From the flaky pie crust to the creamy egg filling, this recipe a basic quiche is not only easy to make but downright delicious! Choose your desired filling to suit your family's preferences.

Number Of Ingredients 7

1 9-inch pie crust (refrigerated, homemade, or frozen)
4 eggs
1 cup cream (or half and half or whole milk)
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
2 cups flavor additions (see notes for suggestions)

Steps:

  • If using a refrigerated pie sheet or homemade pie crust, roll out pastry dough into a 1/4 inch thick circle and place it into a 9-inch pie pan or 9-inch deep-dish tart pan. Trim off excess pie dough and crimp edges using your fingers. Place pie dough into the freezer for 15 minutes or in the refrigerator for 1 hour.
  • Preheat oven to 375 degrees F.
  • If using a refrigerated pie sheet or homemade pie crust, line the crust with parchment paper and fill it with dried beans or pie weights. Bake until lightly golden and set, 15 minutes. Remove pie weights and continue baking until the bottom crust is golden, 5 to 10 minutes more. Let cool slightly.
  • If using a frozen-ready to bake pie crust, bake from frozen for 10 minutes at 375 degrees F, before filling with the egg mixture. Let cool slightly.
  • Once the pie crust has been baked, whisk or blend together eggs, cream, salt, pepper, and onion powder until light and fluffy. Gently tap out excess air bubbles.
  • Sprinkle the desired 2 cups of fillings evenly over the cooled crust. Pour the egg mixture over the pie crust. Top with additional cheese if desired.
  • Bake quiche at 375 degrees until eggs are set, about 35-40 minutes, checking on pie crust after 25 minutes, and covering the crust with pie shields or foil to prevent overbrowning. The quiche is done when the edges are set, but the center wiggles slightly.
  • Let quiche cool for at least 20 minutes before slicing and enjoying.

12 slices bacon or 12 slices sausage
1/2 bell pepper, chopped
1 (6 ounce) package grated swiss cheese
1/2 onion, minced
3 beaten eggs
3/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon red cayenne pepper
1 cup canned Pet milk

Steps:

  • Fry bacon or sausage and let cool.
  • Pour the bacon/sausage , bell pepper, cheese, and onion into unbaked deep dish pie shell.
  • Mix eggs, salt, sugar, pepper, and milk.
  • Pour over other ingredients.
  • Bake at 425F for 15 minutes OR at 300F for 30 minutes.

My mom used to make this when I was a kid. Love the flavor and it is SO quick and EASY! Serve with salad, fruit and muffins for brunch or lunch or bring it to a pot luck. Another variation I do is with chicken chunks, spinach, mushrooms, scallions and cheddar cheese. I usually make one of each since the pie crusts come in...

4 large eggs
1 c milk
1 1/2 c swiss cheese, grated
2 can(s) tuna (water-packed, well drained)
2 c mushrooms, fresh
1/2 c chopped scallions (green onions)
seasoning salt & pepper to taste
1 Tbsp butter

Steps:

  • 1. Wash and chop mushrooms or use pre-sliced. Sautee in butter until moisture is removed.
  • 2. While mushrooms are cooking, chop scallions, grate cheese and drain tuna
  • 3. Place one (uncooked) pie crust in a deep-dish pie plate. Top with tuna, cheese, sautéed mushrooms and scallions.
  • 4. Beat together eggs, milk and seasonings and pour on top of tuna mixture. (You can add a sprinkle more of cheese on top if you like.) Bake at 350 degrees for 45 minutes. You can protect the crust edges with foil, but I have found that I don't need to. Let cool 10 minutes before cutting.

MOM'S QUICHE

This is a staple at my mom and dad's house... and is quickly becoming one at mine too! It's super versatile and you can make it with just about any combination of fillings. I go for the vegetables and have been attempting to incorporate as many as I can from my garden (hence the base recipe below)... my parents will often make a version with spinach and smoked salmon. Also, I use soy milk, but my mom's original recipe calls for heavy cream.

3 eggs, lightly beaten
3/4 cup soymilk
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon nutmeg
1/2 yellow onion, chopped (I've also used red)
1 red pepper, chopped
1 (10 ounce) package chopped spinach, thawed
2 tomatoes, thinly sliced
1/4 cup grated cheese (I like an Italian blend, mozzarella, asiago, romano, parmesan)
1 partially baked pie crust (I like My No Roll Pie Crust)

Steps:

  • Preheat oven to 375.
  • If you haven't already, make the pie crust and put in oven; bake while preparing the rest of the quiche.
  • In a large bowl, mix eggs, soy milk, and spices.
  • Add in onion and red pepper (or filling of your choice); squeeze as much water out of the spinach as possible and stir into egg mixture.
  • Pour egg mixture into partially baked pie crust; top with tomato slices, followed by cheese.
  • Bake for 30 minutes or until knife comes out clean from center of the pie.
