MOM'S WHITE CRACKER FUDGE

2 cups sugar
3/4 cup milk (can or whole)
6 tablespoons creamy peanut butter (fresh not stale)
2 tablespoons margarine
30 saltine crackers (finely crushed)
1 teaspoon pure vanilla extract

Steps:

  • First butter a cake pan and set aside.
  • Then measure out your peanut butter, vanilla and crackers(make sure they are crushed and ready)also set this aside.
  • Now in a heavy sauce pan wipe the 2 T butter around the inside of the pan, this coats the pan and helps keep the sugar from crystallizing.
  • Add the sugar and the milk to the pan.
  • Heat over med heat stirring constantly.
  • Bring to a boil. let boil but keep stirring for three minutes.
  • When time is up remove from heat *work quickly here* add crushed crackers, peanut butter and vanilla stir fast and well because it will start to get hard.
  • Pour this into your prepared cake pan and let cool. cut into squares and enjoy.

1/4 lb saltine crackers (one tube)
3/4 cup peanut butter (I like crunchy)
3 cups sugar
1 cup milk

Steps:

  • Crumble crackers into a mixing bowl.
  • Stir in peanut butter.
  • Combine sugar and milk in small saucepan.
  • Bring to boil and boil for about five minutes, stirring constantly.
  • Remove from heat and pour mixture over crackers.
  • Mix with electric mixer until smooth. (if not completely smooth, it will be like pieces of peanut).
  • Pour into buttered 8x8 pan.
  • Cut into 1" squares when set.
  • Pack into a tightly covered container, separating the layers of pieces by waxed paper and refrigerate.

3 cups sugar
1/2 cup butter
1 cup whole milk
Dash of salt
4 ounces unsweetened chocolate
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts

Steps:

  • Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.

1/2 cup evaporated milk
2 cups graham cracker crumbs, crushed fine.
1 cup chopped black walnuts or pecans

Steps:

  • 1. Place butter, sugar, cocoa, and milk in a medium size sauce pan. Bring to a boil, but do not boil. Remove from heat.
  • 2. Stir in Graham Cracker crumbs and nuts. Mix well.
  • 3. Pour into a buttered 9 x 9 square pan. Cut into squares.
