1/2 cup butter, softened
1 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg, room temperature
1 medium ripe banana, mashed
1 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking powder
1/8 teaspoon salt
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter, brown sugar and peanut butter until blended. Gradually beat in egg, banana and vanilla. In another bowl, whisk flour, baking powder and salt; gradually add to butter mixture, mixing well., Spread into an 8-in. square baking dish coated with cooking spray. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, dust with confectioners' sugar.

We call this recipe 'Monkey' as a family tradition. We also have Monkey Bread. These bars are wonderful especially for when your the parent who has to bring a snack for school!

½ cup butter
½ cup white sugar
½ cup packed brown sugar
⅓ cup peanut butter
1 egg
½ teaspoon vanilla extract
½ teaspoon baking soda
1 cup all-purpose flour
1 cup rolled oats
2 cups semisweet chocolate chips
1 cup confectioners' sugar
¼ cup peanut butter
3 ½ tablespoons milk

Steps:

  • Cream butter and white sugar and brown sugar. Blend in 1/3 cup peanut butter, egg, vanilla, and baking soda. Add flour and oatmeal. Mix well!
  • Spread in greased 13x9 inch baking pan. Bake at 350 degrees F (175 degrees C) for 20 minutes. Remove and sprinkle with chocolate chips.
  • Return to oven and bake for eight minutes. Spread to smooth out chocolate chips. Cool! Mix icing and spread over bars. Refrigerate to set. Cut and eat.
  • To Make Icing: Mix together 1 cup confectioners' sugar, 1/4 cup peanut butter and 3 1/2 tablespoons milk until it makes a spreadable consistency.

1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
2 medium bananas (3/4 - 1 cup banana)
2 tablespoons butter, melted
2 eggs
3/4 cup sugar
1 teaspoon vanilla extract
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350°F Lightly grease a 9-inch square pan.
  • In a medium bowl, whisk together flour, baking soda, salt and nutmeg.
  • In the bowl of a food processor, blend bananas until smooth. Add in melted butter, eggs, sugar and vanilla and whizz until smooth and well-combined. Pour banana mixture into flour mixture and stir until just combined. Fold in chocolate chips.
  • Pour batter into prepared pan (it will be a thin layer).
  • Bake at 350F for 20-25 minutes, until a tester comes out dry.
  • Cool completely before slicing.

1/2 cup honey
1/3 cup butter
1/4 cup peanut butter (creamy or chunky)
2 teaspoons vanilla
1/4 teaspoon salt
2 cups rolled oats
4 cups crispy rice cereal
1/2 cup flaked coconut
1/4 cup peanuts, chopped

Steps:

  • Combine marshmallows, honey, butter, peanut butter, vanilla, and salt together in a medium saucepan. Heat mixture over low heat, stirring constantly.
  • In a 9x13 baking pan, combine oats, rice cereal, coconut and peanuts. Pour honey mixture over dry ingredients. Mix until thoroughly coated. Pack mixture firmly into pan. Cool and cut.

1 cup all-purpose flour

3 tablespoons low-fat buttermilk
1 teaspoon vanilla extract

Steps:

1 c sugar
1/2 c brown sugar
1/3 c sour cream
4 oz cream cheese softened
2 eggs
4 ripe bananas
2 tsp vanilla
2 c flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1 c chopped pecans,or walnut's 1 cup of toasted pecans
BROWN BUTTER FROSTING
1/2 c butter
4 c confection sugar
2 tsp vanilla extract
2-4 Tbsp milk
1/4 c toasted whole pecans for garnish

Steps:

  • 1. Toasted pecans in oven on a baking sheet until toasted about 10 minutes. Heat oven 375 degrees. Line 10x15 jelly roll pan or 13x9 pan with parchment paper. or butter the pans. I use parchment paper.If you use 9x13 pan the bars will be thicker like cake.
  • 2. Blend the sugar,sour cream,cream cheese,and eggs together until smooth.
  • 3. blend in bananas,and vanilla until incorporated.
  • 4. add flour,baking soda,salt with spoon. Mix well!!! add pecans and stir until blended.
  • 5. put in to pan and bake for about 30 minutes at 375 degrees or until pick comes out clean.
  • 6. Time to make your frosting. You can frost cake while warm. It actually works better. If frosting is thick add a bit more milk to it,
  • 7. melt butter in sauce pan until golden brown.remove from heat. add confection sugar,vanilla and milk and stir until blended well. If frosting is thick add more milk until you get a smooth frosting.
  • 8. now frost cake while it is warm.if you use the 9x13 pan for the cake use less of the frosting. cool and cut in to bars. I eat one while warm! LOL Enjoy with a cup of coffee or tea.

2 stick butter, melted
11 oz whole grain peanut butter cheerios
1/4 tsp salt
2 large bananas, cut into 1/4 inch slices
2 c semi-sweet chocolate chips
14 oz sweetened condensed milk
1 tsp vanilla extract
1 c cashew pieces, finely chopped

Steps:

  • 1. Heat oven to 350 degrees F. (325 if using a convection oven)
  • 2. Place the cereal into the bowl of a food processor and pulse until it turns to crumbs. Pour melted butter over the crumbs and pulse to combine.
  • 3. Reserve approximately 1/2 cup of crumbs and press the remaining crumbs into the bottom of a 13 x 9 inch baking pan. Bake the crust for 8 minutes and remove from oven. Let cool slightly (about 5 minutes).
  • 4. Meanwhile, melt all but 1/2 cup of the chocolate chips and the sweetened condensed milk together in a heavy saucepan over low heat. Stir occasionally until the mixture is smooth and glossy. Remove from heat and stir in the vanilla extract.
  • 5. Arrange the sliced bananas across the bottom of the crust. Pour the chocolate mixture over the top of the bananas and spread to cover as much surface area as possible. Combine the remaining 1/2 cup of crumbs, 1/2 cup of chips, and the chopped nuts together and sprinkle over the chocolate filling.
  • 6. Bake for 20-25 minutes, or until the center is set. Cool in pan before slicing and serving.

1 (18 1/4 ounce) box yellow cake mix
1/3 cup vegetable oil
1 large egg
1 cup nuts, chopped (I used pecans)
1 (14 ounce) can sweetened condensed milk
1 cup banana, mashed (about 2 medium)
1 cup butterscotch chips or 1 cup milk chocolate chips
1 1/3 cups sweetened flaked coconut

Steps:

  • Preheat oven to 350°F
  • Spray the bottom only of a 13 x 9 inch metal baking pan with nonstick cooking spray.
  • In a large bowl beat cake mix, oil and egg until well blended and crumbly.
  • Stir in nuts.
  • Set aside 1 cup of the crumb mixture.
  • Firmly press remaining crumb mixture on bottom of prepared pan.

1 1/2 cups sugar
1 cup sour cream
1/2 cup butter, softened
2 eggs
1 3/4 cups (3 or 4) ripe bananas, mashed
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup chopped walnuts (optional)
Browned Butter Frosting:
1/2 cup butter
4 cups powdered sugar
1 1/2 teaspoons vanilla
about 3 tablespoons milk

Steps:

  • Bars: Heat oven to 375 degrees. Grease and flour 10x15 jelly roll pan. Beat first four ingredients until creamy. Blend in bananas and vanilla for one minute. Add dry ingredients and blend for one minute. Stir in nuts and spread in pan. Bake 20 to 25 minutes until golden brown. Cool and frost with Browned Butter Frosting. Browned Butter Frosting: Heat butter in saucepan over medium heat past the melting point until it boiling, and a delicate brown. Remove from the heat and immediately add the remaining ingredients. This should be thicker than a glaze and thinner than frosting. Using a spatula smooth over the top of the Monkey Bars immediately. The frosting will be easier to spread once it's on the warm bread.

How to make Crunchy Monkey Bars

1 roll Pillsbury® refrigerated chocolate chip cookie dough
1 roll Pillsbury® refrigerated peanut butter cookie dough
1 cup mashed peeled bananas (2 medium)
1 cup Jif® Chocolate Flavored Hazelnut Spread
1 cup crushed dried banana chips

Steps:

  • Heat oven to 375°F. Spray 15x10-inch pan with sides with Crisco® Original No-Stick Cooking Spray. Let cookie dough stand at room temperature 10 minutes to soften. In large bowl, break up both rolls of cookie dough; mix with wooden spoon or knead with hands. Stir in mashed bananas; mix well. Spread in pan.
  • Bake 18 to 22 minutes or until top is golden brown and toothpick inserted in center comes out clean. Remove from oven; immediately spoon chocolate hazelnut spread over top. Let stand 20 seconds to soften; spread evenly over crust. Top with banana chips; cool 30 minutes. Refrigerate at least 1 hour before serving. Cut into 8 rows by 4 rows. Stored covered.
