1 cup mayonnaise
1/2 teaspoon salt
1/2 lemon, juice of

Steps:

  • Chop garlic and mash together with salt.
  • Add garlic and lemon to mayonnaise.

  • Refrigerate unused portion, it will keep for quite a while.

1/2 cup good extra virgin olive oil
3 crushed garlic cloves
1/8 teaspoon crushed red pepper flakes
1/4 teaspoon salt
pepper

Steps:

  • Put all ingredients in a bowl or jar and serve within a 1/2 hour.
  • This can also be refrigerated.
  • Refrigerate after using.
  • If you purchase a good olive oil, it will solidify in the fridge.
  • Just let it thaw for a few minutes at room temperature.

Yum yum yum. If you like garlic you will love this. If you don't usually like garlic, you might like this because the garlic is roasted, the flavor mellows and has a sweeter taste (like caramelized). Sour cream may be substituted with plain yogurt to cut some calories. This is great for dipping veggies such as artichokes, asparagus, or whatever, it's really versatile.

1 head garlic (whole bulb)
3 tablespoons mayonnaise
3 tablespoons sour cream
3 tablespoons olive oil
salt and pepper

Steps:

  • Cut off top of garlic bulb to expose most of the garlic cloves.
  • Put the bulb in an oven-safe small dish or on top of a sheet of foil.
  • Drizzle olive oil on the tops of the garlic cloves, add more if needed to drench the tops and sides of the whole bulb. Sprinkle some salt on the top of the bulb on the oil.
  • Wrap or seal up the garlic bulb with foil.
  • Roast in oven at 400°F for 30-40 minutes, until tops and sides are browned and roasted.
  • Take out of the oven and cool for 10 minutes.
  • When cooled enough to handle, squeeze out the garlic cloves from the root or the bottom of the bulb, into a small bowl.
  • Add mayonnaise and sour cream, using a fork, stir until blended.
  • Add pepper to taste, and salt if needed.

We enjoy little dishes of dipping sauce when we serve Chinese food. This is excellent when serving dry ribs or crispy fried chicken balls and such. This recipe was passed along from a family member and is requested any time we have the ribs and chicken. I always double this recipe.

1 tablespoon oil
5 garlic cloves, minced very fine
3 tablespoons liquid honey (regular honey works well if put in the micro wave to 'melt')
1 tablespoon cornstarch (occasionally only use 1 teaspoon)
1 tablespoon water (to dislove the cornstarch)

Steps:

  • Add 1 tablespoon oil to pan.
  • Add the finely minced garlic and lightly brown.
  • Be very careful not to burn the garlic.
  • Add 3 tablespoons honey.
  • Dissolve 1 tablespoon corn starch in 1 tablespoon water to thicken sauce.
  • (You may add a bit more water) Thicken and stir til nice and shiny.
  • I often make ahead, refrigerate and warm in micro wave just before using.
  • Keeps well at least a week.

10 garlic cloves, peeled
1 teaspoon kosher salt
1 medium Spanish onion, finely chopped
3/4 cup extra virgin olive oil, warmed
1/4 cup vinegar
1 lime, juice of
1 orange, juice of
1 lemon, juice of
2 sour oranges, juice of
2 tablespoons cilantro
hot pepper (optional)

Steps:

  • Make a paste from the garlic and salt using a mortar and pestle. (She says a food processor does not produce the same result).
  • Add remaining ingredients and store in the refrigerator. Let come to room temperature when ready to use.
