4 cups rhubarb, cut into chunks
1/2 teaspoon salt
2 cups sugar
3/4 cup flour
1 teaspoon cinnamon
1/3 cup butter, melted

Steps:

  • Heat oven to 350. Place rhubarb in an ungreased 13X9in baking dish. Sprinkle with salt.
  • Measure sugar, flour, and cinnamon into a bowl. Add butter and mix thoroughly, until mixture is crumbly. Sprinkle evenly over rhubarb.
  • Bake 50-60 minute or until topping is golden brown. Serve with vanilla ice cream or cool whip.

1 ⅓ cups white sugar
⅔ cup all-purpose flour
1 cup all-purpose flour
½ cup butter, softened
½ cup firmly packed brown sugar

1 cup all-purpose flour
1 cup brown sugar
¾ cup rolled oats
½ cup melted butter
2 eggs
⅓ cup milk
2 cups diced rhubarb
2 cups diced strawberries
1 cup white sugar
¼ cup all-purpose flour
½ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir 1 cup flour, brown sugar, oats, and melted butter together in a bowl. Press 1/2 to 3/4 of the mixture into the bottom of a 9-inch square baking dish.
  • Beat eggs and milk together in a large bowl until smooth. Stir rhubarb, strawberries, white sugar, 1/4 cup flour, and allspice into the egg mixture until the flour and sugar dissolve completely; pour over the crust. Sprinkle remaining crust mixture over the top of the fruit layer.

I found this strawberry rhubarb crisp recipe on a box of Quaker Oats about 20 years ago. It's quick and easier to make than pie. It's versatile, too, because you can add strawberries in spring or apples in fall. I usually pop it into the oven shortly before we sit down to eat so it's still warm for dessert! -C.E. 3 tablespoons cornstarch
3 cups sliced fresh rhubarb or frozen rhubarb, thawed
2 cups sliced peeled apples or sliced strawberries
1 cup quick-cooking or old-fashioned oats
1/2 cup packed brown sugar
1/2 cup butter, melted
1/3 cup all-purpose flour
1 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine sugar and cornstarch. Add rhubarb and apples or strawberries; toss to coat. mix until crumbly:
1/2 c melted butter ( margerine works too.)
3/4 c oatmeal, uncooked
1 c all purpose flour
3/4 c brown sugar
1 tsp cinnamon, ground
PRESS 3/4 MIXTURE IN GREASED 9X9 IN. BAKING DISH.
SPRINKLE:
4 c rhubarb, diced
COMBINE:
1 c sugar
1 c water
2 Tbsp corn starch
COOK UNTIL CLEAR, CAREFUL NOT TO BURN. ADD:
1 tsp vanilla
POUR OVER RHUBARB. PUT REST OF CRUMB MIXTURE ON TOP. BAKE 1 HR. AT 350 DEGREES
