MOM'S BANANA CAKE
My mom has been making this banana cake all her married life. It's one of our family's favorites. It just says "home". Super easy & delicious!

Steps:
- Beat together butter & sugar.
- Add egg.
- Mix together flour, soda & baking powder. Add to sugar mixture.
- Add milk.
- Add bananas & vanilla.
- Bake in greased baking dish (I use square Corning ware dish) for 20-30 minute Frost with homemade powder sugar frosting, cream cheese frosting or vanilla. Hope you enjoy :).

- Heat oven to 350 degrees. Grease and flour a 10 inch bundt pan.
- In a medium bowl, mash bananas.
- In a large mixing bowl, combine flour, baking powder, baking soda and cane sugar.
- Beat in butter.
- Add eggs and vanilla and beat well, about 2 minutes.
- Add milk to lemon juice and stir. Add to batter and beat well.
- Stir in bananas.
- Pour into prepared pan.
- Bake at 350 degrees for 35 minutes or until toothpick inserted near center comes out clean.
- Let cool in pan for 10 minutes. With a thin sharp knife, carefully loosen edges. Invert pan onto serving plate and let cool completely.
- Dust with powered sugar.

- Preheat the oven to 350°F Grease 2 - 9 inch round cake pans and line the bottom of each with a disk of wax paper (see recipe #452719).
- Sift the flour with the baking powder and salt.
- In a large mixing bowl, cream the butter with the sugars until light and fluffy. Beat in the eggs, one at a time. Stir in the lemon zest.
- In a small bowl mix the mashed bananas with the vanilla and milk. Add the banana mixture and the dry ingredients to the butter mixture alternately in 2 or 3 batches and stir until just blended. Fold in the nuts.
- Divide the batter between the cake pans and spread it out evenly. Bake until a cake tester inserted in the centre comes out clean, 30-35 minutes. Let stand 5 minutes before unmolding onto a wire rack. Peel off the wax paper.
- For the frosting, cream the butter until smooth, then gradually beat in the sugar. Stir in the lemon zest and enough juice to make a spreadable consistency.
- Set one of the cake layers on a serving plate. Cover with about one third of the frosting. Top with the second cake layer. Spread the remaining frosting evenly over the top & sides of cake.

- Preheat oven to 350.
- Butter and flour a 10 inch tube pan.
- Combine flour, baking powder and salt and set aside.
- In a separate bowl mix butter and sugar with an electric mixer until fluffy.
- Add eggs one at a time and beat well after each addition.
- Add flour mixture to egg mixture, alternatively with 1 cup milk, mixing well after each addition.
- Stir in lemon zest.
- Bake for about 40-50 minutes or until tester comes out clean
- Meanwhile, combine lemon juice and sugar in a saucepan and simmer until sugar dissolves.
- Allow cake to cool in pan for about ten minutes, then turn out to wire rack and cool completely.
- Once cool, poke cake with a fork and pour glaze on top.

BANANA CHERRY CAKE
This is a moist, fruity cake. It can be made as a regular cake or in a bundt tin (I used a 10" bundt tin). Cherries can be substituted for blueberries, raspberries - anything you have on hand. The cooking time shown is for a non-fan oven.

- In a large bowl, combine the flour, baking powder, salt, suger.
- In a smaller bowl, mash the bananas.
- To the bananas, add the eggs, vanilla extract, milk and oil and mix. Combine cherries into the mix.
- Add the wet mixture to the other dry ingredients in the large bowl and mix.
- Spray the baking tin with cooking spray (alternatively, grease tin with butter).
- Pour batter into baking tin and cook in a oven pre-heated to 375 degrees for 1 hour 10 minutes.
- Remove cake from oven and allow to cool for 20 minutes. Turn cake onto a plate and allow to cool.

MOM'S LEMON CHERRY BANANA CAKE
Ok so I had all these ingredients in the house and thought I would try to figure out how to make something with them. Came up with this cake, now it is not real sweet as I used a Lemon Cake from Duncan Hines as a base ~ My husband loved it !!!! Just love making something special with what we have in the house !

- Preheat oven to 350df Use a 13x9" cake pan Beat together bananas and eggs with mixer on medium for 2 minutes.
- On low speed pour in melted butter, add in cake mix and milk, beat on medium for 2 minutes. Stir in the walnuts.
- Pour into lightly greased or sprayed pan. I lined the cherries in rows along the top and poured some cherry juice over the batter.
- Bake for 40-45 minutes or until the center is tested in center and firm. Let cool in pan.
- Frosting: I just topped with Cool Whip and added a cherry on top ! Really good.
