This is a wonderful blend of flavors for steak, potatoes or pork. You can also mix 3 tablespoons steak spice with 1/2 cup soy sauce and 1/2 cup of olive oil. Marinate steaks overnight in frig.

2 tablespoons kosher salt
2 tablespoons cracked black pepper
2 tablespoons paprika
1 tablespoon red pepper flakes
1 tablespoon coriander
1 tablespoon dill
1 tablespoon garlic powder
1 tablespoon onion powder

Steps:

  • Combine ingredients in an airtight jar and use within 6 months.
  • Sprinkle on steaks before grilling.

This is a combination of several kopycat recipes I found for "Montreal Steak Spice". I messed with them till I came up with this. Hubby has a Cottonseed Oil alergy which seems to be in many store bought spice mixes which was the driving force for this.

Number Of Ingredients 17

6 tablespoons coriander
1 tablespoon green peppercorn
1 tablespoon red peppercorn
2 tablespoons white peppercorns
2 tablespoons black peppercorns
2 tablespoons cumin seeds
1 1/2 tablespoons yellow mustard seeds
2 tablespoons fenugreek seeds (I use when i can) (optional)
2 -4 dried New Mexico chiles, with seeds (mild)
2 -4 thai dried hot red chili peppers, with seeds #
2 tablespoons dried thyme
2 tablespoons rosemary (rough ground)
2 tablespoons hot paprika
6 tablespoons minced dried garlic (not garlic salt) or 6 tablespoons garlic powder, works in a pinch
2 tablespoons minced dried onion
dried onion flakes, slightly ground
3 tablespoons coarse sea salt, to taste Do not grind (optional)

Steps:

  • ** Note: Substitute 6 Tbls Black peppercorn, depending on what is you have handy or preference.
  • # Note: chilie peppers optional to taste, if you like it hot add more and with seeds
  • Lightly toast each whole spice separately in a dry cast pan until it releases the aroma or starts to brown
  • Then grind each spice separately to a fairly course texture due to the different hardness's of the spices. Some are harder than others and require more time in the grinder. As always, a cheap coffee grinder works great!
  • Combine the newly ground spices and the "Just Add" spices in bowl till cool then put in a jar for storage.
  • Rub on steak half an hour before cooking. The longer it marinades the better. I have added sage and used this on chicken and pork as well.
  • This makes a large mason jar full (1 quart) I make enough to share lol.

Montreal institutions like Gibbys and Moishes have been selling their own classic steak spice for decades. Here's our take on the Montreal steak spice. This is an all-purpose seasoning used in many Montreal-style beef, pork, and steaky fish dishes.

Yield Makes 2 to 3 cups (200 to 300 g), about 60 servings

Number Of Ingredients 10

1 onion, finely diced
10 cloves garlic, finely diced
3 small red dried chiles (such as Thai birds), minced
1/2 cup (115 g) kosher salt
1/4 cup (50 g) packed brown sugar
Leaves from 1 bunch rosemary
1/2 cup (45 g) coriander seeds, cracked
6 tablespoons (40 g) cracked pepper
1 tablespoon dill seeds
1 tablespoon paprika

Steps:

  • Preheat the oven to 225°F (110°C). In a bowl, stir together the onion, garlic, chiles, salt, sugar, and rosemary. Spread the mixture on a rimmed baking sheet and bake for 2 to 3 hours, or until the onions are dry. Keep an eye on the oven to make sure the onion pieces don't burn, and turn down the heat if they threaten to scorch.
  • When the mixture is nice and dry, remove from the oven and let cool, then transfer to a food processor and pulse just two or three times to break up the clumps.
  • Return the mixture to a bowl, add the coriander seeds, pepper, dill seeds, and paprika, and mix well. Transfer to a jar, cap tightly, and store in the fridge for up to 1 month. Or, freeze in a lock-top plastic bag for up to 6 months.

2 tablespoons blended mixed peppercorns
1 tablespoon coriander seed
1 tablespoon dill seed
1/2 teaspoon hot pepper flakes
2 tablespoons coarse sea salt
1 tablespoon garlic powder
1 tablespoon onion powder

Steps:

  • Use a grinder, coffe grinder or mortar to crush the peppercorns, coriander, dill seeds and pepper flakes.
  • Add the remaining ingredients and mix well.
  • Sprinkle generously on steaks, whole chiken before roasting, or tuna steaks before grilling.
