Fresh broccoli florets team up with crunchy smoked almonds, sweet cranberries, sharp cheddar cheese, and salty bacon in this lightly dressed side dish.

1 c. mayonnaise
3 tbsp. apple cider vinegar
3 tbsp. granulated sugar
1 tsp. ground black pepper
8 c. small broccoli florets
1 c. dried cranberries
1 c. shredded sharp cheddar cheese
1 c. smoked almonds, chopped
6 slices bacon, cooked and crumbled
1/4 c. chopped red onion

Steps:

  • For the dressing: Whisk together the mayonnaise and vinegar in a large bowl until smooth. Stir in sugar and pepper until combined and set aside.
  • For the salad: Add the broccoli florets to dressing mixture; stir together to combine. Add the cranberries, cheese, almonds, bacon, and red onion; stir to combine.
  • Refrigerate at least 1 hour or up to 3 days before serving.

Broccoli Crunch Salad is a classic salad recipe. Broccoli, dried cranberries, bacon, sunflower seeds (but I add pepitas!) and finely diced red onion is tossed in a simple (like 3 ingredients) dressing. Not only is this salad colorful and crunchy, but delicious too!

2/3 cup mayonnaise (homemade or store-bought)
1-1/2 tablespoons apple cider vinegar
2 teaspoons poppy seeds
kosher salt (to taste)
freshly ground pepper (to taste)
4 slices thick-cut applewood bacon (cooked and finely chopped)
1 large head broccoli (cut into bite-size pieces)
1/2 cup dried cranberries
1/3 cup pepitas
1/3 cup finely chopped red onion
1/4 cup unsalted roasted sunflower seeds (shelled)

Steps:

  • In a small bowl, combine the mayo, cider vinegar and poppy seeds. Season with salt and pepper to taste.
  • In a large bowl combine crumbled bacon with the broccoli florets, cranberries, pepitas, onion and sunflower seeds.
  • Pour in the dressing an toss to combine.
  • Cover and chill for 1 hour or longer, or until ready to serve.

1 cup mayonnaise
1/3 cup sugar
2 tablespoons red wine vinegar
1 teaspoon celery seed
2 heads broccoli
3/4 cup bacon
1/2 cup slivered almonds, toasted
2 green onions, thinly sliced
1 cup celery, chopped
1 1/2 cups red seedless grapes, halved

Steps:

  • Whisk together mayonnaise, sugar, red wine vinegar, and celery seed in a small bowl. Place in refrigerator for at least 30 minutes.
  • Combine broccoli, bacon, toasted almonds, green onions, celery and grapes in a large serving dish.
  • (To toast almonds, place on a large baking sheet and bake at 350F for 3-5 minutes stirring in between. Do not walk away! They will burn easily. The almonds are toasted when they turn light brown.).
  • Toss the dressing with the rest of the salad ingredients and stir.
  • Dressing can be added at the last minute if desired.

My mom's version of the classic recipe. This is always the first to disappear at our picnics and potlucks.

1/2 cauliflower head
2 bunches broccoli florets
1 medium red onion, finely chopped
1 1/2 cups Miracle Whip
1/3 cup sugar
2 tablespoons red wine vinegar
1/2 cup sunflower seeds
1 cup raisins
12 slices bacon, cook crisp and crumbled

Steps:

  • Chop cauliflower, broccoli and red onion. Toss them together in a large bowl.
  • In another bowl whisk the Miracle Whip, sugar and red wine vinegar until smooth.
  • Toss dressing with the cauliflower, broccoli and red onion. Fold the rest of ingredients in and stir together.
  • For best results refrigerate overnight.
