SPANISH CRISPY PORK CHOPS WITH RICE



Spanish Crispy Pork Chops with Rice image

Number Of Ingredients 12

2 cups frozen cooked white rice
4 thin bone-in pork chops (1/2 inch thick; about 1 1/4 pounds)
1 1/2 teaspoons Sazón seasoning
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1 small onion, chopped
3 cloves garlic, finely chopped
1 tablespoon tomato paste
1/2 teaspoon ground turmeric
1 15.5-ounce can pigeon peas, drained and rinsed
1/4 cup halved green olives with pimientos
Chopped fresh cilantro, for topping

Steps:

  • Preheat the oven to 250˚. Heat the rice as the label directs. Season the pork with the Sazón, salt and pepper. Heat a large skillet over high heat. Add 2 tablespoons olive oil. Add the pork and cook until browned on the bottom, about 3 minutes. Flip and cook until just cooked through, about 1 more minute. Remove to a baking sheet and keep warm in the oven.
  • Add the remaining 1 tablespoon olive oil to the skillet and reduce the heat to medium. Add the onion and cook, stirring, until lightly browned, about 4 minutes. Add the garlic, tomato paste and turmeric. Cook, stirring, until the onion is coated, about 1 minute. Add the pigeon peas and 1 cup water. Bring to a simmer and cook until slightly thickened, about 4 minutes. Stir in the rice and olives and heat through, about 1 minute; season with salt and pepper.
  • Serve the pork chops with the rice mixture; drizzle with any juices from the baking sheet. Top with cilantro.

2 cloves garlic
4 sprigs parsley
1 medium onion
1 tbsp. Spanish sweet paprika
5 tbsp. olive oil
4​ pork loin chops (5 oz. each)
Salt and pepper to taste

Steps:

  • Gather the ingredients.
  • Preheat the oven to 425 F.
  • Finely chop the garlic, parsley, and onion. Combine them together in a medium mixing bowl.
  • Season with the paprika, pepper, and salt. Moisten the mixture with 3 tbsp. of olive oil. Don't add too much oil; it should be a fairly thick consistency.
  • Grease a roasting pan with oil or line it with aluminum foil. Season the chops, covering them with the mixture and place in roasting pan . Spoon any remaining onion mixture between the chops.​
  • Roast in a hot oven for 12 minutes. Turn chops over, piling the onion mixture on top of the chops again and roast another 12 to 13 minutes. If pork is cooked, but onion mixture is not fully cooked, quickly saute onion mixture in a heavy-bottomed frying pan until cooked.
  • Serve the pork chop and herb sauce on top. Add mashed potatoes or roasted paprika potatoes on the side for a wonderful Spanish dinner.

A simple rub turns pork chops into a wonderfully flavorful but very easy weeknight dinner.

1 teaspoon minced garlic
1 teaspoon paprika or pimentón (, sweet, spicy, or smoked)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1 teaspoon minced fresh thyme ((optional))
Pinch cayenne pepper
1/2 teaspoon kosher or coarse salt (, or to taste)
Freshly ground black pepper (, to taste)
1 tablespoon extra-virgin olive oil (, plus more for cooking the chops)
1 teaspoon red wine vinegar or sherry vinegar
4 bone-in pork chops ((each 1-inch thick, about 2½ pounds total))
8 thin slices lemon ((optional))
Chopped fresh flat-leaf parsley (, extra paprika and/or lemon wedges, for garnish)

Steps:

  • Combine the garlic, paprika, cumin, coriander, oregano, thyme, if using, cayenne, salt, and pepper in a small bowl. Add the olive oil and vinegar and stir to make a paste. Smear the paste on both sides of the pork chops and place a couple of lemon slices on top of each. Let the chops sit in the fridge for 30 to 45 minutes, or longer (or skip the fridge if you don't have the time).
  • Heat a large skillet over medium-high heat until very hot. Add a couple of teaspoons of olive oil and when the oil just starts to smoke, add the pork chops, lemon slice side down (you might want to take the lemon slices from the top, place them in the pan, and then invert the pork chop on top of the lemon slices so they stay in a single layer. You may have to do this in 2 batches, using a bit more olive oil if the pan is crowded. Let the chops sear without moving them until nicely browned on the bottom, about 4 minutes. Turn the chops, keep the lemon slices in place, and sear the other side, again without moving them, for another 4 minutes or so, until nicely browned on the underside and a meat thermometer inserted into the middle of a chop registers 145°F (the meat will continue to cook after it leaves the pan).
  • Transfer the chops to a serving plate or cutting board and let sit for 2 or 3 minutes before serving whole, or in slices. Sprinkle with parsley or additional paprika if desired, and serve with lemon wedges for squeezing over the pork.

6 pork chops 3/4" thick
salt & pepper
2 Tbsp olive oil
2 onions, sliced into rings
2 can(s) tomato sauce (8 ounces each)
3 Tbsp brown sugar
3 Tbsp sweet pickle juice
3 Tbsp worcestershire
garlic powder to taste
1/4 c small stuffed spanish olives (more if desired)

Steps:

  • 1. Season pork chops with salt and pepper. Heat oil in skillet over medium-high heat until it shimmers. Add pork chops and brown on both sides. Remove to a platter and add onions to the skillet. Lower hear to medium and cook until softened.
  • 2. Add tomato sauce to skillet and stir in brown sugar, pickle juice, garlic and worcestershire. Return chops to pan and spoon sauce over them. Add olives.
  • 3. Cover with lid tilted slightly and simmer for 2 hours. Serve with mashed potatoes or yellow rice.

2 eggs
½ teaspoon garlic powder
½ teaspoon onion powder
3 (4 ounce) packets saltine crackers, crushed
3 tablespoons vegetable oil
6 thin cut pork chops

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a shallow bowl or pie plate, whisk eggs with garlic powder and onion powder. Place cracker crumbs on a separate plate. Heat the oil in a large skillet over medium-high heat. Dip pork chops into the egg, then press in the cracker crumbs to coat. Fry in the hot oil for 2 to 3 minutes per side, just until golden brown. Remove to a baking sheet.

My mom has made this forever, but she just uses an eye to see how much spice she had to add, and/or tomato juice. It has always been a favorite of mine so I actually wrote down what I used. Surprise MOM! I did use a few different ingredients, but I liked the added zip and I know my husband loved it, because we had leftover rice...

2 c cooked brown rice
6 medium pork chops
3-4 slice bacon, cooked, crisp, crumbled
1/2 c diced green pepper (or add red, yellow or orange sweet peppers)
1 medium diced onion
1 can(s) (10 oz) rotel mild with green chilis (or diced tomatoes)
2 Tbsp tomato paste + water, or tomato juice
1 c water
1-2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 tsp garlic powder

Steps:

  • 1. Pre-heat oven to 350 degrees. Cook rice, brown pork chops.
  • 2. Fry bacon until crisp, crumble. Drain fat from pan, reserve cooked bacon until later.
  • 3. Add green pepper, onion, rotel or tomatoes, and water or tomato juice. Let simmer for around 1/2 hour.
  • 4. Add bacon and simmered mixture to rice and season to taste with above spices. Place in pan large enough to hold desired number of pork chops on top. (I used a 4 quart corning ware as I only cooked 2 large chops.)
  • 5. Place browned pork chops on top of rice and bake covered for about 30 minutes. Uncover and bake another 30 minutes. You may have to add a little more tomato juice if it is too dry.

2 onions, sliced
1 green bell pepper, cut into chunks
1 tomatoes, cut in wedges

  • Add stock, cover and simmer 5 minutes.
  • Add chops and any accumulated juices.

6 boneless pork chops ((½ inch thick))
salt and pepper, to taste
2 Tablespoons olive oil
1¾ cups chicken broth
8 ounces tomato sauce (1 can)
4 ounces diced green chilies (1 can)
1.25 ounces taco seasoning (1 packet)
1 cup long grain rice (uncooked)
½ onion (diced)
1 green bell pepper (chopped)
1 red bell pepper (chopped)
½ cup shredded colby jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • Sprinkle pork chops with salt and pepper.
  • In a large skillet, heat olive oil over medium high heat and brown pork chops (about 2-3 minutes each side, turning once).
  • Spray a 9 x 13" baking pan with non-stick cooking spray and pour the chicken broth, tomato sauce, green chilis, taco seasoning, uncooked rice, and onion; mix together until completely incorporated.
  • Place the pork chops on top of the rice mixture and top with the green and red peppers.
  • Cover with foil and cook for about 50-60 minutes or until the rice is tender (you will want to make sure that you don't over cook the pork chops, so check them around 50 minutes).
  • (If the rice needs a little more cooking time, just remove the pork chops for about 10 minutes while the rice cooks longer. Then place pork chops back on top of the rice and add the cheese.)
  • Turn oven off and top with cheese.
  • Let the cheese melt for a couple of minutes.

Another one of my favorite recipes of my mom's. This is a great one dish meal that is inexpensive and easy to prepare. Most of my mom's cooking is done by taste and not by measurement, so adjustments should be made according to your own preferences. Enjoy!

4 -6 pork chops (we generally use bone-in chops)
1/2-1 cup rice (depending on number of chops & people)
1/4 cup chopped green pepper
1/2 cup chopped onion
1 (16 ounce) can chopped tomatoes (which ever you use I would puree in the food processor) or 1 (16 ounce) can Rotel Tomatoes (which ever you use I would puree in the food processor)
salt (to taste)
pepper (to taste)
water

Steps:

  • Add water to tomatoes to equal approximately double than the amount of rice that you are making.
  • Combine rice, green pepper, onion, tomatoes and water in 13X9 pan.
  • Lay pork chops on top.
  • Salt and pepper to taste.
  • Cover with foil and bake at 350 for about 45 minutes then uncover for 10 to 15 minutes until chops are browned and rice is soft.
