Good Old Fashioned Pancakes image

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

Number Of Ingredients 7

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Mom's Favorite Pancakes image

My go-to pancake recipe. Fluffy, buttery, simple, & homemade. Doesn't get much better!

Number Of Ingredients 7

1 1/2 c all purpose flour
3 1/2 tsp baking powder
1 Tbsp sugar
1 tsp salt
1 1/4 c milk
1 egg
3 Tbsp butter, melted

Steps:

  • 1. In a large mixing bowl, sift together your dry ingredients.
  • 2. Make a well in the center of your mixture, then add in your egg, butter, & milk. Mix until smooth.
  • 3. Pour batter (about a 1/4 cup size per cake) over a preheated, greased pan or griddle (medium heat). If you find your pancakes to be a little thin, pour a spoon sized amount of batter in the center of your cake prior to flipping!
  • 4. Once your edges are just golden - flip your pancake over. Cook on the remaining side until golden brown.

MOM'S POTATO PANCAKES

4 cups shredded peeled potatoes (about 4 large potatoes)
1 large egg, lightly beaten
3 tablespoons all-purpose flour
1 tablespoon grated onion
1 teaspoon salt
1/4 teaspoon pepper
Oil for frying
Optional: Chopped parsley, applesauce and sour cream

Steps:

  • Rinse shredded potatoes in cold water; drain well, squeezing to remove excess water. Place in a large bowl. Stir in egg, flour, onion, salt and pepper. , In a large nonstick skillet, heat 1/4 in. oil over medium heat. Working in batches, drop potato mixture by 1/3 cupfuls into oil; press to flatten slightly. Fry both sides until golden brown; drain on paper towels. Serve immediately. If desired, sprinkle with parsley and top with applesauce and sour cream.

Mom's Best Pancakes image

My mom invented this pancake recipe because of a sensitivity to baking powder. Beaten egg whites provide the leavening. They are great for a Sunday morning breakfast

Yield 12 large pancakes

Number Of Ingredients 6

2 cups flour
2 cups skim milk
4 eggs, separated
1 tablespoon sugar
1 teaspoon vanilla
2 tablespoons oil

Steps:

  • Beat egg whites until stiff in a separate bowl. The stiffer you beat them, the fluffier the pancakes will be
  • In larger bowl, mix together egg yolks, flour, milk sugar and vanilla. Mix until smooth.
  • Gently fold in egg whites.
  • Place a small amount of oil in a hot frying pan. I like to spread the oil around using a silicone pastry brush. You can also use a non-stick cooking spray.
  • I use a large serving spoon to ladle the batter into the frying pan.
  • Cook on one side until bubbles start to burst.
  • Flip and cook for about one minute more.
  • Keep already cooked pancakes warm in a 200 degree oven.
  • Serve with your favourite syrup or topping.

This came from my Mom's 1940's version of Better Homes and Gardens New Cookbook. These are very fluffy unlike the pancakes you get from a box mix.

1 1/4 cups flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1 cup milk
2 tablespoons salad oil or 2 tablespoons melted shortening

Steps:

  • Sift together flour, baking powder, sugar, and salt.
  • Combine egg, milk and salad oil; add to dry ingredients stirring just until flour is moistened (batter will be lumpy).
  • Use a 1/4 cup measuring cup for 4-inch pancakes, or use a Tablespoon for dollar-size pancakes.
  • Makes about 12 dollar size or 8 4-inch pancakes.
