1 slab (1.8 kg / 4 lbs) pork ribs (, halved crosswise and cut into one-bone sections (*Footnote 1))
2 " (5 cm) ginger (, sliced)
20 g (1 oz) onion (, halved lengthwise)
1 whole nutmeg ((or 1 teaspoon nutmeg powder))
2 star anise pods
5 cloves
1/4 cup Shaoxing wine ((or dry sherry))
3 tablespoons light soy sauce
1 tablespoon dark soy sauce
2 tablespoons granulated sugar
2 teaspoons salt
2 pieces red fermented bean curd ((Optional))
2 tablespoons cornstarch
2 red potatoes (, chopped (or waxy potatoes))
3 carrots (, chopped)
1/2 lb (230 g) green beans

Steps:

  • Add pork ribs to a large pot and add cold water to cover. Bring to a boil over medium high heat, then turn to medium heat. Boil for 5 minutes while skimming the foam off the top with a spoon.
  • Add the ginger, green onion, nutmeg, star anise, cloves, and cooking wine. Turn to low heat. Cover and simmer for 40 minutes. Stir occasionally.
  • Add light soy sauce, dark soy sauce, sugar, and salt. Add the red fermented bean curd into a small bowl and add a few spoonfuls of hot broth from the pot. Smash with the back of a spoon until the bean curd dissolves. Pour back into the pot. Simmer uncovered for another 40 to 50 minutes, until pork turns tender but is not quite falling of the bone.
  • (Optional) Add the vegetables. Continue simmering for 15 minutes, until the vegetables turn tender.
  • Add cornstarch and 1/3 cup water into a small bowl. Whisk well until the cornstarch dissolves completely. Slowly add half of the slurry into the pot. Stir to mix well. Add more slurry and stir if you want to thicken the sauce more. Note, you might not need to add all the cornstarch slurry. (*Footnote 2)
  • Serve pork ribs with steamed white rice or noodles. Enjoy!
  • Store the pork ribs in an airtight container in the fridge for up to 1 week, or in the freezer for up to 1 month.

1 cup onions, sliced
1 cup ketchup
1 cup water
2 teaspoons Worcestershire sauce
1/2 cup white vinegar
1/4 cup brown sugar
2 teaspoons yellow mustard

Steps:

  • Cut pork spareribs into serving size pieces---1 or 2 ribs each.
  • Precook the ribs by parboiling in gently boiling water until tender, approximately 25 minutes; drain the water.
  • Place the ribs in a shallow baking dish; top with sliced onions (optional).
  • Combine ketchup, water, mustard, brown sugar, Worcestershire and vinegar.
  • Pour over pork ribs.
  • Bake at 350 degrees F until brown, approximately 30 minutes. Baste occasionally. If desired, turn ribs half way through baking to brown the other side.

2 Lemons (quartered)
1/4 cup Sea Salt Flakes
2 tablespoons Dried Thyme
1 tablespoon Olive Oil
1/4 cup Worcestershire Sauce
1/4 cup Water

Steps:

  • Preheat oven to 180C/390F.
  • Place Pork Spare Ribs on a cookie sheet lined with aluminum foil.
  • Rub the pork with half of the flaked salt paying particular attention to the skin.
  • Squeeze the juice of one of the lemons over each side of the pork, then sprinkle with the thyme.
  • Bring all of the rashes together to resemble a pork belly so that the seasoned meat sides are pushed together "skin up."
  • Drizzle the olive oil over the skin and sprinkle with the remaining flaked salt.
  • Place the other lemon quarters onto the cookie sheet with the pork, cut side down.
  • Mix together the water and Worcestershire sauce and pour around the pork.
  • Bake 25-35 mins, until the pork is cooked through and the skin has crisped up. If crackling hasn't appeared (all ovens are differengrill/broil on high for a few minutes (keeping an eye on it until it has crackled).
  • Serve immediately.

2 CLOVES GARLIC, MINCED
1/4 TSP. SALT

Steps:

  • Cut spareribs into serving pieces, arrange in 13 1/2 by 8 3/4" baking dish lined with foil. Bake at 450 degrees for 30 minutes. Drain. In 1-quart saucepan, combine ketchup, chill sauce, sugar, mustard, worcestershire sauce and seasonings. Mix well. Simmer, stirring occasionally. Pour ketchup mixture over ribs, top with lemon and onions. Cover tightly with aluminum foil. Bake at 350 degrees for 1 hour and 30 minutes.

½ cup soy sauce
10 cloves garlic, crushed
1 tablespoon dried rosemary
1 tablespoon dried oregano
2 bay leaves
1 lime, juiced
10 sprigs fresh parsley

2 limes, cut into wedges

Steps:

  • Place the spareribs into a large pot, and fill with just enough water to cover. Add the soy sauce, garlic, rosemary, oregano, bay leaves, lime juice and 3/4 of the parsley. Bring to a boil, then simmer uncovered over medium heat until the water has completely evaporated, about 25 minutes.
  • When all of the water is gone, remove the bay leaves, and allow meat to brown, turning occasionally. Use a spatula to scrape up browned bits and softened garlic from the bottom of the pot, and toss them with the pork. The garlic will dissolve onto the meat. Remove the meat, and drain on paper towels. Season with black pepper and garnish with lime wedges and remaining parsley.

1 rack pork spareribs
kosher salt

Steps:

  • Preheat an oven to 400 degrees F. Stir the hoisin and ketchup together in a large bowl. Season the spare ribs on both sides with salt and pepper.
  • Cut the rack into individual ribs. Add to the hoisin mixture and toss to coat evenly. Transfer the ribs to a large baking dish, clean the sides of the dish, and cover with aluminum foil. Place the ribs in the oven.

1/4 cup extra-virgin olive oil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh rosemary
2 teaspoons chile flakes
1 teaspoon freshly grated nutmeg
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
12 cloves garlic, smashed
One 4- to 6-pound chicken, cut into 8 pieces

Steps:

  • In a mixing bowl, whisk together the lemon juice, olive oil, oregano, rosemary, chile flakes, nutmeg, salt, pepper and garlic. Place the chicken pieces in a resealable bag and pour the marinade in, coating all of the meat. Allow the chicken to marinate, refrigerated, 1 to 4 hours or up to overnight.
  • Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to come up to 375 degrees F.
  • Remove the chicken from the marinade. Place the chicken pieces skin-side up on the indirect-heat side of the grill and close the lid. Cook the chicken until almost cooked through, about 10 minutes. Move the chicken pieces over to the direct heat side of the grill and cook until nicely charred and cooked through, 2 to 3 minutes per side. Remove from the grill and allow to rest for 5 minutes before serving.

1 cup ketchup
1/2 cup chili sauce
1/2 cup packed brown sugar

1 can (6 ounces) frozen lemonade concentrate, thawed

Steps:

  • Place pork in 4-quart Dutch oven. Add enough water to cover pork. Heat to boiling; reduce heat to low. Cover and simmer about 1 hour 30 minutes or until tender.
  • Meanwhile, in 2-quart saucepan, heat ketchup, chili sauce, brown sugar, vinegar, lemon juice and liquid smoke to boiling; reduce heat. Simmer uncovered 10 minutes, stirring occasionally. Remove from heat; stir in lemonade concentrate. Set aside.
  • Remove pork to rectangular baking dish, 13x9x2 inches, or resealable food-storage plastic bag. Pour marinade over pork; turn pork to coat. Cover dish or seal bag and refrigerate, turning pork occasionally, at least 4 hours but no longer than 24 hours.
  • Heat coals or gas grill for direct heat. Remove pork from marinade; reserve marinade. Grill pork, meaty sides up, uncovered and 4 inches from medium heat about 30 minutes, turning and brushing frequently with marinade, until glazed and heated through. Discard any remaining marinade.

1/4 cup soy sauce
1/4 cup dried oregano
2 tablespoons onion powder
2 teaspoons garlic powder
1 liter lemon-lime soda
1/2 cup unsweetened pineapple or orange juice, optional
BARBECUE SAUCE:
1/2 cup sugar or packed brown sugar
1/2 cup hot water
1 cup ketchup
1/4 cup honey mustard
1/4 cup barbecue sauce of choice
3 tablespoons lemon juice
1-1/2 teaspoons white vinegar

Steps:

  • Brush ribs with soy sauce. Combine oregano, onion powder and garlic powder; rub over both sides of ribs. Transfer to a large shallow roasting pan; refrigerate, covered, overnight., Preheat oven to 225°. Add lemon-lime soda and, if desired, juice to roasting pan (do not pour over ribs). Bake, covered, until tender, about 3 hours., Meanwhile, make barbecue sauce by dissolving sugar in hot water; combine with remaining ingredients, thinning with additional lemon-lime soda or juice if necessary. Reserve 1 cup for serving., Remove ribs from oven; discard juices. Brush both sides with barbecue sauce. Grill ribs, covered, on a greased grill rack over low direct heat, turning and brushing occasionally with remaining sauce, until heated through, about 10 minutes. 2 cups vegetable oil or 2 cups olive oil
18 cloves garlic, smashed
1 cup finely chopped fresh parsley
1/3 cup coarsely grated fresh lemon rind
1 cup lemon juice
3 tablespoons crumbled dried thyme
2 tablespoons dried rosemary
2 tablespoons dried sage
2 tablespoons savory
2 tablespoons marjoram
2 teaspoons black pepper
1 teaspoon crumbled dried mint
1 teaspoon ground allspice
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
salt
4 lemons
1 strip fresh lemon rind
thyme, sprigs (optional)

Steps:

  • In a large stockpot, cover ribs with boiling water, cover and bring to boil.
  • Reduce heat and simmer for 45 to 60 minutes or until ribs are tender.
  • Drain and let cool, pack into large heavy plastic bag.
  • Combine oil, garlic, parsley, lemon rind, lemon juice, thyme, rosemary, sage, savory, marjoram, pepper, mint, allspice, cumin and cayenne, pour over ribs, coating meat evenly.
  • Tie bag closed, place in large bowl and marinate in refrigerator for 8 to 24 hours, turning bag over periodically (Note: there is just enough marinade to cover ribs, not to swish around).
  • Remove ribs, reserving any marinade, bring ribs to room temperature.
  • Cook on greased grill over hot coals or on high setting for about 10 minutes per side or until meat comes away from bone, brushing occasionally with any marinade.
  • Season with salt to taste after cooking.
  • Cut into serving sized portions of 3 to 4 ribs.
  • Garnish: Cut lemons into wedges.
  • Garnish ribs with lemon wedges, and lemon rind and thyme, if using.

8 large garlic cloves, peeled
1/4 cup olive oil
3 tablespoons chopped fresh thyme
3 tablespoons (scant) coarsely chopped fresh rosemary
2 tablespoons fennel seeds, ground
2 tablespoons coarse kosher salt
1 tablespoon freshly ground black pepper
1 tablespoon (packed) golden brown sugar
5 pounds meaty baby back pork ribs (about 4 large racks)

Steps:

  • Make 4 vertical cuts, about 1/2 inch deep and 2 inches long, in skin of each lemon. Place lemons in microwave-safe bowl (such as soufflé dish). Cover and cook in microwave on high until skins soften and lemons release juices, about 8 minutes. Uncover and cool lemons 15 minutes. Cut lemons in half. Squeeze juice into strainer set over small bowl; reserve juice. Scoop out and discard lemon pulp and white pith from halves; reserve rinds.
  • Combine 6 tablespoons reserved lemon juice, lemon rinds, garlic, olive oil, thyme, rosemary, fennel, salt, pepper, and brown sugar in processor and grind to paste. Generously smear paste on both sides of baby back ribs. Arrange ribs, meaty side up, on 2 large rimmed baking sheets. Cover with plastic wrap and refrigerate overnight.
  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 350°F. Scrape some of marinade off ribs. Place baking sheets with ribs in oven. Bake ribs 30 minutes. Reverse position of baking sheets and roast until ribs are very tender and meat begins to pull away from bones, about 35 minutes longer. Let ribs stand 15 minutes. Transfer to work surface and cut racks between bones into individual ribs. Pile ribs onto platter and serve.
