SALMON PATTIES {SALMON CROQUETTES}

These easy salmon patties (or "salmon croquettes") are a great way to use up leftover salmon -- or even canned salmon!

1 tablespoon olive oil
¼ cup finely diced onion
1 lb. grilled, poached, or baked salmon fillets, broken into large chunks
½ cup saltine cracker crumbs ((about 15 crackers before crushing))
1 large egg, lightly beaten
1 tablespoon mayonnaise
Zest and juice from ½ of a lemon
2 tablespoons chopped fresh parsley ((or sub with 2 teaspoons dried parsley flakes))
Kosher salt and ground black pepper
1 cup plain dry breadcrumbs
3 tablespoons butter, for sautéing
3 tablespoons canola oil or vegetable oil, for sautéing
Optional garnish: chopped fresh parsley; lemon wedges

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the onion and cook, stirring occasionally, until soft and translucent, about 3-4 minutes.
  • Transfer the onion to a large mixing bowl. Add the salmon, saltine cracker crumbs, egg, mayonnaise, lemon zest and juice, parsley, and salt and pepper to taste. Stir gently to mix. Try not to break up the chunks of salmon too much; do not over-mix.
  • Form the salmon mixture into 8 patties, about ½ inch thick.
  • Place the breadcrumbs in a shallow bowl; season with salt and pepper to taste.
  • Dredge the salmon patties in the breadcrumbs, coating both sides and pressing gently to adhere.
  • Refrigerate the patties for at least 1 hour, or until firm.
  • In the same skillet used to cook the onions, heat butter and oil in a large skillet over medium-high heat until sizzling hot (use enough butter and oil to generously cover the bottom of the skillet).
  • Place the croquettes in the hot oil, cooking in batches if necessary to avoid overcrowding the pan. Cook until golden brown, about 4-5 minutes per side. Flip the patties only once; reduce the heat to medium if they start browning too quickly.
  • Drain on paper towels. Serve with seafood sauce, tartar sauce, or ketchup. Garnish with fresh parsley and lemon wedges, if desired.

MOM'S SALMON PATTIES

Mom liked to make these for supper. She often served them with creamed potatoes. Sometimes she used them in sandwiches with tartar sauce.

1 can(s) (15 ounces) pink salmon
1 egg, slightly beaten
1/2-1 c saltine cracker crumbs
2 Tbsp finely chopped onion
salt and freshly ground black pepper to taste

Steps:

  • 1. Mom used everything in the can except the liquid. You may remove the bones and skin or mix them in with a fork to break them up. Its really your choice but Mom thought the calcium and minerals in the soft bones was worth keeping in this dish.
  • 2. Mix drained salmon, egg, cracker crumbs, onion, and seasonings well. Use enough cracker crumbs to be able to form salmon mixture into patties that will stick together. This will vary due to the moisture level of the salmon. Fry patties in vegetable oil until hot all the way through and browned nicely on both sides.

1 (15 ounce) can salmon, drained and liquid reserved
⅓ cup chopped onion
1 egg
½ cup all-purpose flour, or more as needed
1 ½ teaspoons baking powder
2 cups shortening, or more as needed
¼ cup cornmeal, or as needed

Steps:

  • Mix salmon, onion, and egg together in a bowl; stir in flour. Stir baking powder and 2 tablespoons reserved salmon liquid together in a separate bowl; stir into salmon mixture until mixture holds together when shaped. Add more flour if mixture is too soft. Add more reserved salmon liquid if mixture is too firm. Shape salmon mixture into small patties.
  • Heat shortening in a skillet over medium heat.
  • Spread cornmeal into a shallow bowl and press patties into cornmeal until evenly coated on both sides.
  • Fry patties in the hot shortening until golden brown, about 5 minutes per side. Transfer patties to a paper towel-lined plate using a slotted spoon.

1 tablespoon minced green pepper
1 tablespoon minced celery
1 tablespoon butter
1 (16 ounce) can salmon
1 teaspoon horseradish
1 -2 egg
2 -3 tablespoons oatmeal (depending on size of salmon)
2 teaspoons vegetable oil or 2 teaspoons butter

Steps:

  • Saute' onion, green pepper, and celery to soften, then mix it all with the remaining ingredients.
  • Fry each side in oil and/or butter until lightly crispy.
  • Serve with tartar sauce (preferably made from mayo and with no sugar- see my mom's tartar sauce recipe also on RecipeZaar).
  • Makes 4 to 6 patties.
  • (Minced garlic clove is also a good addition.).

1 dash salt
6 saltine crackers, crumbled
2 tablespoons parmesan cheese, grated
2 tablespoons lemon juice
1 egg

  • Drain water off salmon.
  • Mix salmon, salt, crackers, cheese, lemon juice, egg and onions in a small bowl.
