MOM'S LOW FAT FUDGE RECIPE

Number Of Ingredients 7

One bag dark or milk chocolate chips
2 1/2 cups sugar
2/3 cup fat free evaporated milk
2 cups marshmallow creme
1 jar Prune baby food
1 tsp vanilla
2 tbsp butter

Steps:

  • Line an 8 inch square pan with foil and coat with non stick spray. In a heavy saucepan over medium heat bring sugar, milk and butter to a boil. Stir constantly. Cook and stir 5 minutes. Remove from heat. Stir in chocolate chips until smooth. Stir in marshmallow creme, baby food and vanilla. Add chopped nuts of your choice if you want. Pour into pan nad refrigerate until firm. Lift fuge out of pan and remove foil. Cut into 1 inch squares and store in airtight container in frig.

3 cups sugar
1/2 cup butter
1 cup whole milk
Dash of salt
4 ounces unsweetened chocolate
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts

Steps:

  • Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.

Steps:

  • Line 8" x 8" pan with foil.
  • Sift sugar and cocoa into a heatproof bowl. Add milk and butter. Do not stir.
  • Microwave on high for 2 1/2 minutes or until butter is melted. Add vanilla. Stir to blend.
  • Turn into pan and smooth the top. Put in freezer 10 minutes to set.
