BEEF AND NOODLE CASSEROLE
When I was working on the local election board in the '50s, one of my co-workers gave me this beef noodle casserole recipe, and it has been a family favorite ever since. It's quick to make for unexpected company or easily doubled for a potluck.

Steps:
- In a large skillet, cook beef over medium heat until no longer pink; drain. In the same skillet, melt butter over medium-high heat. Saute onion and pepper until tender. Stir in the beef, Worcestershire sauce, noodles and soups. , Transfer to a greased 3-qt. baking dish; top with cheese. Bake, uncovered, at 350° for 45-50 minutes or until heated through.

MOM'S TANGY BEEF CASSEROLE
This is one of my favorites from when I was a kid. Mom, having four growing boys, had to come up with things that tasted good and quick to make.

Steps:
- Start potatoes to boil for mashing.
- Brown beef with peppers and steak sauce, add onions towards the end of the browning so they soften slightly.
- Drain browned beef leaving enough of the juices for flavor and place in a medium casserole dish.
- Add beans, soup and corn if desired and stir to mix well.
- Spread mashed potatoes on top of mixture.
- Bake covered in an oven preheated to 375 for 25 minutes.
- Optionally remove covering and bake for an additional 10-15 minutes to brown the potato.
