MY MOM'S CABBAGE CASSEROLE

Number Of Ingredients 7

1 small cabbage head wedged
1 c hot water
1 1/2 lb ground beef
1 c diced onions
1/2 c uncooked rice
2 can(s) diced tomatoes (15 oz)
1/3 tsp black pepper

Steps:

  • 1. Brown meat in skillet with onions.
  • 2. Butter a 10x13 casserole dish then line with cabbage.
  • 3. Mix Beef/Onion mixture with uncooked Rice.
  • 4. Arrange beef and rice over cabbage.
  • 5. Combine tomatoes, water and pepper and pour over Hamburger Mixture.
  • 6. Cover & Bake 1 ½ hours at 350 deg.
  • 7. Serve with Cornbread muffins for a wonderful meal

MOM'S TANGY BEEF CASSEROLE

This is one of my favorites from when I was a kid. Mom, having four growing boys, had to come up with things that tasted good and quick to make.

2 lbs lean ground beef
1 medium onion, chopped
2 cans green beans
1 can corn (optional)
2 cans condensed tomato soup
2 tablespoons steak sauce (I use A-1)
1 teaspoon seasoned pepper
1 dash crushed red pepper flakes
2 lbs potatoes, mashed

Steps:

  • Start potatoes to boil for mashing.
  • Brown beef with peppers and steak sauce, add onions towards the end of the browning so they soften slightly.
  • Drain browned beef leaving enough of the juices for flavor and place in a medium casserole dish.
  • Add beans, soup and corn if desired and stir to mix well.
  • Spread mashed potatoes on top of mixture.
  • Bake covered in an oven preheated to 375 for 25 minutes.
  • Optionally remove covering and bake for an additional 10-15 minutes to brown the potato.

Another recipe I found in an old recipe card file that I'm placing on Zaar for safekeeping. I remember making this for our family when I was in high school and everybody loved it. By the way, me and high school are ancient history, LOL!

1 lb ground beef
1/2 cup onion, chopped
1 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder
15 ounces tomatoes
10 ounces enchilada sauce
2 1/4 ounces olives, sliced
1 cup cottage cheese
1 egg
8 corn tortillas, halved
8 ounces monterey jack cheese, shredded
8 ounces cheddar cheese, shredded

Steps:

  • Brown ground meat and onions together.
  • Drain grease.
  • Add tomatoes, enchilada sauce, olives, salt, pepper and garlic powder.
  • In a mixing bowl, combine cottage cheese and egg. Mix well.
  • In a 9" x 13" baking pan, add 1/3 of meat mixture.
  • Add 1/2 of the cottage cheese mixture over meat layer.
  • Spread 1/2 of the jack cheese over the cottage cheese layer.
  • Place 1/2 of the tortilla halves over the jack cheese.
  • Spread another 1/3 of the meat mixture over the jack cheese.
  • Spread the remaining cottage cheese mixture over the jack cheese layer.
  • Place remaining tortilla halves over jack cheese layer.
  • Pour remaining meat mixture over tortilla halves.
  • Sprinkle cheddar cheese over the top of casserole.
  • Bake at 350 degrees for 20 minutes.

1 lb Velveeta cheese
1 (15 1/4 ounce) can whole kernel corn, drained
1 (11 1/2 ounce) can condensed chicken with rice soup, undiluted
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1/2 cup milk
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a Dutch oven, cook beef, green pepper and onion and drain.
  • Remove from heat and stir in remaining ingredients.
  • Transfer to two greased 2-1/2-qt. baking dishes.
  • Cover and bake at 350° for 45-50 minutes or until bubbly.
