MOTHER'S HAM CASSEROLE

This ham casserole recipe always brings back fond memories of her when I prepare it. It was one of my mother's favorite recipes. It's a terrific use of leftover ham from a holiday dinner. -Linda Childers, Murfreesboro, Tennessee

Number Of Ingredients 14

2 cups cubed peeled potatoes
1 large carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed fully cooked ham
2 tablespoons chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/2 cups 2% milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. , Pour over ham mixture. Sprinkle with bread crumbs. Bake until heated through, 25-30 minutes.

I found this recipe in my local newspaper. Sounds like a good way to use up some left over (or not) ham. I haven't tried it, but plan on doing so soon. I do think I might make a few adjustments to the recipe to suit my family's taste, but here is the recipe as printed. It was submitted by Florence Hiett. (serving size is a guess)

3 tablespoons butter
2 cups celery, diced
2 cups onions, diced
1/2 cup carrot, chopped
1 (10 1/2 ounce) can cream of chicken soup
1 tablespoon chicken bouillon granule
3 tablespoons cornstarch
1/4 cup water
2 cups frozen peas
4 cups cooked ham, diced
1 cup shredded swiss cheese
cheddar cheese
1 (25 ounce) can pillsbury grands southern-style refrigerated buttermilk biscuits

Steps:

  • Preheat oven to 350.
  • Melt butter in pan and saute celery, onion and carrots until tender.
  • Add cream of chicken soup and bouillon granules to the vegetables and mix together.
  • Bring to a low boil.
  • Mix cornstarch and water together and add to pan.
  • Stir in peas and ham, and bring to a low boil once again.
  • Lightly grease a 9x13 pan.
  • Pour mixture into greased pan, but reserve a bit of the liquid.
  • Sprinkle with shredded cheese.
  • Top with canned biscuits.
  • Spoon a little of the reserved liquid over each bisquit.
  • Bake for 30 to 35 mins, until biscuits are nicely browned.

TOH recipe submitted by Linda Childers, Tennessee. If you need to use up some leftover ham, this casserole will not dissapoint you. It is really nice comfort food. I have added the Parmesan Cheese to the topping and sometimes I like to use a combination of Swiss Cheese and Cheddar in the casserole.

2 cups potatoes, peeled and cubed

1 1/2 cups milk

1 cup cheddar cheese, shredded
1/2 cup breadcrumbs
1/4 cup parmesan cheese (optional)

Steps:

  • In a saucepan, bring potatoes, carrot, celery and water to boil.
  • Reduce heat, cover and cook 15 minutes or til tender.
  • Drain and set aside.
  • In large skillet, saute ham, green pepper and onions in 3 tbsp of the butter until vegetables are tender.
  • Add to the potato mixture and transfer to a greased 1 1/2 qt baking dish.
  • In saucepan, melt remaining butter, stir in flour and whisk until smooth.
  • Gradually add milk, salt and pepper.
  • Bring to boil and stir for 2 minutes or until thickened.
  • Reduce heat, add cheese and stir until melted.
  • Pour over the ham mixture and sprinkle with bread crumbs and parmesan. (Dot with 2 tbsp butter if you want a crisp topping.).
  • Bake uncovered at 375F for 25-30 minutes.
