Chilli Con Carne for Kids image

A tasty and mild Chilli Con Carne recipe for kids that's packed full lots of vegetables too!

1 tbsp oil
1 small white onion, finely died
2 cloves of garlic, crushed
1 medium carrot, grated
1 small courgette, grated
1 tsp smoked paprika
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp mild chilli powder
500g / 18oz beef mince
400g / 14oz (1 tin) chopped tomatoes
300ml beef stock / 1 & 1/4 cups (use a gluten free stock cube if necessary)
240g / 8oz (1 tin) cooked kidney beans, drained
1 red pepper, chopped
100g / 1/2 cup corn (can be tinned or frozen)
1 fresh lime

Steps:

  • Heat the oil in a large dish on the hob. Add the onion and fry over a medium heat for 2 to 3 minutes until it starts to soften. Add the garlic, grated carrot and grated courgette and fry for another 2 minutes.
  • Add the spices - smoked paprika, ground coriander, ground cumin and chilli powder and mix well.
  • Add in the beef mince and fry for another 4 minutes or until the meat has browned.
  • Pour in the tinned tomatoes and beef stock and leave to simmer for 15 minutes.
  • Add in the kidney beans, red pepper and corn and cook for another 3-4 minutes.
  • Remove from the heat and add in some fresh lime juice to taste.
  • Serve immediately with rice, sour cream and tortilla chips.

SLOW COOKER CHILI CON CARNE (KID-FRIENDLY)



Slow Cooker Chili Con Carne (kid-friendly) image

This is my favourite version of chili, that I make often. It freezes wonderfully for a great make-ahead meal or freeze the leftovers for lunches or a quick dinner. It is not overly spicy so my daughter will eat it! If you like things spicy, increase the chili powder and cumin. One tip if your child still finds it too spicy, is to add additional canned beans in tomato sauce to their portion. It works! :) This is great with corn bread on the side. NOTE: You can substitute part of the ground beef with TVP (textured vegetable protein, SOY) without reconstituting first. I substitute 1/4 - 1/2 lb of the ground beef with 1/4 - 1/2 cup TVP bits. Add this into the pot with the other ingredients, do not saute with the ground beef.

1 lb lean ground beef
1/2 cup onion, chopped (about 1 small onion)
2 garlic cloves, minced
1 (796 ml) can kidney beans, drained and rinsed
1 (796 ml) can diced tomatoes, undrained
1 (398 ml) can baked beans in tomato sauce, undrained
1 (398 ml) can no-salt-added tomato sauce
1 (284 ml) can canned mushroom slices, drained (optional)
2 teaspoons chili powder
1 teaspoon cumin
1 dash cayenne pepper

Steps:

  • In frying pan, saute ground beef, onions and garlic until beef is browned and onions are translucent. Transfer to slow cooker.
  • Add all other ingredients to pot and mix well.
  • Cook on low for 6-8 hours.
  • To FREEZE: Cool completely, freeze in desired portions in freezer bags or containers.
  • To REHEAT: Thaw in refrigerator overnight. Heat in saucepan until heated through, OR reheat it in the microwave after it's defrosted, and if it's not fully defrosted I use the microwave defrost first, then reheat on high until hot, really quick. :).

Mom makes this chili differently every time she makes it and it is really good and this recipe can be halved or even doubled for large or small crowds.

1 lb lean ground beef (use any ground meat of your choosing)
1/2 cup minced onion
1/3 cup minced green pepper
1 garlic clove, minced (optional)
1 (16 ounce) can kidney beans, drained
1 (14 1/2 ounce) can peeled whole tomatoes, chopped
1 (8 ounce) can tomato sauce
2 tablespoons A.1. Original Sauce
2 teaspoons chili powder

Steps:

  • In a large skillet, cook and crumble meat until almost browned.
  • Add onion, green pepper, and garlic.
  • Continue cooking until meat is browned and onion is tender.
  • Drain, stir in remaining ingredients, bring to a boil, reduce heat.
  • Cover and simmer for 30 minutes, stirring occasionally.

I've since learned this is not a true Chile con Carne, but that's what my mom always called it. She made this recipe while I was growing up, and I still make it today for my hubby or family. The heat in this can be adjusted by using more or less Chile powder or adding some cayenne pepper for bigger kids with spicier taste buds.

1 1/2 lbs ground beef
1/2 onion (chopped)
2 (15 ounce) cans reduced-sodium diced tomatoes
2 (15 ounce) cans low-sodium kidney beans
1 -2 tablespoon chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon celery salt
1/4 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon oregano

Steps:

  • Cook ground beef and onions over medium heat in a large sauce pan or dutch oven until beef is browned and onions are tender. Drain and return to pan.
  • Add tomatoes and kidney beans (do not drain off juce).
  • Add spices and stir until blended.
  • Bring to boil, then reduce to low heat, cover and simmer for 30-45 minutes.
  • You can taste and adjust spices after 20-30 minutes - add more chile powder or a bit of cayenne pepper if you like it spicier - let it simmer another 20 minutes to blend flavors.
  • Serve in bowls with shredded cheese, onions, sour cream or crackers if desired. I like it with saltines broken into the chile with a little cheese on it.
