MY MOM'S CLASSIC CHILI



My Mom's Classic Chili image

2 medium (or 1 large yellow onions, diced)
2 teaspoons salt
2 to 2 1/2 pounds ground beef or lean ground turkey
3 large cans (29-ounces each) pinto beans (rinsed and drained)
46 ounces tomato juice
1 (8-ounce) can tomato sauce
1 cup ketchup
2 bay leaves
1/2 cup water
3/4 teaspoon garlic salt
1/2 teaspoon pepper
1 tablespoon chili powder
1/4 teaspoon cayenne pepper (plus more if you want the chili spicier)
2 teaspoons ground cumin
1 tablespoon brown sugar

Steps:

  • In a large 12-inch nonstick skillet, brown the ground beef (or turkey) with the onion and salt until the meat is cooked through. Drain excess grease, if needed.
  • In a large pot, combine the pinto beans, tomato juice, tomato sauce, and ketchup. Stir in the bay leaves, water, garlic salt, pepper, chili powder, cayenne, cumin and brown sugar.
  • Add the cooked meat/onion mixture.
  • Bring to a boil over medium-high heat, stirring, then reduce the heat and simmer, partially covered, over medium-low heat for an hour (or up to 4-5 hours), stirring occasionally. Add additional salt and pepper to taste, if needed, before serving.

1 large onion, chopped
1 (15 ounce) can ranch-style beans
1 (10 ounce) can diced tomatoes with green chile peppers
1 (1.25 ounce) package chili seasoning mix
salt and pepper to taste
2 teaspoons chili powder, or to taste
1 cup water, or as needed

Steps:

  • In a large saucepan over medium-high heat, cook beef and onion until meat is brown. Stir in beans, diced tomatoes, chili seasoning, salt, pepper, chili powder and water. Reduce heat and simmer 2 hours.

Now I take my chili seriously, but sometimes I'm in the mood for something easy and mild. This recipe of my Mother's scratches that itch for me. Serve with some fresh crusty bread and hot sauce on the side for your spicy chili lovers. I make a double batch of this on occasion and throw it in the crock pot. If you do, just throw it in on your warm setting after cooking is complete. Enjoy!

1 tablespoon ketchup (mom uses Heinz)
0.5 (12 ounce) bottle prepared chili sauce (mom uses Heinz)

Easy homemade chili. Goes great with cornbread or over corn chips for a chili pie! I like to use spicy pinto beans.

1 onion, chopped
1 (14.5 ounce) can stewed tomatoes
1 (15 ounce) can tomato sauce
1 (15 ounce) can kidney beans
1 ½ cups water
1 pinch chili powder
1 pinch garlic powder
salt and pepper to taste

Steps:

  • In a large saucepan over medium heat, combine the beef and onion and saute until meat is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water.
  • Season with the chili powder, garlic powder, salt and ground black pepper to taste. Bring to a boil, reduce heat to low, cover and let simmer for 15 minutes.

I used Mom's chili recipe and added a few things of my own over the years. I put it together in the crock pot the night before, throw it in the fridge (just the crock), then before leaving for work the next morning I put the crock in the base, plug it in and it's yummy when I get home.

1/4 green pepper, diced
1/2 cup salsa
1 (20 ounce) can tomato sauce (large)
2 (10 ounce) cans chili beans
1 (10 ounce) can tomato soup

  • Brown ground beef and drain.
  • Put all ingredients in crock pot and stir well.
  • Cook on low for 8 to 10 hours, or high for 4 to 6 hours. I also like to take the lid off the crock pot the last hour or two (when I'm home) to allow some of the water to burn off.

3 tablespoons vegetable oil, divided
2 medium bell peppers, chopped
1 large onion, chopped
2 cloves garlic, chopped
2 pounds ground beef
2 (16 ounce) cans crushed tomatoes
2 cups beef broth
¼ cup chili powder
3 tablespoons tomato paste
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon salt
¼ teaspoon cayenne pepper
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can black beans, drained

Steps:

  • Place a large frying pan over medium-high heat until hot, about 45 seconds. Add 1 tablespoon oil, then add peppers and onion; saute until soft, about 6 minutes. Add garlic and saute until fragrant, about 2 minutes. Transfer mixture to a large soup pot and set aside.
  • Increase the heat under the frying pan to high and let the pan get very hot, about 90 seconds. Add 1 tablespoon oil, then add 1/2 of the ground beef; cook and stir in the hot skillet until browned and crumbly, about 6 minutes. Transfer to the soup pot, and drain and discard grease from the frying pan. Repeat with remaining oil and beef.
  • Add tomatoes, broth, chili powder, tomato paste, cumin, oregano, salt, and cayenne pepper to the beef mixture; bring to a boil over medium-high heat. Reduce heat to low and simmer, stirring occasionally, for 45 minutes.
  • Add kidney beans and black beans; simmer until beans are heated through, about 15 minutes.

This chili goes together fairly quickly--it only simmers for about 45 minutes to an hour, instead of for several hours like some chili recipes. It makes a good weeknight dinner; I love it best with cornbread, although biscuits are nice, too. Usually by the time the cornbread or biscuits are done, so is the chili.

2 tablespoons canola oil
1 small garlic clove, minced (or use rehydrated dried minced or granulated garlic)
1 lb extra lean ground beef
2 (15 1/2 ounce) cans low-sodium kidney beans (1 can drained and 1 can undrained)
1/2 cup chopped onion
1/2 cup chopped celery
2 (16 ounce) cans tomato sauce
1 -2 tablespoon chili powder (or to taste)
1 bay leaf
shredded cheese (garnish) (optional)
sour cream (garnish) (optional)

Steps:

  • Heat oil in saute pan or deep skillet and brown beef. Drain any extra fat. Add garlic and cook 1-2 minutes longer.
  • Add onion and celery and saute 3-4 minutes or until onions are just tender.
  • Add beans (with liquid from one can), one can of tomato sauce, chili powder, and bay leaf and stir to combine. If not saucy enough or not tomatoey enough, add another can of tomato sauce.
  • Bring just to a simmer, reduce heat, and simmer down, stirring occasionally, to desired thickness (about 45 minutes to an hour, depending on how thick you like it).
  • Serve hot, garnished with cheese and sour cream as desired.
