4 tablespoons unsalted butter
2 ounces semisweet chocolate
1/3 cup sugar
1 large egg
1 tablespoon coffee liqueur
1 teaspoon instant espresso powder
1/3 cup flour
1/3 cup chopped walnuts, plus
12 walnut halves

Steps:

  • Preheat oven to 350°.
  • Generously grease a 12 cup mini-muffin pan tin (the cups are about 2 inches in diameter) and set aside.
  • Melt the butter and chocolate together in the top of a double boiler, stirring until smooth, set the mixture aside to cool slightly.
  • Stir in the sugar until smooth.
  • Whisk in egg, coffee liquor, and espresso powder.
  • Gently fold in the flour and chopped walnuts.
  • Spoon the batter into the prepared cups, filling the cups about 3/4 full.
  • Place a walnut half in the center of each cup.
  • Bake until the center of one of the cakes comes out clean when pricked with a toothpick, about 20 minutes.
  • Cool in tins about 5 minutes, then transfer to wire rack.

1/2 cup breadcrumbs
1 tablespoon butter
2 cups elbow macaroni or 2 cups salad macaroni
1 cup sour cream, at room temperature
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 (10 ounce) can condensed cream of mushroom soup
1/8 teaspoon basil or 1/8 teaspoon tarragon
1/4 cup pimiento, chopped
2 (6 ounce) cans light chunk tuna in water, well drained

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 3 quart casserole.
  • Prepared butter breadcrumbs (melt 1 tablespoons butter in small skillet, stir in breadcrumbs and sauté until golden brown) Cook noodles or macaroni in lightly salted water according to package directions.
  • Drain.
  • Empty sour cream into a large bowl.
  • Fold in noodles or macaroni.
  • Melt 3 tablespoons butter in a saucepan.
  • Stir in flour, salt and pepper; cook until bubbly.
  • Add soup and tarragon or basil.
  • Cook, stirring until mixture thickens.
  • Gradually add sauce to noodles and sour cream, folding continuously.
  • Fold in pimiento and tuna.
  • Pour into buttered casserole and sprinkle with buttered breadcrumbs.
  • Bake about 20 minutes until piping hot.

From the Nascar cookbook "Cooking Lifestyles". My family loves this tettrazini style casserole! Ann Scrader is obviously a great cook, as I've never had anyone turn this down! Makes enough to feed an entire pit crew!

10 -12 chicken breasts
1 lb vermicelli
2 lbs Velveeta cheese (low-fat works great)
1 (10 ounce) can diced tomatoes and green chilies
2 tablespoons Worcestershire sauce
1 (4 ounce) jar canned mushroom slices, drained
2 green bell peppers, chopped
2 yellow onions, chopped
1/4 cup butter or 1/4 cup margarine

Steps:

  • Place chicken in large stockpot & cover with water. Salt & pepper to taste. Bring to a boil and cook until tender. Cool chicken, save broth. Cut chicken into chunks.
  • Cook vermicelli in broth. When done, add cheese, cut into chunks. Stir until melted. Add tomatoes, Worcestershire, mushrooms, and chicken.
  • Sauté onions and peppers in butter. Add to pot. Stir well. Pour into casserole dishes.
  • To serve, bake at 350°F for 45 minutes (longer if frozen).
  • Yield: 16+ servings.

1/4 lb mozzarella cheese, sliced thin (Monica would never use anything but fresh mozzarella packed in water)
1 large tomatoes, sliced thin
4 slices large sourdough bread or 4 slices crusty peasant bread
salt and pepper
1/4 cup whole fresh basil leaf
1/4 cup olive oil

Steps:

  • Layer the cheese and tomato over 2 slices of bread.
  • Sprinkle with salt and pepper to taste, and top each with a few basil leaves.
  • Cover with the remaining slices of bread to make sandwiches.
  • Heat 2 tbsp oil in a large skillet over medium heat.
  • Add the sandwiches and cook, pressing down on them with a spatula until the bottoms are golden brown.
  • Flip the sandwich and add the remaining 2 tbsp oil.
  • Continue cooking, occasionally pressing down on sandwiches with spatula until the other side is golden brown and the cheese has melted.
  • Remove from pan and enjoy.
