmer, covered for another 45 minutes, or until the barley and split peas are soft and most of the liquid has absorbed.
  • Stir occasionally and, if necessary, add a small amount of additional water to prevent the mixture from sticking.
  • While the barley and split peas are cooking, place the onions, carrots, potatoes, salt, cayenne, and stock in a large saucepan.
  • Bring the mixture to a boil, reduce the heat and simmer, covered for 10 minutes.
  • Stir in the tomatoes and continue to simmer, covered, for about 10 minutes, until the vegetables are tender.
  • Add the cooked barley and split peas. Stir in the parsley, lemon juice, and salt and pepper to taste. Discard the bay leaf.

2 cups chopped onions
2 tablespoons peanut oil or 2 tablespoons vegetable oil
1/2 teaspoon cayenne pepper
1 teaspoon garlic, pressed
2 cups chopped cabbage
3 cups cubed sweet potatoes (1-inch cubes)
3 cups tomato juice
1 cup apple juice or 1 cup apricot juice
1 teaspoon salt
1 teaspoon grated peeled gingerroot, fresh
1 tablespoon chopped cilantro, fresh (optional)
2 chopped tomatoes
1 1/2-2 cups chopped okra
1/2 cup natural-style peanut butter

Steps:

  • Sauté the onions in the oil for about 10 minutes. Stir in the cayenne and garlic and sauté for a couple more minutes. Add the cabbage and sweet potatoes and sauté, covered for a few minutes. Mix in the juices, salt, ginger, cilantro, and tomatoes. Cover and simmer for about 15 minutes, until the sweet potatoes are tender. Add the okra and simmer for 5 minutes more. Stir in the peanut butter, place the pan on a heat diffuser, and simmer gently until ready to serve. Add more juice or water if the stew is too thick.

MOOSEWOOD MUSHROOM SESAME TOFU STEW



Moosewood Mushroom Sesame Tofu Stew image

This is a satisfying, healthy, cold weather stew recipe from "Moosewood Restaurant Low-Fat Favorites". It's great over rice or with some crusty bread. It's a flexible recipe; feel free o substitute with whatever veggies you have in the fridge. Kale works well. TO PRESS TOFU: Sandwich firm or soft tofu between two plates or baking sheets. Rest a weight (like a heavy book) on top and press for 30 minutes, then drain water.

4 cups chopped onions
1/2 cup water
3 cups sliced celery
4 cups sliced mushrooms (12-ounce package)
2 bay leaves
1 tablespoon grated fresh ginger
2 cups undrained canned whole tomatoes, chopped (18-ounce can)
2 tablespoons tahini or 2 tablespoons peanut butter
1 (12 ounce) package tofu, pressed and cut into bite-sized pieces (see recipe description)
1 dash soy sauce or 1 dash hot sauce, to taste

Steps:

  • In a covered soup pot on high heat, cook the onions in the water, stirring frequently, for 5 minutes. Add the celery and continue to cook, covered, stirring frequently for 5 minutes. Add more water if the vegetables begin to stick. Add the mushrooms, lower the heat, and cook until the mushrooms begin to release their juices, about 5 minutes. Stir in the bay leaves, ginger, and tomatoes and cook for 5 minutes.
  • Stir in the tahini or peanut butter, add the tofu, and simmer on a heat diffuser or on very low heat for a few minutes more. Add salt, soy sauce, or hot sauce to taste; discard the bay leaves and serve.
