1 pound ground beef
1 medium onion, chopped
1 garlic clove, minced
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (11 ounces) Mexicorn
1 can (4 ounces) chopped green chilies
1 package (9-1/4 ounces) corn chips
1 can (10 ounces) enchilada sauce
1 to 2 cups shredded Colby-Monterey Jack cheese

Steps:

  • In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink and onion is tender; drain. Add soup, corn and chilies; mix well. , In an ungreased shallow 3-qt. baking dish, layer meat mixture, chips and sauce; top with cheese. Bake, uncovered, at 350° for 8-10 minutes or until heated through.

8 ounces elbow macaroni
1 lb ground beef
1 green bell pepper, diced
1 onion, diced
1 tablespoon chili powder (or to taste)
salt and pepper (to taste)
1 (14 -15 ounce) can tomato soup
1 (14 -15 ounce) can kidney beans, drained and rinsed

Steps:

  • Cook macaroni according to package directions.
  • Brown ground beef.
  • Add pepper, onion, chili powder, salt, and pepper.
  • Add tomato soup and kidney beans.
  • Add cooked macaroni.
  • Stir all ingredients, serve, and enjoy.

Chicken twist on traditional nachos. It is very easy to change up spices per taste. This is a great way to use leftover rotisserie chicken. Serve with salsa or fresh tomatoes and lettuce if desired.

1 tablespoon olive oil
2 pounds diced boneless chicken
½ cup chopped onion
1 (10.5 ounce) can condensed cream of chicken soup
1 (7 ounce) can chopped green chile peppers
1 cup sour cream
¼ cup milk
1 tablespoon ground cumin
1 tablespoon chili powder
½ teaspoon ground coriander
½ teaspoon cayenne pepper
½ teaspoon crushed red pepper flakes
1 (14.5 ounce) package tortilla chips, or as needed
3 cups shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium heat. Add chicken and saute for about 5 minutes. Add onion and saute until softened, another 5 minutes. Stir in condensed soup, chile peppers, sour cream, milk, cumin, chili powder, coriander, cayenne pepper, and pepper flakes.
  • Transfer 1/2 of the chicken mixture into a 9x13-inch pan. Layer with 1/2 of the tortilla chips and 1/2 of the Monterey Jack cheese. Repeat layers once more and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 more minutes.

1/2 onion, chopped
1 (1 1/4 ounce) package taco seasoning mix
1 (4 ounce) can chopped green chilies
1 (10 ounce) can enchilada sauce
1 (10 1/2 ounce) can cream of mushroom soup
1 (8 count) package flour tortillas
3 cups shredded cheddar cheese
1 (8 ounce) bottle taco sauce

Steps:

  • Brown hamburger meat with onion and taco seasoning.
  • Mix mushroom soup and enchilada sauce together in a bowl.
  • Cut tortillas into triangles.
  • In a 9x12 pan put a layer of tortillas.
  • Then a layer of Hamburger mixture.
  • Then a layer of Soup mixture.
  • Then a layer of chiles.
  • Then a layer of cheese.
  • Then repeat again.
  • The last layer should be tortillas.
  • Then spread taco sauce on.
  • Then top with cheese.

2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.

4 ounces spaghetti, broken into 2-inch pieces
1 large egg
1 cup sour cream
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
2 cups shredded Monterey Jack cheese
1 package (10 ounces) frozen chopped spinach, thawed and drained
1 can (2.8 ounces) french-fried onions, divided

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large bowl, beat egg. Add sour cream, Parmesan cheese and garlic powder. Drain spaghetti; add to egg mixture with Monterey Jack cheese, spinach and half of the onions. Pour into a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes or until heated though.
