I came up with this meal when I wanted something simple to put together, but packed with flavor. This recipe is done in the oven, but can be also grilled. I served it with a simple salad and crusty French bread. Roasted vegetables, rice pilaf and buttered noodles would also be great side dishes for this recipe.

4 boneless skinless chicken breasts
1 tablespoon olive oil
2 garlic cloves, minced
1 tablespoon McCormick's Montreal Brand steak seasoning
1 tablespoon light brown sugar
1 teaspoon onion powder
1/2 teaspoon oregano
nonstick cooking spray

Steps:

  • Preheat oven to 400°F.
  • Line a sheet pan with foil and spray lightly with nonstick cooking spray.
  • Coat chicken breasts with olive oil.
  • In a bowl mix remaining ingredients.
  • Rub evenly over top and bottom of chicken breasts, and place on sheet pan.
  • Bake for 25-30 minutes or until chicken is lightly browned and done.
  • (Note: You can prepare these the same way and grill/broil for 8-10 min on each side).

8 Chicken Thighs
2 Cups Salsa
1/4 Cup Brown Sugar
1/4 Cup Red Wine
2 Tablespoons Dijon Mustard
2 Tablespoons Oil

Steps:

  • 1. Preheat oven to 425 Degrees. Spray a 9 x 14 Baking dish with non stick cooking spray and set aside. 2. In a medium size mixing bowl, stir together the Salsa, Brown Sugar, Dijon Mustard and the Red Wine and set aside. 3. Add the Oil to a large skillet. Over medium high heat, brown the Chicken Thighs skin side down, then transfer them to the prepared baking dish, with skin side up. 4. Pour the Salsa mixture over all the Chicken Thighs. 5. Place the Chicken Thighs in the oven and bake for 30-40 minutes. Check for an internal temperature of 165-170 on your meat thermometer to ensure they are done. 6. My Mother-in-law found this recipe in a McCormick Spices Cookbook flier and made a few adjustments. It is a simple, quick and delicious way to grill chicken.

1 lb boneless skinless chicken breast, pounded out to 1/4 inch thickness
1 1/2 teaspoons mccormick grill-mates montreal roasted garlic brand poultry seasoning
1/2 cup mild salsa
salt and pepper
1/3 cup seedless strawberry preserves or 1/3 cup jam
1 tablespoon lemon juice
1 teaspoon chili powder

Steps:

  • Directions:.
  • Salt and pepper chicken breasts to taste in a 9x13 dish.
  • Sprinkle chicken with Grill Mates Montreal Chicken Seasoning and allow to set for 30 minutes.
  • In a small bowl, stir together remaining salsa, preserves, lemon juice, and chili powder.
  • Grill chicken over medium coals 6-7 minutes per side or until done. Brush with salsa mixture during the last 3 minutes of grilling.

From the Sunset Potluck Cookbook. I love baked chicken recipes! And I especially like to collect recipes which call for those leg and thigh pieces, because those are always cheaper than most cuts of chicken. The recipe recommends serving with guacamole or a squeeze of lime juice.

2 eggs
1/3 cup green chili salsa or 1/3 cup taco sauce
1/4 teaspoon salt
1 1/4 cups fine dry breadcrumbs
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon garlic salt
1/2 teaspoon dry oregano
3 -3 1/2 lbs whole chicken legs-thighs, attached (6-8)
6 tablespoons butter or 6 tablespoons margarine

Steps:

  • In a shallow bowl, beat eggs, salsa, and salt until blended.
  • In another shallow bowl, combine bread crumbs, chili powder, cumin, garlic salt and oregano.
  • Dip chicken into egg mixture and roll in crumb mixture.
  • Repeat both steps 1 more time.
  • In a shallow rimmed baking pan, melt butter as oven preheats to 400.
  • Remove pan from oven.
  • Add chicken, turn to coat with butter and arrange skin side up.
  • Bake, uncovered, until meat near thighbone is no longer pink when slashed (40-45 minutes). Transfer chicken to a warm platter.
  • Insulate to transport hot.
