Number Of Ingredients 10

1 cup granulated sugar
6 tablespoons unsalted butter (cut into small pieces)
1/2 cup heavy cream
1/2 teaspoon salt
1 cup unsalted butter (softened)
1/2 cup salted caramel ((you will not need all the caramel you made))
1 teaspoon vanilla extract
1/4-1/2 teaspoon salt (to taste)
1 1/2 - 2 cups powdered sugar
1-2 tablespoons cream (or milk)

Steps:

  • Add the sugar to a medium-sized, heavy bottom saucepan over medium heat.
  • Gently stir the mixture. The sugar will first form clumps. Continue stirring.
  • As you stir the mixture the clumps will eventually melt and it will turn into a dark amber colored sauce.
  • Carefully add in the chopped batter while whisking with a metal whisk.
  • Once the butter is totally melted, whisk in the creamy. Make sure to constantly whisk the mixture.
  • Remove from the heat and whisk until smooth. Stir in the vanilla extract and salt.
  • Cool fully. The sauce will continue to thicken as it cools.
  • In a large bowl, beat the butter until softened.
  • Beat in 1/2 cup fully cooled caramel sauce (you will need to measure out 1/2 cup of the caramel sauce you made - you will not need all the caramel you made), vanilla extract and salt.
  • Beat in 1 1/2 cup powdered sugar, starting with the mixer on low speed.
  • If needed beat in the rest of the sugar, if needed, for thicker, sweeter frosting. If your frosting seems a little too thick, beat in the cream 1 tablespoon at a time.
  • Decorate cakes or cupcakes using a piping bag or a knife.
  • Optionally drizzle with additional salted caramel.

MONA'S CARAMEL FROSTING

Mona's Caramel Frosting image

This is my husbands grandmothers caramel frosting. She baked desserts for her sisters restaurant, Cafe South, in Milledgeville, Georgia. It goes well with your favorite yellow cake or maybe chocolate cake! Caramel frosting is very finicky though. Humidity plays a big role in your success. If you fail at first, just try again. My...

1 stick butter
2 c sugar
1 tsp corn syrup
1 can(s) 5 oz evaporated milk
1/4 c sugar

Steps:

  • 1. In a heavy sauce pan melt butter, mix in 2 cups sugar, milk and syrup til boiling. Boil for 3 minutes.
  • 2. While boiling, brown 1/4 cup sugar in a small skillet. Just to a nice golden brown. Careful not to burn!
  • 3. Slowly drizzle the browned sugar into your butter mixture, stirring well and continuously, allowing it to combine. Remove from heat keep stirring, it will thicken.
  • 4. Your cake should be prepped and cooled and ready to frost at this point.
  • 5. Mix your cooled frosting with a hand mixer until it's at your desired, spreadable consistency. Take your time and slowly allow the frosting to coat your cake. If your frosting gets too thick you can add a scooch of milk to thin it out a bit.
  • 6. Once done I like to place it in the fridge over night to fuse well, IF you can wait that long!!
